SWEET TART WALDORF APPLE SALAD
This salad is a combination of a fruit dip recipe I learned last week and an apple salad I saw in the grocery store. It was enough inspiration to come up with this delicious recipe for our cook-out this afternoon! I have two boys and a daycare and would recommend this recipe as super-simple to make with kids. Children love chopping apples (even littles can do this with a butter knife) and mixing the dressing. I used ¾ of my dressing and reserved the rest to use as fruit dip later.

WALDORF SALAD
This simple apple salad got its name from the luxurious Waldorf-Astoria Hotel in New York. Invented in 1896 not by a chef but by the maître d'hôtel Oscar Tschirky, the Waldorf salad was an instant success. As often happens, many variations evolved-some with raisins, some with chopped nuts. This one has green apples and red seedless grapes.

Steps:
- To a medium bowl, add the mayo, Greek yogurt, sugar, lemon juice (make sure to zest the lemon before juicing it and reserve the zest if you're going to garnish your salad with the zest later), optional poppy seeds, and whisk to combine until smooth; set aside.
- To a separate large bowl, add the apples, grapes, optional pineapple, celery, half the nuts, evenly drizzle the dressing over the top, and stir and toss to combine and coat evenly.
- Taste and if desired, add salt, to taste. I recommend adding some to balance the sweetness in this salad.
- Evenly sprinkle the remaining half of the nuts over the top.
- Optionally and evenly sprinkle the parsley and optional lemon zest to garnish.
- Optionally plate the salad in large leaves of Bibb lettuce (or butter lettuce will work) or simply serve family-style out of the mixing bowl, or plate on individual salad plates, minus the bed of lettuce underneath.
- Salad is best fresh but can be made up to 4 hours ahead of time.***** (See Notes)

WHEATBERRY WALDORF SALAD
From The Whole Foods Market Cookbook Wheat berries are the mother grain from which pasta, bread, and flour are derived. Most of us have never tasted the true flavor of wheat. Little wheat berries pack a nutlike flavor and are pleasantly chewy. Use a crunchy, firm, sweet-tart apple (such as a Granny Smith or Gala) for this salad. Lemon juice and vinegar keep chopped apples from darkening so you may make this salad the day before serving. Try substituting dried apples for the fresh ones for another flavor variation.

Steps:
- Soak the wheat berries at least 6 to 8 hours or overnight in water to cover by a couple of inches. Drain the water, and set aside.
- In a saucepan, bring the 7 cups water to a boil. Add the soaked wheat berries and turn down to a simmer, uncovered, for about 50 minutes or until they are totally cooked through. Wheat berries retain a firm, chewy texture when cooked. Drain the water and set aside to cool.
- When cool, transfer the wheat berries to a large mixing bowl and add the walnuts, apples, raisins, parsley, apple cider vinegar, apple juice, salt, pepper, nutmeg, cinnamon, olive oil and lemon juice. Mix everything together thoroughly. Add more salt if necessary and serve.

- Wash and finely slice the celery. I like to make my pieces really fine. This is great if you’re not a massive fan of celery, and it’s also easier for digestion - it’s a win-win!Make sure to remove any of the string fibrous parts of the celery. You can do this done manually or with a vegetable peeler.
- In a large bowl, combine all of the ingredients and toss gently to combine. You can alternatively mix all the ingredients and the dressing in a separate bowl and serve it over a bed of lettuce rather than mixing it into the salad.
- Store the celery salad in an airtight container, covered, for between 2-3 days. It will become a little watery over time, so you may want to drain it before eating. You can also add a little extra dressing before eating leftovers.Note that the nuts will go a little soft from refrigeration. I recommend keeping them to one side to top the salad with just before serving. To make ahead: It’s best to prepare the salad and dressing separately and combine the two just before serving. Also, only add the nuts/seeds just before serving. That way, you can store this celery salad in the fridge for 4-5 days.Note that cut apples will discolor quickly, so tossing them with a little lemon juice may be best to avoid this.
