Hot and Spicy Tofu image

Firm tofu, bell pepper, and red onion, all quickly stir fried in a sweet and sour sauce. A word of caution - this is VERY spicy! If you like milder dishes, decrease the amount of pepper flakes or omit them altogether.

3 tablespoons peanut oil
1 pound firm tofu, cubed
1 red onion, sliced
1 red bell pepper, sliced
1 green chile pepper, chopped
3 cloves garlic, crushed
⅓ cup hot water
3 tablespoons white vinegar
3 tablespoons soy sauce
1 tablespoon brown sugar
1 teaspoon cornstarch
1 teaspoon crushed red pepper flakes

Steps:

  • Heat peanut oil in a wok or large frying pan over medium-high heat. Toss the tofu into the oil, and cook until browned on all sides. Once browned, toss in onion, bell pepper, chile pepper, and garlic; cook until just tender, about 5 minutes.
  • In a small bowl, whisk together the hot water, vinegar, soy sauce, brown sugar, cornstarch, and red pepper flakes. Pour over tofu and vegetables, toss to coat, and simmer 3 to 5 minutes, or until sauce thickens slightly.

Be sure to use extra firm tofu and press out as much of the water as you can. To prevent sticking, give the tofu slices and the grill rack a generous coat of nonstick cooking spray. Cooking time includes marinading the tofu for 4 hours. This is from VT May/June 2006.

1 lb extra firm tofu, drained and cut lengthwise into 8 slices
1/2 cup fresh lime juice
1/2 cup maple syrup
1/4 cup low-sodium tamari or 1/4 cup soy sauce
2 teaspoons chili paste with garlic
3 garlic cloves, minced (about 1 tablespoon)
1/4 teaspoon fresh ground black pepper

Steps:

  • Place the tofu slices on several layers of paper towels and cover with additional paper towels. Let stand 20 minutes, pressing down occasionally with your hands to squeeze out the water.
  • Place the tofu in a single layer in the bottom of a 13x9 glass baking dish.
  • In a small bowl, whisk together the lime juice, maple syrup, tamari, chile paste, garlic, and pepper.
  • Pour mixture over the tofu, stirring to coat all the slices.
  • Cover the baking dish with plastic wrap and place in the refrigerator for at least 4 hours or overnight.
  • When the tofu is marinated and ready to cook: Spray grill rack or pan with nonstick cooking spray. Heat grill or grill pan to medium heat.
  • Place tofu slices on the grill. Reserve the marinade.
  • Grill tofu 3 or 4 minutes on each side, or until the outside is browned and crisp.
  • Return tofu to the baking dish and toss the slices with the reserved marinade.
  • Serve immediately.

2 tablespoons vegetable oil (more or less)
1/2 cup chopped red onion
8 garlic cloves, minced
2 jalapeno peppers, seeded and chopped
6 cups low sodium vegetable broth
1/4 cup soy sauce
2 tablespoons lime juice
1 tablespoon hot mung bean paste or 1 tablespoon hot sauce
1/2 tablespoon szechwan chili sauce or 1/2 tablespoon any hot sauce
1 tablespoon lemon-pepper seasoning
1 teaspoon powdered ginger
5 white mushrooms, sliced
3 ripe plum tomatoes, peeled and chopped coarsely
wakame seaweed (dried seaweed) (optional)
ramen noodles (optional)

Steps:

  • Press the water out of the tofu.
  • Wrap the tofu in plastic wrap, and put the tofu in the freezer overnight.
  • Remove the tofu from the refrigerator and let thaw in hot water.
  • Cut tofu into small 1/2-inch square cubes.
  • In a large soup pot, heat up the oil; add tofu and stir around until tofu is brown on the edges (10 minutes). Add onion, garlic and 1/2 cup of stock. Stir until vegetables are soft - about 10 minutes).
  • Add remaining ingredients and simmer on low for 30 minutes.
  • Add cooked noodles prior to serving.

200 g firm tofu, cubed
300 g ground beef
4 scallions, chopped,green and white separated
1 tablespoon onion, minced (i used small red ones)
1 tablespoon garlic, minced
1 tablespoon ginger, minced
1 tablespoon soy sauce
1/4 cup chinese rice wine or 1/4 cup sherry wine
1 tablespoon chili sauce (or ketchup)
1 teaspoon sugar
1 tablespoon oyster sauce
3/4 teaspoon salt
1 teaspoon black pepper
5 small dried chilies
1 teaspoon cornstarch, dissolved in
1 tablespoon water
chili flakes, to taste
1 tablespoon olive oil

Steps:

  • Combine soy sauce, sherry, chilli sauce, sugar and oyster sauce; stir. Marinate tofu cubes in the sauce ingredients for 15mins or more.
  • Sprinkle ground beef with salt and pepper.
  • Heat oil in wok, stir fry onions, garlic and ginger until fragrant. Add dried chilli and scallion bottoms, stir fry for 1 minute.
  • Add seasoned ground beef and continue to stir fry until browned.
  • Add tofu and sauce, combine well. Let simmer 1-2mins.
  • Add chilli flakes, if you like it really spicy!
  • Add cornstarch mixture, stir fry until sauce thicken.
  • Garnish with chopped scallion greens, and serve with jasmine rice.

1 teaspoon hoisin sauce

1/4 cup white wine, sherry, or rice wine
1 teaspoon honey
1/4 teaspoon Asian chili sauce or chili oil
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh basil
6 to 8 ounces extra-firm tofu, drained, pressed, and cut into 1 x 1/2-inch slices (see page 168)
1 cup sushi rice
2 carrots, sliced into coins
1/4 head cauliflower, cut into bite-size florets (about 2 cups)
1/2 red bell pepper, cored, seeded, and sliced
2 cups snow peas

Steps:

  • Preheat the oven to 450°F.
  • Wipe the inside and lid of a cast-iron Dutch oven with peanut oil.
  • In a medium bowl, mix the garlic, ginger, lime juice, hoisin sauce, soy sauce, wine, honey, chili sauce, parsley, and basil.
  • Add the tofu cubes to the marinade. Stir to coat well and set aside.
  • Rinse the rice in a strainer under cold water until the water runs clear. Tip the rice into the pot, add 1 cup water, and stir to make an even layer. Add the carrots and cauliflower in a layer.
  • Layer the tofu in the pot, leaving some marinade in the bowl. Add the bell pepper and snow peas and pour the remaining marinade on top.
  • Cover and bake for 45 minutes, or until 3 minutes after the aroma of a fully cooked meal escapes the oven. Serve immediately.

1 tablespoon sesame oil
1 onion, chopped

Steps:

  • Drain tofu, rinse, and pat dry. Cut into squares.

1 (14-to 18-ounces) package soft tofu (not silken)
1 teaspoon chopped garlic
1/4 cup chopped scallion
2 teaspoons sesame seeds, toasted and crushed with side of a heavy knife
3 tablespoons soy sauce
1 tablespoon Asian sesame oil
1 teaspoon coarse Korean hot red-pepper flakes
1/2 teaspoon sugar

Steps:

  • Carefully rinse tofu, then cover with cold water in a medium saucepan. Bring to a simmer over medium-high heat, then keep warm, covered, over very low heat.
  • Meanwhile, mince and mash garlic to a paste with a pinch of salt. Stir together with remaining ingredients (except tofu).
  • Just before serving, carefully lift tofu from saucepan with a large spatula and drain on paper towels. Gently pat dry, then transfer to a small plate. Spoon some sauce over tofu and serve warm. Serve remaining sauce on the side.
