TERIYAKI CHICKEN
Teriyaki Chicken is one of the most popular Japanese dishes. The Teriyaki Sauce is so easy to make, it's just a mixture of soy sauce, sake, mirin, and sugar. You do not marinate the chicken in the sauce to make Teriyaki Chicken. Just sauté the chicken and cook it in the sauce, which takes only 15 minutes in total! Steps:
- Combine the Teriyaki Sauce ingredients in a small bowl or cup and mix well until the sugar dissolves (note 4).
- If the thickness of the chicken is uneven, place a fillet on a cutting board skin side down, make a cut horizontally and outward where the meat is thick, and butterfly it (see the Video).
- Poke the skin with the tip of the knife in several places so that the sauce gets through to the flesh better.
- Heat a non-stick frying pan over medium heat. Place the chicken in the pan, skin side down. Cook for 3-4 minutes until the skin gets cooked to a golden brown.
- Turn the chicken over and cook for about 3 minutes (Note 5). If a lot of oil comes out of the chicken fat and skin, absorb excess oil with a paper towel (Note 6).
- When the chicken is nearly cooked, add the sauce, shake the pan to even out the sauce, and put the lid on. Cook for 30 seconds.
- Remove the lid and cook until the sauce thickens and reduces to about 1-1½ tablespoons (Note 7). Turn the chicken over and coat the skin side with the sauce.
- Remove the pan from the heat and place the chicken on the cutting board, skin side up. Cover with foil for a few minutes to let it cook further. Slice the chicken into 1½-2cm/⅝-¾" thick pieces.
- Place mixed cabbage, carrot and capsicum salad on a plate and then arrange the sliced chicken. Pour the sauce over the chicken and add a sprig of parsley/mint if using. Serve immediately.

This is a simple, healthy version of Chicken Teryaki. My kids love it! It has far less sugar than bottled Teryaki sauce and no perservatives/additives. I always have Tamari and honey on hand, making for a quick, last minute super. I cook my chicken in my pressure cooker (which I couldn't live without!) You can use another brand, just make sure it's a "baste and glaze" sauce versus a "marinade". - For my video recipe, I used 4 large chicken breasts. This recipe will also work with bone-in or boneless chicken thighs; chicken drumsticks; or even chicken party wings.
- First, prepare the teriyaki sauce marinade. In a small bowl or measuring cup, combine the soy sauce, water, sugar, sesame seed oil, rice vinegar, garlic and ginger. Whisk for about 30 seconds until the ingredients are well combined.

- Preheat the oven to 425F/218C. Preheat a large stainless steel or cast iron pan over medium-high heat and add a few tablespoons of oil. Once the pan and oil are extra hot, carefully add in the marinated chicken. For chicken breasts, fry them on each side for about 5 to 6 minutes, until well browned all over. For other cuts of chicken, do the same: fry on all sides until the outside is well browned.

- In a small saucepan, combine all the sauce ingredients. Bring to boil over high heat, then reduce heat to low and stir until sugar is dissolved, about 3 minutes. Remove from heat and let cool completely. Mix in 1/2 cup water.
- Place chicken in a sealable plastic bag. Add soy sauce mixture, seal bag and turn to coat chicken. Refrigerate and marinate as long as you can, up to over-night (*try for at least 1 hour, 4-6 hours is better, 8-10 hours is best).
- Remove chicken and set aside. Pour marinade mixture into a small saucepan. Bring to a boil over high heat, then reduce heat to low. Mix cornstarch with water and add to saucepan. Stir until mixture begins to thicken. Remove from heat and set aside.
- For baking chicken: Preheat oven to 400 F. Arrange chicken on baking sheet. Brush top of chicken lightly with sauce. Add other vegetables etc in a single layer on the baking sheet as well, if desired. Bake in preheated oven, turning once, until chicken is cooked through, about 20-25 minutes (165F. when tested with an instant read thermometer).
