½ cup salted butter
¼ cup vegetable oil
1 small yellow onion, chopped
1 clove garlic, minced
2 tablespoons lemon juice
1 teaspoon salt
½ teaspoon ground paprika
½ teaspoon ground ginger
4 (4 ounce) skinless, boneless chicken breast halves

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Combine butter, vegetable oil, onion, garlic, lemon juice, salt, paprika, and ginger in a small saucepan over medium heat. Stir until butter is completely melted, about 3 minutes. Reduce heat to low and simmer until onion is translucent, 5 to 7 minutes.
  • Place chicken in a baking dish and baste with the butter sauce.
  • Broil in the preheated oven, basting and turning every 10 minutes, until chicken is no longer pink in the center and the juices run clear, 30 to 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

  • Defrost the chicken breasts in the fridge for at least 5 hours. The best way to defrost any type of frozen meat is to place it in the refrigerator and let it thaw out over several hours. If you don't have time to leave the chicken in the fridge this long, you can defrost it in cold water for 2-3 hours or use a microwave if you're in a pinch. Using the refrigerator is safer than other options because it prevents the chicken from being exposed to bacteria that can grow in warmer temperatures. It also helps the chicken maintain its flavor. If you've bought your chicken breast fresh (unfrozen), you can skip the defrosting step altogether.
  • Mix 5 tbsp of olive oil, 3 tsp of salt, and 2 tsp of pepper in a bowl. Stir these ingredients thoroughly together with a spoon or brush. You may also choose to add additional herbs and spices, such as garlic, thyme, or fennel, to your mixture for extra taste and texture. Steps:

  • Position an oven rack 4 inched below the heating element and preheat your broiler on high (500°F). Line a large broiler-safe rimmed baking sheet with foil and lightly grease the foil.

1/3 cup red wine vinegar

1 tablespoon fresh oregano leaves, chopped
1/3 cup plus 1 tablespoon olive oil
Kosher salt and freshly ground black pepper
1 1/2 pounds ripe but firm stone fruit, such as plums, apricots, peaches, nectarines or a mix, cut into wedges
1 1/2 pounds boneless skinless chicken breasts, cut in half parallel to the cutting board
3 cloves garlic, chopped
1/2 cup dry white wine (or 1/4 cup white wine vinegar mixed with 1/4 cup water)

  • Grill the chicken and fruit, flipping the chicken halfway through and turning the fruit frequently, until the chicken is cooked through and the fruit is caramelized, 5 to 7 minutes. Transfer to a cutting board and let rest.
  • Grill the bread, flipping occasionally, until toasted, about 5 minutes. Transfer to a serving platter and tear into bite-size pieces when cool enough to handle. Right before serving, grill the lettuce, turning occasionally, until slightly wilted and charred in spots, about 3 minutes. Transfer to the serving platter and toss with the torn bread. 4 skinless, boneless chicken breasts, about 6 ounces each
2 tablespoons olive oil
3 tablespoons fresh lemon juice
2 teaspoons freshly grated ginger
1 teaspoon ground cumin
2 teaspoons ground turmeric
1 pinch cayenne pepper to taste
1 teaspoon ground coriander
Salt to taste
2 tablespoons melted butter
2 tablespoons freshly chopped cilantro

Steps:

  • Place in a small mixing bowl the olive oil, lemon juice, ginger, cumin, turmeric, cayenne pepper, ground coriander and salt. Using a wire whisk, blend well.
  • Place the chicken breasts in a shallow baking dish large enough to hold them in one layer. With a pastry brush, coat each piece on both sides with all the marinade. Cover the dish with plastic wrap, and let stand for 10 to 15 minutes.
  • Meanwhile, preheat the broiler to high. Remove the chicken from the marinade, and broil in a broiling pan 3 to 4 inches from the source for 4 minutes on the first side.
  • Turn the chicken over, and broil it for 3 to 4 minutes more or until done. Do not overcook.
