1 package (16 ounces) uncooked penne pasta
1 medium green pepper, chopped
1 small onion, chopped
1 tablespoon olive oil
1 pound Italian turkey sausage links, casings removed
3 cups fat-free meatless spaghetti sauce
1-1/2 cups shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese

Steps:

  • Cook pasta according to package directions; drain. In a large skillet, saute green pepper and onion in oil for 6-7 minutes. Add sausage; cook and stir until sausage is no longer pink. Drain. Stir in the spaghetti sauce and pasta., Transfer to a 3-qt. baking dish coated with cooking spray. Cover and bake at 350° for 15-20 minutes. Uncover; sprinkle with cheeses. Bake 5-10 minutes longer or until cheese is melted.

I love baked pasta, but wanted to make something a little different from most of the recipes that I saw. I use homemade marinara and homemade pesto, but feel free to use jarred if that's what you have on hand. You can also use chicken or turkey sausage instead of pork if you wish. This was intended to make dinner for two plus leftovers, as there are only two of us in the house, and I wanted it to be easy enough to pull together on a weeknight. Serve with a green salad, garlic bread, and a nice glass of red wine. Cooking time includes prep and resting time.

8 ounces Italian sausage, casings removed (mild or spicy- your choice)
6 ounces penne pasta, uncooked
1 1/2 cups marinara sauce (homemade or jarred)
2 -3 tablespoons pesto sauce (homemade or jarred)
1 teaspoon italian seasoning
1 dash chili flakes
salt and pepper
4 ounces mozzarella cheese, shredded
1 ounce parmesan cheese, grated

Steps:

  • Preheat the oven to 350.
  • In a large pot of boiling, salted water; cook the pasta just to al dente. You don't want it mushy, as it will cook more in the oven.
  • While pasta is cooking, brown the italian sausage in a saute pan over medium heat, breaking it up into small pieces.
  • Drain any accumulated grease and discard.
  • Add the marinara sauce, pesto, italian seasoning and chili flakes. Stir, and let simmer, stirring occasionally for 5 -6 minutes, until the sauce comes to a boil.
  • Taste, and add salt, pepper, or more italian seasoning as necessary.
  • Drain the cooked pasta, and place in a mixing bowl.
  • Add the sauce mixture and 3 ounces of the shredded cheese. Stir to combine.
  • Coat an 8 x 8 (or similar sized) baking dish with cooking spray.
  • Place pasta mixture in the baking dish, spreading to fill the dish evenly.
  • Top with the reaining cheeses.
  • You could make ahead to this point, and refrigerate until you are ready to cook, but if so, your baking time will be longer.
  • Bake, uncovered at 350 for 20 minutes or until bubbly and heated through.
  • Let rest for 5 minutes before serving.

  • Heat oven to 350°. Cook and drain pasta as directed on package.

This luscious pasta dish is one I've avoided making recently; it's not exactly a lowfat dinner and I feel guilty serving it to my husband -- neither of us should be eating such a high calorie meal. But it's so, so good! Even though I can't claim it's part of a healthy diet, I hope you try it at least once -- it's a fast, easy dish, after all! I serve this with a simple green salad.

1 lb penne pasta (fusilli or ziti could also be used, but I prefer penne)
3 tablespoons olive oil (preferably extra-virgin)
3 cloves garlic, minced
1 pinch cayenne pepper
1 lb sweet mild Italian sausage
1 cup heavy cream
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon freshly grated nutmeg
3 tablespoons unsalted butter (cut into small bits)
1/2 cup freshly grated parmesan cheese
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh flat leaf parsley

Steps:

  • Bring a large pot of salted water to boil and cook the penne until al dente; drain well and do NOT rinse.
  • After you put the water on to boil, remove sausage meat from the casings, crumble, and set aside.
  • In a large skillet, heat olive oil over medium-high heat.
  • Add garlic and cayenne and saute for approximately 30 seconds, then add sausage meat to skillet.
  • Cook until sausage meat is no longer pink (about 5 minutes or so).
  • Add cream, salt, pepper and nutmeg to skillet and turn heat to high to bring mixture to a boil.
  • Reduce heat and simmer, gently, until the cream reduces and the sauce thickens a bit; it takes about 10 minutes.
  • Place cooked penne in a large serving bowl (it's nice if you warm it first) and pour sauce over; add butter and cheese to bowl and combine all well.
  • Taste; add more salt and/or pepper if you wish.
  • Sprinkle chopped herbs over top and serve.

