Crema is thinner than sour cream, a little more tangy and slightly salty. You can sometimes find it in stores, but it's very simple to make at home by combining sour cream with heavy cream and lime juice (you could use buttermilk instead) and allowing it to set up at room temperature for a few hours, until it turns into a kind of liquid velvet. It's marvelous with fish tacos, as a dressing for hot slaw, or drizzled over roasted carrots or sweet potatoes. Once you start using it, you will use it all the time.

16 oz sour cream
2 big limes, about 2 1/4″ diameter
1/2 tsp granulated garlic
1/2 tsp salt

Steps:

  • Empty sour cream into a small bowl and set aside.
  • Roll the limes on the counter for about a minute each to loosen up the juices.
  • Zest both limes, ensuring you are ONLY getting the green part of the peel and not the white part.
  • Cut the limes through the middle (horizontal) and using a juicer, get all the juice out.
  • Add all the zest, juice, granulated garlic and salt to the sour cream and whisk well to combine. Place in the refrigerator until it's time to serve. Note that letting the lime crema sit for at least 4 hours helps the flavors to meld together better, but you can enjoy it right away too.
  • Store leftover lime crema in the original sour cream container and label it!

One 14-ounce can sweetened condensed milk
2 tablespoons sugar, plus more if needed
2 teaspoons pure vanilla extract
1/2 teaspoon ground cinnamon, plus more for sprinkling, optional

Steps:

  • Place seven 8-ounce plastic cups on a tray small enough to fit into your freezer.
  • Combine the evaporated milk, condensed milk, sugar, vanilla, cinnamon and 2 cups water in a blender and blend until homogeneous. Taste the mixture for sweetness and adjust to taste; you may want to add up to an extra tablespoon of sugar.
  • Pour the mixture into the prepared plastic cups, filling them to about 1/4 inch from the brim. Sprinkle each cup with a bit of ground cinnamon, if desired. Freeze until fully frozen, at least 8 hours. The limbers will keep in the freezer for up to a month.
