Steps:
- In large saucepan, cook tomatoes and basil over medium-low heat until tomatoes are soft.
- Meanwhile, in medium skillet, saute onion and garlic in olive oil until onions are translucent.
- Add onion mixture to tomato mixture and add salt and pepper. Let simmer on low heat for 2 hours or until thick.

This is actually pretty good. I need sauce one night and didn't have it so this is what I used. I added a little extra Vinegar, Oregano & Onion Powder as well as some Italian Seasoning.

- Cook hamburger and onion til burger is done.
- Add everything else but water - combine.
- Add water until slightly thinner than you want sauce and simmer until desired thickness.
- Serve.
- Once you try this, adjust spices to suit your own taste.

TOMATO AND BASIL PASTA SAUCE
Great, cheap and easy pasta sauce for any pasta, can also be used as a base for lasagne, or any tomato pasta sauce.

Steps:
- use half the oil and gently fry garlic do not let it brown.
- add the tomatoes, dried basil, bay leaf, mixed herbs, salt and pepper and sugar (this recipe needs between 1/2 - 1 tsp salt to bring out the flavours of the tomatoes.
- bring to the boil and gently simmer for 20 mins, add the tomato puree and the rest of the oil and simmer for a further 15 mins until the mixture has reduced.
- If using fresh basil roughly chop and add now.
- Serve with pasta with grated parmasan cheese and freshly ground black pepper.
- Variations - button mushrooms, black olives can be added.

- Place a large skillet over medium heat. Add the butter and oil to the pan, once the butter is melted add the white part scallions, garlic, and parsley to the pan, let it cook until fragrant, 1 minute, stirring occasionally.
- Add the tomatoes, lemon juice, salt, and pepper, stir everything until combined.
- Bring to a simmer and simmer for 15 minutes stirring occasionally.
- Add the fresh basil and green part scallions, stir to combine.
- Take off the heat and serve with pasta of your choice.

TOMATO-BASIL SAUCE

- Coat a saucepan with 2 tablespoons of the oil and warm over medium-low heat. Add the garlic and cook, stirring, until soft. Add the crushed tomatoes and sugar; season with salt and pepper. Turn the heat up slightly to medium and simmer the sauce for 10 minutes, stirring occasionally. Stir in the basil and the remaining olive oil. Toss with spaghetti, if desired.

- Dice all veg, press garlic and saute in stock pot with olive oil until slightly softened. Add diced tomatoes and tomato sauce along with sugar, salt, pepper, hot pepper flakes, parsley, and celery salt. (if you're using dried basil add it along with the other herbs) If you're using fresh basil, reserve 8 basil leaves to add at the end of cooking. Cook for 1 hour on medium heat. Keep an eye on the sauce and stir frequently. After the hour simmering add tomato paste and adjust salt and pepper to your taste. Cook for an additional 30 minutes on low.
- I choose to blend my sauce. I use an immersion blender directly in the pot and puree the sauce lightly. I then add the remaining basil leaves to the pot. When I serve this sauce on pasta, I drizzle Extra Virgin Olive Oil over the top. If you add the cream, add it right before you serve.
- This sauce lends well to Tomato Basil Soup. Add 2 Cups of the prepared sauce to 4 Cups Veggie or Chicken Stock, simmering until it's steaming hot.

- Heat the oil in a saucepan over a low heat. Add the onion, carrot and celery and fry for 8-10 mins until tender, but don't let them brown too much. Taste the soup and adjust the seasoning - add more water if you need to. Can be frozen at this point.
