Easy Quiche image

this was the first quiche I ever ate or made all in one. In fact I posted this and the picture right after consuming 2 slices! I would have added mushrooms and spinach if I had them but this was yummy just like this.

QUICHE RECIPE

Quiche Recipe image

This is a perfect base quiche recipe and it's all baked in a super flaky homemade pie crust. Use a combination of milk and heavy cream for the richest, creamiest filling and add your favorites such as bacon, feta cheese, ham, white cheddar cheese, crab meat or spinach.

Provided by Sally

Categories     Breakfast

Time 4h

Number Of Ingredients 8

1 unbaked Flaky Pie Crust (what I used) or All Butter Pie Crust*
4 large eggs
1/2 cup whole milk*
1/2 cup heavy cream or heavy whipping cream*
1/4 teaspoon each salt and pepper*
1 cup shredded or crumbled cheese such as feta, cheddar, goat cheese, or gruyere
up to 2 cups add-ins (see recipe note)
optional toppings for serving: extra cheese, chopped herbs, hollandaise sauce, & freshly ground pepper to taste

Steps:

  • I like to make sure my pie dough is prepared before I begin the quiche. Make pie dough the night before because it needs to chill in the refrigerator for at least 2 hours before rolling out and blind baking (next step).
  • On a floured work surface, roll out one of the disks of chilled dough (use the 2nd pie crust for another recipe). Turn the dough about a quarter turn after every few rolls until you have a circle 12 inches in diameter. Carefully place the dough into a 9-inch pie dish. Tuck it in with your fingers, making sure it is completely smooth. To make a lovely edge, I do not trim excess dough around the edges. Instead, fold the excess dough back over the edge and use your hands to mold the edge into a rim around the pie. Crimp the edges with a fork or use your fingers to flute the edges. Chill the pie crust in the refrigerator for at least 30 minutes and up to 5 days. Cover the pie crust with plastic wrap if chilling for longer than 30 minutes.
  • While the crust is chilling, preheat oven to 375°F (190°C).
  • Line the chilled pie crust with parchment paper. Fill with pie weights or dried beans. Make sure the weights are evenly distributed around the pie dish. Bake until the edges of the crust are starting to brown, about 15-16 minutes. Remove pie from the oven and carefully lift the parchment paper (with the weights) out of the pie. Prick holes all around the bottom crust with a fork. Return the pie crust to the oven. Bake until the bottom crust is just beginning to brown, about 7-8 minutes. Remove from the oven and set aside. (Crust can still be warm when you pour in the filling. You can partially pre-bake the crust up to 3 days ahead of time. Cover cooled crust tightly and refrigerate until ready to fill.)
  • Reduce oven temperature to 350°F (177°C).
  • In a large bowl with a handheld or stand mixer fitted with a whisk attachment, beat the eggs, whole milk, heavy cream, salt, and pepper together on high speed until completely combined, about 1 minute. Whisk in add-ins and then pour into crust.
  • Bake the quiche until the center is just about set, about 45-55 minutes. Don't over-bake. Use a pie crust shield to prevent the pie crust edges from over-browning. Allow to cool for 15 minutes. Top with optional toppings before slicing and serving, if desired. Or you can cool the quiche completely before serving- it's fantastic at room temperature!
  • This quiche makes great leftovers! Cover tightly and store in the refrigerator for up to 4 days.

QUICHE LORRAINE IN 4 EASY STEPS

Quiche Lorraine in 4 easy steps image

Intimidated by quiche and all that pastry making? Try this beginners guide and you'll be surprised how simple it can be

Provided by Good Food team

Categories     Afternoon tea, Dinner, Lunch, Main course, Snack, Supper

Time 1h10m

Yield Cuts into 8 slices

Number Of Ingredients 7

flour, for dusting
500g block ready-to-roll shortcrust pastry
200g smoked streaky bacon, chopped
85g medium cheddar, cut into small cubes
3 eggs, lightly beaten
284ml tub double cream
pinch grated nutmeg

Steps:

  • Roll out pastry and lift into tin: Leave pastry to soften at room temperature so it doesn't crack when rolling. Lightly flour rolling pin and work surface. Gently press top of pastry, from the end closest to you outwards, a few times, turn 90°, then repeat until 1cm thick. Now roll out pastry in one direction only, turning every couple of rolls, to a circle the thickness of a £1 coin. Use the rolling pin to lift pastry up and over tin, floured side facing up.
  • Line the tin and trim the pastry: Smooth pastry over the base of the tin to remove any pockets of air. Gently ease pastry into the inside edge of tin and against the sides. Trim overhanging pastry with kitchen scissors so pastry rises 1cm above the rim. Roll excess pastry into a small ball and use to press pastry into the fluted edges. Chill for 30 mins, covered with cling film. Any left over can be chilled and reused, or frozen for up to a month.
  • Bake the pastry case blind: Heat oven to 200C/fan 180C/gas 6. Cut a large piece of baking parchment, then scrunch into a ball. Open it out and use to line chilled pastry case, then tip in baking beans with more against the sides, to support pastry wall when baking. Bake on a baking sheet for 15-20 mins until the sides are crisp and set. Remove from oven and carefully lift paper and beans out. Return pastry to oven and cook for another 5 mins or until the base and sides are golden and crisp.
  • Fill pastry case and bake Lower oven to 150C/fan 130C/gas 2. Heat a pan, then fry the bacon until golden. Scatter over the pastry base, discarding excess fat, followed by the cheese. Mix eggs, cream and nutmeg together, then half-fill the case. Rest baking sheet on an oven shelf, then pour in the rest of the mixture. Bake for 30-35 mins or until just set. Remove and allow to cool for 10 mins.

