Steps:

  • Combine chicken broth, teriyaki sauce, brown sugar, and garlic in a large bowl. Add chicken and toss with the sauce until well mixed. Pour into the slow cooker.

Teriyaki Chicken is one of the most popular Japanese dishes. The Teriyaki Sauce is so easy to make, it's just a mixture of soy sauce, sake, mirin, and sugar. You do not marinate the chicken in the sauce to make Teriyaki Chicken. Just sauté the chicken and cook it in the sauce, which takes only 15 minutes in total! 2 thigh fillets ( skin on, bone removed (about 350g/12oz in total, note 1))
1½ tbsp soy sauce
1½ tbsp cooking sake
1½ tbsp mirin
2 tsp sugar
2 cups shredded cabbage
½ cup carrot (finely julienned)
¼ cup capsicum (finely julienned)
a sprig of parsley or mint ((optional))

Steps:

  • Combine the Teriyaki Sauce ingredients in a small bowl or cup and mix well until the sugar dissolves (note 4).
  • If the thickness of the chicken is uneven, place a fillet on a cutting board skin side down, make a cut horizontally and outward where the meat is thick, and butterfly it (see the Video).
  • Poke the skin with the tip of the knife in several places so that the sauce gets through to the flesh better.
  • Heat a non-stick frying pan over medium heat. Place the chicken in the pan, skin side down. Cook for 3-4 minutes until the skin gets cooked to a golden brown.
  • Turn the chicken over and cook for about 3 minutes (Note 5). If a lot of oil comes out of the chicken fat and skin, absorb excess oil with a paper towel (Note 6).
  • When the chicken is nearly cooked, add the sauce, shake the pan to even out the sauce, and put the lid on. Cook for 30 seconds.
  • Remove the lid and cook until the sauce thickens and reduces to about 1-1½ tablespoons (Note 7). Turn the chicken over and coat the skin side with the sauce.
  • Remove the pan from the heat and place the chicken on the cutting board, skin side up. Cover with foil for a few minutes to let it cook further. Slice the chicken into 1½-2cm/⅝-¾" thick pieces.
  • Place mixed cabbage, carrot and capsicum salad on a plate and then arrange the sliced chicken. Pour the sauce over the chicken and add a sprig of parsley/mint if using. Serve immediately.

1 cup low-sodium soy sauce
1/4 cup rice vinegar
2 Tablespoons sesame oil
1/2 cup light brown sugar
2 Tablespoons honey
1 1/2 teaspoons ground ginger
2 cloves garlic (, minced)
3 teaspoons cornstarch+ 3 teaspoons water (, mixed together to make a cornstarch slurry)
¼ - ½ teaspoon crushed red pepper flakes
1 Green onion (, chopped, for garnish)
Hot cooked rice

Steps:

  • Heat oil in skillet over medium-high heat. Add chicken and cook until browned on both sides (doesn't need to be cooked all the way through). Remove to a plate and cover.
  • Add the remaining ingredients to the skillet and stir well to combine. Cook over medium heat until it comes to a low boil. Boil for 1 minute. The sauce should be thick enough to coat the back of the spoon.
  • Stir in chicken and cook for a few more minutes, just until chicken is cooked through.
  • Garnish with chopped green onion. Serve over cooked rice, with steamed vegetables on the side*.

500 g (1lb) boneless skinless chicken breasts (cubed)
1-2 tsp sesame oil
½ cup soy sauce ((I prefer using low-sodium soy sauce) )
¼ cup Sake/Mirin ((optional, replace with water) )
¼ cup rice vinegar
2 tbsp honey
2 tbsp brown sugar
1 garlic cloves (crushed)
1 tsp crushed fresh ginger
sesame seeds (to serve )

Steps:

  • Heat a large frying pan over high heat.
  • Pat the chicken breast pieces dry with paper towels.
  • Add the sesame oil to the pan followed by the chicken. Brown the chicken well on all sides then remove from the pan and set aside.
  • Combine the remaining ingredients except for the sesame seeds. Pour into the pan.
  • Allow the sauce to come to a boil and cook for 1-2 minutes until it starts to thicken then add the chicken and its resting juices back into the pan.

1 Tbsp olive oil
1/4 cup low-sodium soy sauce
1/4 cup water*
2 Tbsp honey

1/4 tsp toasted sesame oil

  • Heat olive oil in a 12-inch non-stick skillet over medium-high heat.

This is a simple, healthy version of Chicken Teryaki. My kids love it! It has far less sugar than bottled Teryaki sauce and no perservatives/additives. I always have Tamari and honey on hand, making for a quick, last minute super. I cook my chicken in my pressure cooker (which I couldn't live without!) I can throw in frozen solid chicken tenderloins and they cook in 3 minutes and all of the moisture is locked in. The chicken falls apart and is very moist & flavorful. If your not lucky enough to have a pressure cooker, first, put it on your next birthday wish list, and for now bake, boil, poach or grill your chicken, do not fry your chicken! * Tamari, unlike regular soy sauce, does not have any additives/perservatives in it. You can use another brand, just make sure it's a "baste and glaze" sauce versus a "marinade".
