1 jar (25.5 oz) Muir Glen™ tomato basil pasta sauce
2 cups Progresso™ chicken broth (from 32-oz carton)
1 teaspoon salt
1 lb boneless skinless chicken breasts
1 package (20 oz) refrigerated cheese-filled tortellini
1 cup shredded mozzarella cheese (4 oz)
1 tablespoon butter
1/2 cup Progresso™ Italian style panko crispy bread crumbs
1/2 cup shredded Parmesan cheese (2 oz)
Shredded fresh basil leaves, if desired

Steps:

  • Spray 4 1/2- to 5-quart slow cooker with cooking spray. Mix pasta sauce, broth and salt in cooker. Add chicken breasts.
  • Cover; cook on Low heat setting 3 to 4 hours or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Remove chicken with slotted spoon to cutting board, and shred.
  • Meanwhile, stir tortellini into cooker. Cover; cook on Low heat setting 15 minutes.
  • Stir tortellini mixture; top with shredded chicken. Top chicken with mozzarella cheese; cover and cook 10 to 15 minutes or until tortellini are tender and cheese is melted.
  • Meanwhile, in 10-inch skillet, melt butter over medium heat. Add bread crumbs; cook and stir 2 to 5 minutes or until toasted. Sprinkle over mixture in slow cooker. Top with Parmesan cheese and basil.

1 pound (500 g) ground Italian sausage ((or ground chicken, turkey or beef), browned*)
1 onion, (chopped)
2 large carrots, (chopped)
2 stalks celery, (chopped)
4 cloves garlic, (minced)
1 tablespoon Italian seasoning
2 teaspoon beef bouillon powder ((or chicken))
1/2 teaspoon salt
4 cups beef broth ((or chicken or vegetable broth -- I use low sodium))
1/4 cup cornstarch mixed and dissolved in 1/4 cup water
36 ounces evaporated milk or half and half
12 ounce packet three cheese tortellini ((I used dried not fresh; choose any flavour you like))
5 cups fresh baby spinach
1 cup milk

Steps:

  • Place the browned sausage, onion, carrots, celery, garlic, Italian seasoning, beef bouillon powder, salt, and broth in a 6-quart / litre slow cooker bowl. Cover and cook on high for 4 hours or low for 7 hours.
  • Uncover and skim any fat that is sitting on the top of the soup with a spoon; discard. Stir in the cornstarch mixture with the evaporated milk (or half and half or cream). Add the tortellini and mix well. Cover again and cook on HIGH heat setting for a further 45 minutes until the soup has thickened, and the tortellini is soft and cooked through.
  • Add in the spinach, pressing the leaves down to completely submerse into the liquid. Cover again for a further 5-10 minutes until the leaves have wilted.
  • Pour in milk in 1/3 cup increments, as needed, to reach your desired thickness and consistency (I needed 1 cup); taste test and season with extra salt ONLY if needed, and pepper to suit your tastes.
  • Serve with crusty warmed bread

1 tablespoon olive oil
1 pound ground beef
1 onion, diced
2 cloves garlic, minced
1 (28-ounce) can crushed tomatoes
1 (10-ounce) can diced tomatoes and green chiles, undrained
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes, optional
Kosher salt and freshly ground black pepper, to taste
1 (9-ounce) package refrigerated three cheese tortellini
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley leaves

Steps:

  • Heat olive oil in a large skillet over medium high heat. Add ground beef, onion and garlic. Cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat. 1/2 medium onion (chopped)
2 medium carrots (sliced or chopped)
2 sticks celery (chopped finely)
4 cloves garlic (minced)
1 (28 fluid ounce) can crushed tomatoes
1 (14 fluid ounce) can diced tomatoes (with juices)
4 cups chicken broth
2 (9 ounce) packages refrigerated cheese tortellini
3/4 cup heavy/whipping cream (optional)
2 cups (packed) fresh baby spinach

Steps:

  • Take your sausages out of their casings and crumble them into a skillet. Add the chopped onion. Sauté for about 7 minutes. Add the garlic in towards the end so it doesn't burn. Spoon out most of the fat (you don't need to be precise... fat gives the soup more flavor). Add the sausage mixture to your Crockpot.
  • Meanwhile, chop your carrots and celery. Add all ingredients except for the tortellini, spinach, cream, and salt & pepper to the Crockpot. Keep in mind that if you want the soup to cook in 3-4 hours, the carrots will have to be chopped pretty finely. If you're cooking it for 7-8 on low or 4-5 hours on high, you can chop them larger.
  • About 30 minutes prior to serving, add in your cheese tortellini, cream, and spinach (I set the heat to "high"). Give it a stir occasionally. Season with salt & pepper as needed prior to serving.