THE ONLY BASIC QUICHE RECIPE YOU'LL EVER NEED

The Only Basic Quiche Recipe You'll Ever Need image

Everyone needs a basic quiche recipe. This savory tart is the perfect make-ahead meal for brunches, lunches, and even dinner-but it's not always the healthiest option. So how do you slash the fat without compromising the flavor? Our basic quiche proves you can make a healthier-but just as indulgent-version. Make it, memorize the formula, then customize it with whatever ingredients you have on hand. Here's how we pulled it off: The Crust: The traditional quiche crust recipe-flour, butter, salt, and cold water-is a bit high in sat fat for our standards. For a healthier crust that captures the simplicity of the original recipe, Wholly Wholesome Organic Pie Dough (find it at Whole Foods) is, hands down, our top pick. No wonky ingredients, just flaky, buttery goodness. Try the whole-wheat version, which has over 2g of fiber per serving. For gluten-free crust, try making a quinoa pie crust or a sweet potato crust. The Custard: For your custard to set properly in the oven, use this easy ratio: 1 part dairy to 2 parts eggs. Classic custards use heavy cream, but 2% milk contains a fraction of the sat fat and is still plenty rich. Flavor your custard with salt, pepper, a pinch of nutmeg, and fresh herbs such as chives, oregano, parsley, or tarragon. The Filling: For a 9-inch quiche crust, you'll need about 1 ½ cups total of pre-cooked veggies, plus a little cheese. Meat is optional, but a small amount of bacon or ham gives a big flavor boost. For veggies, we love sliced mushrooms, broccoli or cauliflower florets, cubed sweet potatoes, diced bell peppers, or sliced cherry tomatoes. Choose a lower-fat cheese such as Parmesan cheese, goat cheese, feta cheese mozzarella, or Ricotta. Add fiber to our basic quiche by making a simple kale salad with this tangy vinaigrette. Provided by Elizabeth Laseter

Time 1h20m

Yield Serves 6 (serving size: 1 wedge)

Number Of Ingredients 11

1/2 (14.1-ounce) package refrigerated or frozen pie dough (such as Wholly Wholesome Organic Pie Dough)
1 ⅓ to 1 ½ cups 2% milk
3 large eggs
⅛ teaspoon ground nutmeg
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 to 2 tablespoons freshly chopped chives
1 teaspoon olive oil
1 ½ cups sliced cremini mushrooms
3 slices center-cut bacon, cooked and crumbled
¼ cup freshly grated Parmesan cheese

Steps:

  • Preheat oven to 400°.
  • Pre-bake the crust: Roll dough to fit slightly larger than a 9-inch fluted tart pan. Press dough into fluted edges of pan, trimming off excess pieces if needed. Poke several holes in the crust with a fork. Line crust with parchment paper, and fill with pie weights or dried beans. Place pan on a foil-lined baking sheet. Bake 10 minutes. Remove weights and foil, and bake 5 more minutes. Cool completely on baking sheet on a wire rack (about 15 minutes). Reduce oven temperature to 375°.
  • Cook the mushrooms: Heat a medium skillet over medium heat. Pour in oil, add mushrooms, and saute until softened and browned, about 5 minutes. Set aside.
  • Prepare the custard: In a large bowl, whisk together eggs, milk, chives, nutmeg, salt, and pepper.
  • Assemble the quiche: Spoon the mushrooms, bacon, and cheese into the crust. Pour in egg mixture and carefully transfer to oven.
  • Bake until set (a knife inserted into the center should come out clean), about 35 to 40 minutes. Let cool at least 10 minutes. Cut into 6 wedges and serve warm or at room temperature.

EASY QUICHE

Easy Quiche image

I'm going through an old church cookbook I got many years ago, and found this. I'd made it back when I was a new wife and hadn't many "tried and true" recipes or many cooking skills. It's been years since I made it, but to my recollection it was easy and tasty.

