2 ¼ cups all-purpose flour
¾ cup white sugar, or more to taste
¼ cup brown sugar
1 ½ teaspoons baking powder
¾ teaspoon baking soda
½ teaspoon ground cinnamon
1 pinch sea salt
¾ cup low-fat plain yogurt
6 tablespoons milk
1 large egg
3 tablespoons applesauce
¾ teaspoon vanilla extract
1 cup fresh mulberries

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 12-cup muffin tin with cooking spray.
  • Mix flour, white sugar, brown sugar, baking powder, baking soda, cinnamon, and salt together in a bowl.
  • Stir yogurt, milk, applesauce, egg, and vanilla extract together in another bowl. Gradually add flour mixture and stir until well combined.
  • Chop mulberries (if large) and add to batter; stir gently until incorporated. Spoon batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted in the centers comes out clean, 20 to 25 minutes. Cool in the tin for a few minutes, then transfer to a wire rack to cool completely, about 20 minutes.

½ teaspoon baking soda
1 pinch salt
½ cup fat free sour cream
¼ cup skim milk
2 tablespoons applesauce
1 egg
½ teaspoon almond extract
½ cup mulberries

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).Grease 6 jumbo muffin cups or line with paper muffin liners.
  • Combine flour, sugar, baking powder, soda and salt. In a medium bowl, mix together sour cream, milk, applesauce, egg and almond extract. Stir in flour mixture until batter is smooth. Fold in mulberries. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into center of a muffin comes out clean.

3 cups self-rising flour
1-1/2 cups sugar
1 cup buttermilk
1/2 cup canola oil
2 large eggs, lightly beaten
2 cups fresh or frozen blueberries

Steps:

  • In a large bowl, combine the flour and sugar. In another bowl, combine the buttermilk, oil and eggs. Stir into dry ingredients just until moistened. Stir in blueberries., Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 14-18 minutes or until golden brown and a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

There's nothing fancy about this muffin - it's mostly flour, eggs, butter and blueberries. But that's the beauty of it. It's the perfect sort of baking project to tackle on a lazy weekend morning. This recipe calls for blueberries, but feel free to substitute almost any ripe and sweet berry.

4 teaspoons baking powder

  • Preheat oven to 425 degrees. Grease 12 muffin cups with a little butter.
  • Sift together flour, salt, baking powder and sugar.
  • Combine eggs, milk and melted butter. Stir into dry ingredients just until moistened. Do not try to beat until smooth because the muffins will be tough and grainy.
  • Sprinkle 3 tablespoons of flour over blueberries, and turn to coat well. Stir into batter, mixing just enough to combine.
  • Fill muffin cups about two-thirds full.
  • Bake 20 to 25 minutes, or until muffins are brown and pull away from the sides of the tin.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
  • Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and add enough milk to reach the 1-cup mark. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  • To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  • Bake for 20 to 25 minutes in the preheated oven, or until done.

100g unsalted butter softened, plus 1 tbsp, melted, for greasing
140g golden caster sugar
2 large eggs
140g natural yogurt
1 tsp vanilla extract
2 tbsp milk
250g plain flour
2 tsp baking powder
1 tsp bicarbonate of soda
125g pack blueberries (or use frozen)

Steps:

  • Heat oven to 200C/180C fan/gas 6 and line a 12-hole muffin tin with paper cases. Beat the butter and caster sugar together until pale and fluffy. Add the eggs and beat in for 1 min, then mix in the yogurt, vanilla extract and milk. Combine the flour, baking powder and bicarb in a bowl with ¼ tsp fine salt, then tip this into the wet ingredients and stir in. Finally, fold in the blueberries and divide the mixture between the muffin cases.
  • Bake for 5 mins, then reduce oven to 180C/160C fan/gas 4 and bake for 15-18 mins more until risen and golden, and a cocktail stick inserted into the centre comes out clean.
  • Cool in the tin for 10 mins, then carefully lift out onto a wire rack to finish cooling. Will keep for 3-4 days in an airtight container - after a day or two, pop them in the microwave for 10-15 secs on high to freshen up.
