12 corn tortillas (See note below)
canola & avocado oil (enough to coat the tortillas if baking or about two cups if frying. )
3 roma tomatoes
⅓ onion (white or yellow)
2 guajillo chiles (seeded)
2 or 3 chiles de arbol (Use more if you like it very spicy)
2 garlic cloves
½ Tablespoon knorr (chicken or vegetable flavor)
½ teaspoon kosher salt
1 teaspoon dried oregano
½ teaspoon black pepper
Mexican Crema
queso fresco
Avocado
red or white onion slices

Steps:

  • In a small or medium saucepan, add two cups of water, chiles, tomatoes, onion & garlic. Over medium-high heat, bring the water to a soft boil, then lower heat to medium-low. Cook for 7 minutes or until tomatoes are soft.
  • In a blender, add one cup of the cooking water, the chiles, tomatoes, onion, garlic plus all of the spices. Puree for one or two minutes until everything is pureed well.
  • Note: Reserve the remaining of the cooking water for now in case the sauce becomes too thick
  • Add one tablespoon oil to a saucepan/skillet and heat over medium heat. Add the tomato/chile puree (careful, it will sizzle!). Turn the heat to low, and simmer, stirring often, for about 5 minutes, until the sauce darkens and thickens a little bit.
  • Taste and adjust salt & pepper.
  • While the sauce is cooking, fry or bake the tortillas
  • In the saucepan where the sauce is cooking, stir in the tortilla chips, and fold until the tortilla is coated with the sauce. Remove from heat.
  • Serve immediately so that the tortillas chips don't become too soggy. They will soften up fast!
  • Drizzle with crema, sprinkle the cheese, and sliced avocado on the top.

3 tablespoons flour (whole wheat, all-purpose, or gluten-free blend all work)
1 tablespoon ground chili powder
1 teaspoon ground cumin
½ teaspoon garlic powder
¼ teaspoon dried oregano
¼ teaspoon salt, to taste
Pinch of cinnamon
3 tablespoons extra-virgin olive oil
2 tablespoons tomato paste
2 cups vegetable broth
2 tablespoons chopped fresh cilantro, plus additional for garnish
1 teaspoon apple cider vinegar or distilled white vinegar
5 big handfuls (5 ounces) corn tortilla chips, or homemade crispy baked tortilla chips (see post)
⅓ cup crumbled Cotija, queso fresco or feta cheese
1 small handful (about 3 tablespoons) very thinly sliced radish, or chopped red or green onion
1 ripe avocado, thinly sliced, or guacamole
Optional: 4 fried eggs or scrambled eggs or poached eggs
1 small lime, cut into wedges

Steps:

  • To make the sauce: Measure the flour, chili powder, cumin, garlic powder, oregano, salt and cinnamon into a small bowl. Place the bowl near the stove with the tomato paste and broth.
  • In a large skillet over medium heat, warm the oil until it's it's hot enough that a light sprinkle of the flour/spice mixture sizzles on contact. This might take a couple of minutes. Keep an eye on it.
  • Once it's ready, pour in the flour and spice mixture. While whisking constantly, cook until fragrant and slightly deepened in color, about 1 minute. Whisk the tomato paste into the mixture, then slowly pour in the broth while whisking constantly to remove any lumps.
  • Raise heat to medium-high and bring the mixture to a simmer, then reduce heat as necessary to maintain a gentle simmer. Cook, whisking often, for about 5 to 7 minutes, until the sauce has thickened a bit and your spoon encounters some resistance as you stir it.
  • Reduce the heat to the lowest possible setting. Whisk in the cilantro and vinegar and season to taste with additional salt, if necessary (I usually add another pinch or two).
  • To make the chilaquiles: Add the tortilla chips to the skillet. Using a flexible spatula, gently toss until all of the chips are coated in sauce. It might seem like they never will be, but keep stirring!
  • Once coated, remove the skillet from the heat. Test a chip to see if it has softened to your liking (this is really a matter of personal preference-I like my chips lightly tender). If the chips are not sufficiently softened, cover the skillet for 1 to 4 minutes, until you're happy with their texture.
  • Sprinkle the chilaquiles generously with crumbled cheese, radish and cilantro leaves. Scoop servings onto individual plates, add a few slices of avocado, a fried egg if desired, and a wedge of lime. The chips will continue softening with time, so chilaquiles are best served promptly (do not re-cover the pan to preserve heat; the chips will get far too soggy).

Chilaquiles is a sort of top-of-the-stove tortilla casserole. In its simplest form, it consists of a freshly made salsa into which you stir fried tortillas. Sometimes eggs are added, and sometimes chicken as well. The salsa can be red or green; even thick black beans may be used. I favor microwave-toasted tortillas, but if you don't have the time, use baked tortilla chips. Serve this right after you've stirred in the tortilla chips, because if they're not fried, they will quickly become soggy.