Categories     Savory Pies

Time 45m

Yield 6-8 serving(s)

Number Of Ingredients 8

1 (9 inch) pie crusts (purchased frozen crust)
3 eggs
1 1/2 cups whipping cream (unwhipped)
1 cup swiss cheese or 1 cup monterey jack cheese
1 cup cheddar cheese
mushroom, from jar drained (optional)
1 (10 ounce) package frozen broccoli or 1 (10 ounce) package frozen spinach
1 cup shrimp or 1 cup crab, chopped

Steps:

  • Bake crust for about 15 minutes.
  • Cook broccoli and chip into bite-size chunks. (If using spinach, just thaw and drain.) Put broccoli or spinach into the bottom of the pie crust.

YOUR BASIC QUICHE

Your Basic Quiche image

There are so many different types of quiches you can make, but first you have to know how to make the basic pie. You can use store-bought or homemade crust and the results will still be impressive for such a simple dish.

Provided by local-flavor

Number Of Ingredients 1

1 basic pie crust, store-bought is fine6 eggs or 4 whole eggs and 2 egg whites1 cup milk (any kind, but the higher fat the better)2/3 cup half-and-half or cream1 cup grated sharp cheese, such as Swiss, cheddar, Gruyère or crumbled fetaA pinch of grated nutmeg (optional)A teaspoon of fresh thymeA pinch of salt and pepperundefinedOptional additions:1 medium onion, chopped and sautéed1 cup mushrooms, sliced and sautéed1 cup ham, diced3 slices bacon, cooked and crumbled3/4 cup cooked spinach, drained and patted dry and choppedundefined

Steps:

  • Pre-heat the oven to 425ºF. Whisk the eggs in a large bowl and add the milk and half-and-half or cream. Whisk together thoroughly and then stir in the shredded cheese and herbs. Pour the mixture into the pie crust and bake for 30 minutes. If the quiche still has a liquidy and jiggly center, bake for another 10 minutes. If firm, remove from the oven and allow it to cool slightly before serving. Quiche can be served at room temperature. Tip: If your crust edges start to burn, wrap aluminum foil over the edges and keep cooking as instructed above. Note: If you want to add any of the optional additions mentioned above, simply stir them in when you are adding the cheese, but reduce the amount of cheese by 1/2 cup so everything fits!

QUICHE

Quiche image

There's something so satisfying about a homemade quiche and this method guarantees delicious flavour. I like to have a pastry case ready rolled and in the freezer, waiting to blind bake when needed - the quantities I've given here are easy to double up, if you want to make an extra case and stash it away for your next picnic.

Provided by Jamie Oliver

Categories     Vegetables Recipes     Vegetables     Mushroom

Yield 10

Number Of Ingredients 11

250 g plain flour, plus extra for dusting
125 g cold unsalted butter
olive oil
800 g butternut squash or mixed mushrooms
1 onion
4 cloves of garlic
6 large free-range eggs
100 ml single cream
100 g Cheddar cheese
50 g crumbly goat's cheese
2 sprigs of thyme

Steps:

  • This recipe works great as a stand-alone dish, but also as a component in Jamie's Picnic Love from Together - see the full collection of menus here.
  • GET AHEAD You can make this all on the day, if you prefer. Equally, you can cook the whole thing the night before, and enjoy cold. Whatever works for you! Put the flour, butter and a pinch of sea salt into a food processor and pulse for 15 seconds, until the mixture resembles breadcrumbs. Add 4 tablespoons of water and pulse for a few more seconds until it comes together. Scoop on to a flour-dusted work surface and push and pat into a round - don't be tempted to knead it. Wrap and rest in the fridge for 30 minutes.
  • Preheat the oven to 180°C/350°F/gas 4. Lightly oil a non-stick loose-bottomed tart tin (25cm diameter, 4cm deep). Roll out the pastry on a flour-dusted surface, turning it every so often, until it's just under ½cm thick. Gently roll it up around the rolling pin, then unroll it over the oiled tin and ease it into the sides, letting the excess pastry overhang. Prick the base all over with a fork, place on a baking tray, then bake blind for 30 minutes, or until lightly golden. Cool, trim off the excess pastry, and store in an airtight container
  • Prep your chosen veg - peel, carefully halve and deseed the squash, then dice into 2cm chunks, or clean and slice the mushrooms. Put a large non-stick frying pan on a medium heat. Peel and finely slice the onion and garlic, then place in the pan with 1 tablespoon of olive oil. Add your chosen veg and cook for 30 minutes, or until soft and starting to caramelize, stirring occasionally and adding splashes of water to prevent it sticking, if needed. Season to perfection, then leave to cool. Tip into a blender, crack in the eggs, add the cream and grate in the Cheddar, then blitz until smooth, cover and refrigerate overnight.
  • ON THE DAY Preheat the oven to 180°C/350°F/gas 4. Pour the filling into the pastry case, then crumble over the goat's cheese. Rub the thyme sprigs with a little oil, then pick the tips and leaves over the tart. Bake for 40 minutes exactly, then remove and leave to cool, ready to wrap and go.
