STRAWBERRY DIVINITY
This recipe is from Kitchen Chatter and Friends book 2. This recipe can be made with your favorite jell-o flavor. Ma bunch- very colorful presentation. It was given to me by Carol a home economist.

- 1. Lightly butter a 9-inch square pan. Combine sugar, syrup and water in a heavy saucepan. Cook over medium heat, stirring until sugar dissolves. Bring to boil- cook to hard ball stage(252^). Meanwhile beat egg whites stiff, but not dry. Beat in jello,dry. When syrup reaches correct temperature pour a thin stream over egg whites, beating constantly,using mixer. When it gets too stiff for mixer, finish beating by hand. Add nuts. Turn into buttered pan. Cool till firm Cut into pieces.
EASY STRAWBERRY DIVINITY
My Mama has been making this recipe since I was a kid. I have no idea where the recipe came from but it is easy and very delish. You could use any flavor of gelatin to change the flavor.

Steps:
- 1. Mix sugar, syrup and water in saucepan, cook to boiling point stirring constantly. Reduce heat, continue cooking, stirring occasionally until a few drops form a hard ball dropped in cold water(252 degrees on candy themometer). Meanwhile beat egg whites until they fluff up , add dry gelatin gradually beat until mixture holds a stiff peak. Pour syrup mixture into egg whites in a thin stream, beating constantly until candy begins to stiffen and looses its gloss, stir in nuts. Drop by spoonfull onto wax paper.
STRAWBERRY SHORTCAKE

Steps:
- Mix strawberries with 3 tablespoons sugar and refrigerate while juices develop, at least 30 minutes.
- Preheat the oven to 400 degrees F.
- Sift together the flour, baking powder, baking soda, remaining 2 tablespoons sugar, and salt in a medium bowl. Add heavy cream and mix until just combined. Place mixture in an ungreased 8-inch square pan and bake until golden, 18 to 20 minutes.
- Remove shortcake from pan and place on a rack to cool slightly. Cut into 6 pieces and split each piece in half horizontally.
- Spoon some of the strawberries with their juice onto each shortcake bottom. Top with a generous dollop of whipped cream and then the shortcake top. Spoon more strawberries over the top and serve.
- Using a mixer, beat the heavy cream, sugar, vanilla, and lemon zest until soft peaks form, about 1 1/2 to 2 minutes.
STRAWBERRY DIVINITY
Steps:
- Combine sugar, syrup and water and bring to a boil, stir constantly. Reduce heat to low and cook to hard ball stage (252 degrees). This can be determined by dropping small amounts of mixture into cold cup of water. If it becomes stiff and hard then it is ready. Combine whites and jello. Beat until mix forms a peak, pour hot syrup in thin stream over egg whites and jello. Beat until loses its gloss and holds its shape. Fold in coconut and nuts. Drop in teaspoons onto waxed paper. Let set until they are hard.

- Cook sugar, corn syrup, and water in a 2-quart pot over low heat, stirring constantly, until sugar is dissolved. (On humid days, use 1 tablespoon less water.) Cook, without stirring, to 260 degrees on candy thermometer (or hard ball stage).
- Beat egg whites in 1-1/2-quart bowl until stiff peaks form. Continue to beat while pouring hot syrup in a thin stream into egg whites. Add vanilla; beat until mixture holds its shape and becomes slightly dull. (Mixture may become too stiff for electric mixer). Fold in nuts (if you choose).
- Drop from buttered spoon onto waxed paper. Let stand at room temperature, turning candy over once, until outside of candy is firm--at least 12 hours. Store in airtight container.

STRAWBERRY ANGEL TRIFLE
People always ask for the recipe for this when I make this wonderful strawberry dessert. It makes a beautiful presentation and it's very easy to put together. You can use low fat cream cheese and low fat whipped topping if you're watching calories.

Steps:
- Slice and quarter strawberries, reserving a few for garnish.
- Add sugar to taste.
- Cover and refrigerate overnight.
- Cream sugar and cream cheese.
- Add whipped topping and beat until light and fluffy.
- Drain about 3/4 of the liquid produced from soaking the berries; pour the glaze over and stir.
- Slice cake into 2-inch pieces.
- Fill a trifle dish or 9-inch deep glass bowl, with layers of the cake, strawberries and then the cream cheese mixture.
- Garnish with reserved strawberries.
- Refrigerate at least six hours before serving.
DIVINITY FUDGE
My mother was known for her divinty and this recipe always came out perfectly. It melts in your mouth and is a holiday favorite. Also, this makes a great gift.

- Stir the first four ingredients together in a saucepan over low heat until the sugar is dissolved.
- Boil without stirring to 265 degrees on a candy thermometer or until a little mixture that is dropped in cold water forms a hard, almost brittle ball.
- Remove syrup from heat and slowly pour over stiffly beaten egg whites, while beating with a mixer until mixture loses its gloss and a small amount that is dropped from a spoon holds its shape.
- Fold in nuts and vanilla.
- Pour into a greased 9"x9"x2" pan or drop by spoonfuls onto waxed paper to cool.

- Cook sugar, corn syrup and water (use 1 tablespoon less water on humid days) in 2-quart saucepan over low heat, stirring constantly, until sugar is dissolved. Continue cooking, without stirring, to 260°F on candy thermometer or until small amount of mixture dropped into very cold water forms a hard ball that holds its shape but is pliable.
- Beat egg whites in medium bowl with electric mixer on high speed until stiff peaks form. Continue beating while pouring hot syrup in a thin stream into egg whites, beating constantly on medium speed. (For best results, use electric stand mixer, not a portable handheld mixer since beating time is about 10 minutes and mixture is thick.) Add vanilla. Beat until mixture holds its shape and becomes slightly dull. (Mixture may become too stiff for mixer.) Gently stir in nuts.
- Drop mixture from buttered spoon onto waxed paper. Let stand at room temperature at least 12 hours, turning candies over once, until candies feel firm. Store in airtight container.

EASY DIVINITY RECIPE
You'll be surprised at how easy this divinity is to make. Recipes that require a candy thermometer can often be intimidating, but this divinity was pretty simple to make. Just follow the directions and you'll have a creamy delicious divinity that melts in your mouth.

Steps:
- Line a cookie sheet with waxed paper or parchment paper.
- In a 2 quart saucepan, heat the sugar, corn syrup, and water over low heat until sugar is dissolved. Stir constantly. You'll want to heat this mixture to 260 F on a candy thermometer.
- Before the candy reaches 260, start beating the egg whites in a stand mixer on high speed until stiff peaks begin to form.
- When the sugar mixture reaches 260 F, slowly pour it into the beaten egg whites. Beat the mixture on high speed.
- Beat until the mixture is no longer glossy and holds it's shape. This could take about 8 minutes.
- Fold in vanilla and nuts.
- Spray 2 spoons with non stick cooking spray. Using these spoons drop by tablespoonfuls onto the lined cookie sheets.
- Work quickly as the divinity sets up fast.
- Let set for about 1 hour.
- Store in an airtight container.
