EASY MORNING STRAWBERRY DANISH
I just love danish, especially on a Sunday morning before church and this is a quick recipe to make. You can use any preserves, I just love strawberry or blueberry.

Steps:
- Heat oven to 375. Lightly spray 16 muffin cups w/ cooking spray.
- Separate each biscuit into 2 pieces. Place 1 piece into a muffin cup, pressing dough into bottom and up the sides of muffin cup.
- In a medium sized bowl, beat cream cheese, sugar and egg until creamy. Spoon mix evenly into each muffin cup. Top cream cheese mix w/ preserves. Bake 10 minutes or until light golden brown.
SUNNY'S EASY RASPBERRY AND STRAWBERRY DANISHES
Steps:
- Preheat the oven to 375 degrees F.
- For the fruit: Using a mortar and pestle, mini food processor or a sealed plastic bag and a mallet or rolling pin, crush the freeze-dried raspberries and strawberries together to a powder; some little pebbles are ok. Set aside 2 tablespoons for the icing and garnish.
- For the dough: Spray the bottom and sides of an 8-inch square baking dish or 8- or 9-inch round pie pan with cooking spray.
- Unroll the crescent dough out on a sheet of parchment paper. If using dough with perforations, gently pinch the seams to keep them together. Leaving about a 1-inch border on one of the short sides, sprinkle with the remaining fruit mixture, followed by a layer of the granulated sugar and then the brown sugar. Use a box grater or rasp and grate the butter evenly over the top. Starting with the short edge with the filling on it, roll, tucking as you go, towards the short edge with the empty border. Cut into 8 equal rounds and place in the prepared dish. Bake until the tops are golden, 13 to 14 minutes.
- For the icing: While the danishes are baking, in a small bowl, whisk together the confectioners' sugar, 1 tablespoon of the reserved fruit mixture, a pinch of salt and 1 teaspoon of preferred liquid. The icing should be thick like a glaze, but thin enough to pour. If needed, add more liquid.
- Drizzle the icing over the warm danishes. Transfer to plates and sprinkle with the remaining fruit mixture. Serve warm.
CREAM CHEESE STRAWBERRY DANISH

- DAY BEFORE: Make the Danish pastry.
- Preheat the oven to 200C / 395F / 180C fan forced. Line 2 baking trays with baking paper.
- SHAPE THE DANISHES: On a lightly floured surface, roll the dough out to just over 30x40cm (about 12×16 inches). Trim the edges from the rolled dough, then cut into 12 even squares about 10cm / 4in square (4 from the long side, 3 from the wide side). For smaller pastries, cut them into 20 pieces rough 8cm square (so cut the dough 5 squares long x 4 squares wide)
- Place the squares of dough onto the baking sheet / trays (6 on each), dot just a touch of water in the centre, then fold each of the corners into the centre. Press the centres down a little to make a dent. Let them rest for 10-15 minutes
- THE FILLING: Wash, dry and cut the strawberries into small pieces and set aside.
- Add the cream cheese, sugar, milk and lemon zest to a medium bowl and beat together until smooth. You can use an electric mixer or just a spatula.
- FILL THE PASTRIES: The following quantities are written for 12 or 20 pastries respectively.
- Place ½ -1 teaspoon of jam into the dent of each pastries, pressing it in slightly.
- Top the jam with 1 - 2 teaspoons of cream cheese mixture, then use a spoon to gently fan out the edges, so that it covers the jam (this just helps to keep the jam in place when they bake).
- Scatter the tops with the fresh strawberry pieces.
- Brush the exposed pastry areas with the egg wash and sprinkle the demerara sugar around the edges.
- Bake for 18-22 minutes (depending on size) or until golden brown, turning the trays after 10 minutes.

- Wash the strawberries and remove the green flowers. Of course, if you use frozen, it is not necessary.
- Put strawberries, water, sugar, and vanilla in a saucepan and bring to a boil while stirring.
- When it boils, turn down to low heat, put the lid on, and cook the pudding for 2-3 minutes.
- Mix a thickening of water and potato starch, and gradually pour it into the boiling pudding until you are satisfied with the consistency.
- Allow the pudding to cool and serve it with milk or cream.

- Combine strawberries, sugar, and nutmeg in a small saucepan over medium heat. Bring mixture to a boil. Reduce heat to medium-low and allow mixture to simmer for 25-35 minutes or until strawberries soften and mixture thickens. Remove from heat and allow to cool.
- Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with a silicone baking mat or parchment paper.
- Place sheets of puff pastry on a lightly floured surface. Cut 6 strips lengthwise per sheet. Take each strip and gently twist. Take each twist and coil it into a spiral. Tuck the end piece under the spiral. Press down the center of the pastry leaving about 1/4 inch all around on the sides. Score the pressed down center with a knife. Poke a few holes in the center with fork or knife. This will keep the center from rising too much. Place on prepared baking sheet.
