GRILLED GREEN CHILI QUESADILLAS

3 fresh chile peppers, such as poblanos -- any variety may be used, according to your tolerance for heat
4 (12-inch) large flour tortillas
3 cups (3/4 pound brick) smoked cheddar (recommended: Cabot brand, shredded)
1 cup store bought salsa verde, available on chip and snack aisle or in Mexican food section
1 cup sour cream
2 tablespoons chopped fresh cilantro leaves

Steps:

  • Heat a grill pan over high heat. Place whole chiles on grill and char all over. about 10 minutes. Remove from heat and split chiles. Scrape away seeds with a spoon and slice.
  • Heat a large nonstick skillet or griddle over medium high heat. Char the tortilla and blister it on 1 side, 20 seconds, then flip tortilla. Cover half of the tortilla with cheese and chilies, then fold over. Press down gently with spatula. Cook quesadilla 15 seconds more on each side, transfer to a cutting board. Repeat. Pile up 2 completed quesadillas at a time and cut into 3 generous wedges. The yield will be 12 pieces from 4 quesadillas. Serve slices on a large platter with small dishes of salsa verde and sour cream for topping. Garnish the platter and toppings with chopped cilantro.

I grew up in Colorado and so I grew up loving green chili! When I moved to North Carolina 4 years ago I was surprised and very disappointed to learn that NO ONE here had ever even heard of green chili. I have spent the last year going through different recipes, I think I have finally got it nailed through a great mix of about 6 of the recipes I tried. Jalapeños may be added to taste if you like the flavor. Chili can be served over any burritos, served as a dip with tortilla chips, or as a main course with warm tortillas. Recipe makes a lot but it freezes well so you can enjoy it for a few months without having to spend too much time cooking.

2 lbs pork roast
4 tablespoons olive oil
7 (14 ounce) cans chicken broth
13 cups water
1 large yellow sweet onion
1 head garlic
3 anaheim chilies
3 medium tomatillos
4 serrano chilies
1 (14 1/2 ounce) can stewed tomatoes, with juice
6 (4 1/2 ounce) chopped green chilies
2 tablespoons ground cumin
1/2 teaspoon oregano
1/2 teaspoon cayenne pepper
1 cup flour

Steps:

  • Sear pork in 2 Tablespoons olive oil. Add 4 cans chicken broth and 6 cups of water, bring to a boil, and simmer until pork falls apart (aprox 3 hours).
  • Meanwhile, chop onion, garlic, and anaheims. Saute in 2 Tablespoons olive oil. Chop tomatillos, serranos, and stewed tomatoes. Puree 2 cans chopped green chilis. Set all aside.
  • When done, sift pork out of juice and shred, then add back.
  • Add all ingredients except flour and 2 cups water, bring to a boil, reduce heat and simmer for at least one hour.
  • In a separate container mix 2 cups water and 1 cup flour, shake well (grandmas rule was 100 shakes). Add mixture to chili slowly to achieve desired thickness.

EASY CHICKEN GREEN CHILI QUESADILLAS

4 large flour tortillas
2 cups shredded monterey jack pepper cheese
4 cups pre cooked chicken breasts, chopped
4 tablespoons diced green chilies (in the can )
2 tablespoons chopped fresh cilantro

Steps:

  • Place the tortillas on a large saute pan.
  • Add 1/2 cup cheese, 1 cup chicken, 1 tbsp green chili and 1/2 tbsp cilantro to each tortilla.
  • Cook over med heat until the cheese is melted, fold the tortilla over, remove from the heat and cut into quarters.
  • Serve.

1 1/2 lbs boneless pork, cut into 1/2-inch cubes
1 tablespoon vegetable oil or 1 tablespoon canola oil
1 (15 ounce) can black beans, rinsed & drained
1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
1 (14 1/2 ounce) can Mexican-style diced tomatoes, undrained
2 (4 ounce) cans chopped green chilies
1 cup quick-cooking brown rice
1 cup chicken broth
3 tablespoons salsa
1 teaspoon ground cumin
1 cup frozen corn, thawed
1 cup shredded Mexican blend cheese

Steps:

  • In a large skillet over medium heat, cook pork in oil until no longer pink; drain.
  • In same skillet with pork, add the beans, soup, tomatoes, chilies, rice, broth, salsa, cumin and corn; cook and stir until bubbly.
  • Pour mixture into an ungreased 2-quart baking dish. Bake, uncovered, at 350 degrees for 30 minutes or until bubbly.
  • Remove from oven and sprinkle with cheese. Let stand a few minutes before serving.

1/4 cup oil
2 lbs pork shoulder, cubed
2 onions, diced
1 (16 ounce) can diced tomatoes
4 anaheim chilies, diced
1 teaspoon mild chili powder
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon garlic powder
salt, as needed
2 cups water

Steps:

  • In a large nonstick frying pan or a dutch oven put the oil and heat over medium-high heat. Add the pork pieces in batches to lightly brown.
  • Return the browned meat to the pan and add everything else.
  • Bring the mixture to a boil, cover, reduce heat and simmmer 60 minutes or until the meat is very tender and the water has evaporated.
  • Serve with flour tortillas and Spanish rice. If tomatoes are in season, you may replace the canned tomatoes with 4 fresh ones.
  • Use leftovers to make burritoes and serve with lettuce, olives, salsa. grated cheese and sour cream.

3 tablespoons plus 8 teaspoons vegetable oil
1 1/3 pounds poblano chilies,* seeded, thinly sliced (about 6 cups)
3 tablespoons (about) water
3 garlic cloves, minced
1/2 cup chopped fresh cilantro
8 9-inch flour tortillas
1 pound Monterey Jack cheese, grated
8 tablespoons purchased fresh tomato salsa

Steps:

  • Heat 3 tablespoons oil in heavy large skillet over medium heat. Add chilies. Cover and cook until chilies are soft, adding water by tablespoonfuls if chilies become too dark, stirring occasionally, about 10 minutes. Uncover. Add garlic; sauté 1 minute. Transfer to medium bowl. Stir in cilantro. Season chili mixture to taste with salt and pepper.
  • Heat 2 teaspoons oil in each of 2 heavy large skillets over medium-high heat. Add 1 tortilla to each skillet. Top each with 1/4 of cheese and 1/4 of chili mixture, then 2 tablespoons salsa. Top each with 1 tortilla. Cook until bottoms are golden brown, about 3 minutes. Turn quesadillas over. Cook until bottoms are golden brown and cheese melts, about 3 minutes. Transfer to cutting board. Cut each quesadilla into 6 wedges. Transfer to platter. Repeat with remaining oil, tortillas, cheese, chili mixture, and salsa. Serve hot.

1/2 cup whole kernel corn

Steps:

  • Combine cheese, chilies,corn and onions in a bowl.