1/3 cup salt
3 tablespoons pepper
2 tablespoons leaves marjoram, crushed finely between palms
5 -6 kernels garlic
3 cups warm water
garlic salt (optional)
2 tablespoons sugar
hog casing, use 45ft of casing

Steps:

  • Have the pork butts ground coarse and place in a large pan.
  • Crush the kernals of garlic with the salt, by using the blade of a knife to mash the garlic fine.
  • Add the finely mashed garlic and the other above ingredients to the pork butts.
  • Mix it well.
  • If possible, allow the mixtures to remain overnight in the refrigerator.
  • Fill the casings with the meat mixture after washing the casings out with water.
  • To cook, place sausage in pot with water, bring to boil.
  • Skim, cover and simmer for about 45 minutes.
  • Remove form water.
  • Place in oven for additional browning at 325 degrees for about 45 minutes.
  • The uncooked sausage can also be placed in plastic bags and frozen for later use.

1 tablespoon canola oil or 1 tablespoon olive oil, for cooking
3 -5 garlic cloves, crushed
3 fresh chicken sausage or 3 Italian sausages

19 ounces white beans, rinsed and drained

1/4 cup pesto sauce (optional)

  • In a large saucepan, heat a drizzle of oil over medium-high heat and cook the onion and garlic for a few minutes, until soft.
  • Squeeze the sausages out of their casings into the pan and cook, breaking up the meat until it's no longer pink.
  • Add the tomatoes, beans, and tomato paste and simmer for 5 to 10 minutes, until the sauce thickens. Stir in the pesto and some salt and pepper.
  • Cook the pasta until al dente, drain it well, and toss it with the spinach, mozzarella, and about half the parmesan cheese in a large bowl.
  • Stir in the hot tomato sauce, which will slihtly wilt the spinach.
  • Pour into one or more baking dishes (it should be enough to fill one 9x13 inch pan) and sprinkle with the remaining Parmesan.
  • At this point the dish can be cooled completely, covered, and kept in the refrigerator overnight, or frozen for up to 4 months. Bake from frozen.

1 ½ cups whole wheat penne pasta
cooking spray
2 green bell peppers, cut into thin strips
1 onion, thinly sliced
1 cup fresh mushrooms, sliced
1 clove garlic, minced
1 (16 ounce) package spicy Italian turkey sausage, casings removed
¼ teaspoon red pepper flakes
¼ teaspoon salt
⅛ teaspoon ground black pepper
⅛ teaspoon dried oregano
1 (14.5 ounce) can diced tomatoes
¼ cup grated Parmesan cheese
2 tablespoons grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Coat a large nonstick skillet with cooking spray; place over medium-high heat. Add green bell peppers, onion, mushrooms, and garlic. Cook, stirring frequently, until almost tender, 7 to 8 minutes.
  • Place turkey sausage in a skillet over medium heat; cook and stir, breaking sausage up with a wooden spoon, until browned and crumbly, about 6 minutes. Add red pepper flakes, salt, black pepper, and oregano; stir in tomatoes. Simmer until heated through, about 5 minutes.
  • Place penne in a serving bowl; top with sausage mixture and sprinkle with Parmesan cheese.

1 jar (26 ounces) meatless spaghetti sauce, warmed

Steps:

  • Cook pasta according to package directions. Meanwhile, in large skillet, saute the sausage, peppers and onion in oil until sausage is browned and vegetables are crisp-tender., Drain pasta; divide among six serving plates. Top with spaghetti sauce and sausage mixture.
