Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Place ham cut side face down in a roasting pan or 9x13 pan.

One 8- to 10-pound bone-in smoked fully cooked ham (shank portion)
1/2 cup orange marmalade
1/2 cup whole-grain mustard
1/2 cup loosely packed light brown sugar
2 tablespoons sherry vinegar
1 teaspoon ground coriander
1 teaspoon ground ginger
1/2 teaspoon ground allspice
Freshly ground black pepper
Fresh rosemary sprigs, for serving
Oranges, cut into quarters, for serving

Steps:

  • Let the ham sit at room temperature for 30 minutes to 1 hour. Preheat the oven to 325 degrees F. Trim off any skin from the ham. Score the ham in a diagonal crosshatch pattern (about 1-inch apart) without cutting through into the meat. Place the ham, flat-side down, fattier side up, on a rack in a roasting pan. Pour a 1/2-inch of water in the bottom of the pan. Cover with aluminum foil and roast, about 1 hour. Remove the foil, add more water if the water has dried up and recover loosely with the foil. Continue to bake until the ham reaches 130 degrees F, adding more water if needed to keep the roasting pan from burning, 1 hour to 1 1/2 hours more (about 15 minutes per pound).
  • Increase the oven temperature to 400 degrees F. Whisk the marmalade, mustard, brown sugar, vinegar, coriander, ginger, allspice and a generous amount of black pepper in a liquid measuring cup. Spoon off about 1/4 cup of the pan juices from the ham and whisk into the glaze mixture. Brush about half of the glaze all over the ham. Continue to bake, brushing the ham with the glaze twice more until the surface of the ham is caramelized and the internal temperature in the center of the ham reads 140 degrees F on an instant read thermometer, adding more water if the bottom of the pan dries out and begins to burn, 40 to 45 minutes. Transfer the ham to a cutting board or platter and let rest for 20 minutes before slicing. Serve with the rosemary, oranges and any additional glaze on the side.

4-5lb. Pederson's Natural Farms No-sugar Uncured Smoked Boneless Ham (or other fully-cooked ham)
½ cup water
¾ cup frozen orange juice concentrate, slightly thawed
⅓ cup water
¼ tsp. dried ground ginger (recommend Pure Indian Foods)
⅛ tsp. ground cloves

Steps:

  • Preheat oven to 325℉. Position oven rack in the lower ⅓ of the oven.
  • Unwrap ham and place sliced side down on a rack in roasting pan. Add ½ cup water to bottom of pan. Place a sheet of parchment paper over the ham then cover with aluminum foil.
  • Place pan in oven and roast 45 minutes.
  • While ham is in the oven, prepare glaze by adding orange juice, water, ginger and cloves to a small saucepan. Bring to a boil, reduce heat then simmer until reduced to roughly half and glaze is slightly thickened. Remove from heat.
  • After 45 minutes, remove ham from oven and uncover. Spoon or brush some of the glaze over ham. Return ham to oven uncovered.
  • Continue to spoon or brush remaining glaze over the ham every 15 minutes until a thermometer inserted in the center of the ham registers 140℉.
  • Remove ham from oven and allow to rest, covered, for 10 minutes before slicing and serving.

1/4 cup whole cloves
1 cup honey
1 cup firmly packed dark brown sugar
3/4 cup fresh orange juice
1/4 cup (4 tablespoons) unsalted butter

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the ham in a roasting pan, fat side up. Score the ham in diamond shapes with a sharp knife. Insert the cloves in the center of each diamond. Bake until a meat thermometer registers 140 degrees F when inserted in the thickest portion (avoiding bone), 18 to 20 minutes per pound.
  • Meanwhile, make the glaze. Combine the honey, brown sugar, orange juice and butter in a medium saucepan over medium heat. Bring to a simmer and cook until the sugar dissolves, about 2 minutes.
  • Remove the ham from the oven. Increase the oven temperature to 375 degrees F.
  • Remove about 2 tablespoons pan drippings from the roasting pan and add to the glaze. Whisk to combine. Pour the glaze over the ham. Return the ham to the oven and continue baking, basting with the pan juices frequently, until the ham is browned, about 20 more minutes. Slice the ham and serve with the pan juices, if desired.
