SPICED APPLE SLICES / APPLE CHIPS
Spicy, Tart, and Sweet Oven Dried Apples. I like Granny Smiths but use what firm apples you prefer. I made this with candies ginger just pulse in the grinder along with the cardamom. I like the uneven amounts of spices on each slice. This way those that like it can pick the more spiced ones.

This makes a nice dessert for that late summer into fall transition. The cinnamon and nutmeg complement both fruits, and a little orange zest gives this crisp a nice fresh flavor.

- Using a mandoline or a serrated knife, cut apples crosswise into 1/8-inch-thick slices. Arrange slices in a single layer on baking sheets. In a small bowl combine sugar and chipotle pepper. Sprinkle apple slices with half of the sugar mixture. Use a pastry brush to brush mixture over apple slices to cover evenly. (Or, place the sugar mixture in a small sieve. Hold the sieve over the apple slices and stir the mixture with a spoon to evenly disperse the sugar mixture over the apples.) Turn apple slices and repeat with remaining sugar mixture.