1 (28-ounce) can tomatoes
1 jalapeño chile, or 2 serranos, seeded for a milder sauce and chopped
1/4 cup chopped onion, soaked for a few minutes in cold water, drained and rinsed
2 garlic cloves, halved, green shoots removed
1 tablespoon canola oil
1/2 to 1 cup water, chicken or vegetable stock, as needed
Salt to taste
1 large chicken breast, poached and shredded about 2 cups shredded meat
8 corn tortillas, toasted and coarsely broken up, or 2 cups baked tortilla chips
1/2 cup crumbled queso fresco or feta cheese
2 tablespoons chopped cilantro
1 small red or white onion, cut into thick rings, soaked for five minutes in cold water, then drained, rinsed and dried on paper towels

Steps:

  • Combine the tomatoes, chiles, chopped onion and garlic in a blender, and blend until coarsely pureed.
  • Heat the oil in a large, heavy nonstick skillet or a wide saucepan over medium-high heat, and add a drop of the puree. It should sizzle. Add all of the tomato puree, and cook, stirring, for about five to ten minutes, until the sauce darkens, thickens and begins to stick to the pan. Add water or stock if the mixture seems dry, and season to taste with salt. Turn the heat to low, and simmer, stirring often, for about 15 minutes, until the sauce coats the front and back of a spoon. Taste and adjust salt.
  • Stir in the chicken and heat through. Stir in the tortilla chips or pieces, stir together for a half minute, and remove from the heat. Spinkle the cheese, cilantro and sliced onion over the top, and serve.

¼ pound chorizo
2 skinless, boneless chicken breast halves, cut into 1-inch cubes
½ (10 ounce) bag tortilla chips
1 cup frozen corn kernels
1 (19 ounce) can green enchilada sauce
½ cup sour cream
2 cups shredded Monterey Jack cheese

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Cook the chorizo in a skillet over medium heat, stirring to break it into tiny pieces. Place the raw chicken into the skillet with the chorizo; cook and stir the meats together until the chicken is no longer pink in the center, about 10 minutes.
  • Spread half of the tortilla chips over the bottom of a casserole dish; top the chips with the cooked chorizo and chicken mixture. Sprinkle the corn evenly over the meats and layer the remaining chips over the top. Whisk together the green enchilada sauce and sour cream in a mixing bowl; pour over the top of the casserole. Top the casserole with the shredded Monterey Jack cheese.
  • Bake the chilaquiles in the preheated oven until the casserole is bubbly and the chips begin to brown, 15 to 20 minutes.

Here's my technique for making excellent corn tortillas every time! It takes some practice to master, but even the lousiest homemade corn tortilla is better than those cardboard store-bought ones. Make sure to let the dough rest so that it puffs up nicely while cooking.

1 cup masa harina, or as needed
½ teaspoon kosher salt
¾ cup hot tap water, about 130 degrees F (55 degrees C)

Steps:

  • Add masa harina to a large bowl. Sprinkle in salt and add hot tap water. Stir mixture with your fingers until dough starts to pull together.
  • Knead for a few minutes to smooth it out until texture resembles modeling clay or putty. Add more water if dough is too dry and more flour if too wet.
  • Place a damp towel and over the dough to keep it from drying out. Let rest for 20 to 30 minutes.
  • Cut a zip-top bag into 2 rounds the same size as your tortilla press. Place 1 round on the bottom of the press.
  • Place a clean kitchen towel over a pie dish for holding the cooked tortillas later.
  • Pull off a little piece of the dough, enough to roll into a 1 1/2-inch or 1-ounce ball. Remove the top round of plastic, place dough ball in the center of the bottom round, and press down lightly. Cover dough with the top piece of plastic.
  • Fold the tortilla press over, apply pressure to the lever arm until tortilla flattens to your desired thinness.
  • Peel off the top piece of plastic. Line up the index finger of your dominant hand with the edge of the tortilla; flip it over into your other hand. Carefully peel off the plastic.
  • Gently slide tortilla, palm-up, into a hot, dry pan over medium- to medium-high heat. Cook first side for 30 to 45 seconds. Turn over and cook second side for 1 minute. Flip and press once or twice with a spatula until tortilla puffs up slightly. Cook for 30 seconds more. Flip one last time and cook for 5 to 10 seconds.
  • Quickly transfer tortilla to the pie dish and fold the towel over to wrap it up. Repeat pressing and cooking the rest of the tortilla dough, stacking and wrapping as you go.
  • Leave the stack of tortillas wrapped until soft and supple, at least 15 minutes.

2 tablespoons chopped white onion
15 House-Made Chips, recipe follows
2 cups Mom's Red Chile Sauce, recipe follows, heated
1 cup cooked Pulled Pork, recipe follows, heated
2 slices avocado
1 Poached Egg, recipe follows
1 tablespoon chopped scallion
2 tablespoons crumbled queso fresco
2 teaspoons Onion Date Jam, recipe follows
6 sprigs microgreens
20 white corn tortillas (without the ingredient lime)
10 cups grapeseed oil
Kosher salt, for sprinkling
6 dry red California chile pods, stemmed
7 cups filtered water
1 tablespoon ground cumin
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon crushed Mexican oregano
1 tablespoon kosher salt
5 pounds pork cushion meat
1 tablespoon ground cumin
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon salt
2 tablespoons white vinegar
1 cage-free egg
1 cup grapeseed oil
2 cups chopped white onion
1 cup chopped pitted dates
2 cups filtered water, warmed
1/4 cup raw sugar

Steps:

  • Preheat a small skillet on medium-high heat. Pour in the grapeseed oil and add the onion. Let the onions sizzle and saute slightly until golden brown. Add the Chips on top of the onions and stir.
  • Add Mom's Red Chile Sauce over the top of the chips and simmer for 20 seconds. Pour the contents of the skillet into a serving bowl.
  • Using serving tongs, add the Pulled Pork to the top of the chips.
  • Add the avocado on top of the pork, then set the Poached Egg on top of the avocado slices.
  • Sprinkle the chopped scallions and queso fresco over the top of the chips. Add small dollops of the Onion Date Jam on top of the chips.
  • Add the microgreens to garnish the top of the egg.
  • Cut each tortilla into 6 triangular pieces. Put aside.
  • In a deep saucepot, add the oil and heat on medium-high heat until the oil is at 350 degrees F or is creating movement in the pot, 15 to 20 minutes. Add some of the tortilla triangles to the oil. Let fry, moving them around with a long-handled metal slotted spoon or spider, until golden brown, 3 to 4 minutes. Remove to a sheet pan lined with paper towels to absorb the oil. While chips are still hot and slightly oily, sprinkle a generous amount of salt over them. Repeat the process with the remaining tortilla pieces.
  • Add the chile pods to 6 cups of the filtered water in a pot. Bring to a boil, then let boil until the chile pods soften, about 15 minutes. Turn off the heat and let the mixture cool for 30 minutes before adding to a blender. Confirm that the blender top is snugly fitted before blending. Holding a folded kitchen towel on top of the blender lid, turn the blender on low speed, gently blending the water and pods together until a bright red puree develops. Pour the blended puree mixture through a sieve into a deep container to catch the chile puree. Press the chile pod skins with the back of a rubber spatula against the sieve to extract the maximum amount of red chile puree.
  • Transfer the puree to a saucepan, then add the remaining 1 cup filtered water on low heat and whisk in the cumin, garlic powder, onion powder, oregano and salt.
  • Preheat the oven to 350 degrees F.
  • In a baking dish, put the cushion meat. Pour 3 cups water over the meat, then make the dry rub. In a bowl, combine the cumin, garlic powder, onion powder and salt. Pinch generous amounts of dry rub and press onto the cushion meat, coating the top and sides thoroughly.
  • Cover with foil and bake for 4 hours. Remove the baking dish and let sit for 30 minutes before pulling the meat apart with 2 forks. Mix the shredded pork with the pan drippings in the baking dish.
  • Heat 2 cups water in a saucepan on high heat and bring to a boil. Add the vinegar and stir the water in a counterclockwise motion. Crack open the egg into a small bowl. Pour the egg out of the bowl into the whirlpool of boiling water and cook for 3 minutes. Scoop out and add to the Chilaquiles or serve on top of toast.
  • In a large skillet over medium-high heat, add the oil, then onions and dates. Stir and cook until the onions have caramelized into a dark golden brown color, about 25 minutes.
  • Add the filtered water and bring to a boil. Add the raw sugar and stir until it has dissolved and the onion date jam has cooked down and is thick and caramelized.

Chilaquiles with Chicken image

This casserole comes from the "Los Barrios Family Cookbook" and although it is tasty with just plain chicken, it is elevated to sublime using Canary Girl's Chicken Verde. Just make sure you drain any excess liquid off the chicken. Assemble the dish right before baking -- if you do it in advance, the sauce may make the tortilla strips soggy. You can buy green tomatillo sauce in cans, but I have also posted Los Barrios recipe.

2 cups fried corn tortilla strips (directions follow)
vegetable oil (for frying)
4 cups shredded cooked chicken
1 1/2 cups green tomatillo sauce
1 cup shredded queso chihuahua cheese or 1 cup monterey jack cheese
1 cup sour cream

Steps:

  • Preheat the oven to 350 degrees.
  • To make the fried tortilla strips, slice corn tortillas into thin strips.
  • Fry in a large skillet of hot oil until light golden brown and crisp, watching carefully so they do not burn.
  • Remove with a slotted spoon and drain on paper towels.
  • To assemble the casserole, spread the corn strips on the bottom of a 9x13" baking dish.
  • Place the chicken on top and cover with the sauce, then top with cheese.
  • Cover with foil and bake for 20 minutes or until heated through.
  • Spread the sour cream over the top of the casserole and serve.
