200 g pork belly (Chicken or Beef are top choices over pork )
50 g Red chili paste
50 g Curry powder
10 g Fish sauce
2 g coriander
1 g coconut oil
12 ml coconut milk (Aroy-D or similar)

Steps:

  • At least 40 minutes before serving:Chop the pork then the coriander. Next, in a saucepan or wok, heat coconut oil over medium heat. Once the oil starts to heat up, put the red Thai chili paste in. Mix these together in the saute pan then add your meat of choice.
  • Sprinkle in the curry powder in, cook for a couple minutes, then add the fish sauce immediately followed by all the coconut milk. Bring to a simmer and stir occasionally over medium heat for the next 20 minutes until finished
  • Over medium heat, place coconut oil in a pan and heat your noodles until crispy. Discard of the oil and sprinkle crispy yellow noodles on top of the Khao Soi.
  • Khao Soi is always served with a side plate consisting of a little mound of fermented vegetables or sour pickled salad, chopped shallots and a couple lime wedges. Sometimes it is served with roasted red chilis
  • Sprinkle the deep fried yellow flat wheat egg noodles on top and serve with its side plate.

2 cups chicken broth (no sodium preferred)
14 oz coconut milk (1 can)
1-2 tbsp Thai red curry paste
1/2 inch ginger (thinly sliced)
2 cloves garlic (crushed)
1 large chicken breast (or 2 small ones)
1 tbsp fish sauce (or to taste)
1 tbsp sugar (or to taste, brown sugar preferred)
2 portions egg noodles (or ramen noodles)
1/2 shallot (sliced)
2 lime wedges
1/4 cup cilantro (chopped)
1 batch egg ribbons
1/2 cup crispy wonton strips

Steps:

  • In the Instant Pot insert, add the chicken stock, coconut milk, red curry paste, garlic, ginger, and chicken breast. Cook on high pressure for 5 minutes.
  • While the Instant Pot is doing it's thing, slice the shallots, cut the lime, and wash the cilantro. If you're using any extra toppings, prep them now. Cook and drain your noodles and divide them between two deep bowls.
  • When the Instant Pot is done, quick release the pressure. Carefully remove the chicken and shred. Add the chicken to the bowls with the noodles.
  • Stir the fish sauce and brown sugar into the soup. Taste the soup and adjust the seasoning with fish sauce, sugar, and curry paste if needed, then divide evenly between the two bowls. Finish with lime and cilantro and enjoy!

4 ounces dry rice noodles
1 tablespoon coconut, peanut or olive oil
1 large shallot finely diced ( or sub half an onion)
2 tablespoons chopped lemongrass
2 garlic cloves, rough chopped
2 tablespoons Thai Red Curry Paste (store-bought, I like this brand), more for spicier
1/2 teaspoon turmeric - optional
pinch cardamom- optional
14-ounce can coconut milk
1 cup chicken broth (or use water and one chicken bouillon cube)
4-6 kefir lime leaves (optional, but delicious!)
1 thinly sliced red bell pepper (optional- sub other veggies)
2 tablespoons fish sauce- or vegan fish sauce
2 tablespoons soy sauce ( perhaps reduce if using vegan fish sauce, or use to taste)
2 tablespoons brown sugar, palm sugar or an alternative substitute
1 tablespoon chili garlic sauce (Sambal Olek)
8-12 ounces protein: raw, peeled prawns, or crispy tofu, or raw, thinly sliced chicken- or leftover baked chicken or rotisserie chicken)
1 lime

Steps:

  • Start a pot of boiling water, to cook the rice noodles and make sure to follow your package directions, as rice noodles can differ. Drain and rinse with water to help prevent them from sticking together. A little oil to coat, will help here, or if you time it right, you can add it directly to the soup.
  • While water is boiling, prep the shallot, garlic, lemongrass, red bell pepper, then get all other ingredients ready by the stove.
  • In a medium pot, heat oil over medium heat. Add shallot and lemongrass. Saute until fragrant and golden, about 3 minutes. Add garlic, saute 1-2 minutes. Add red curry paste, turmeric, and a pinch of cardamom. Saute for 1-2 minutes.
  • Add the coconut milk , chicken broth and kefir lime leaves and bring to a simmer, stirring. Once gently simmering add the bell pepper, fish sauce, sugar, soy sauce and chili garlic paste.
  • Add the prawns (or chicken or crispy tofu) and gently simmer until cooked. Give a generous squeeze of lime. Taste, adding more lime/salt/ red curry paste if necessary.
  • Drain the noodles. If serving all of the soup immediately, toss the noodles right into the pot and then serve. Alternatively, divide noodles into the bowls and ladle the flavorful soup over top- a bit easier to handle.
  • Garnish with fresh basil, pickled mustard greens, crispy noodles, bean sprouts, thinly sliced red onion, lime wedge, or chopped scallions.

This is an easy recipe for Khao Soi - a Northern Thai Coconut Curry Soup with Egg Noodles and Chicken. It is an amazingly balanced dish with spicy, sweet, creamy, and crispy elements.

125 g (4.4 oz) dry (whole wheat) egg noodles like Linguine, Fettuccine or Tagliatelle ((or 250g/8.8 oz. fresh Wonton noodles))
1/3 - 1/2 cup oil
2 tablespoons yellow curry paste
1 cup coconut milk
1-1/2 cups chicken broth or water
2 tablespoons palm sugar
2 chicken drum sticks or thighs (preferably skin on)
1-2 tablespoons fish sauce
sliced shallots
lime wedges
chili oil
pickled mustard greens
cilantro + green onions

Steps:

  • If using dried noodles: soak 1/4 of the noodles in hot water until they just begin to soften. Then drain.
  • Heat the oil in a wok or frying pan and cook the softened noodles (or 1/4 of the fresh Wonton noodles) until crispy. Remove and set on paper towel to absorb excess oil.
  • Keep 1 tablespoon of the oil in the wok/pan. Add the curry paste and 2 tablespoons of coconut cream from the top of the coconut milk. Stir fry until fragrant. (If you want to continue cooking in a soup pot, you can deglaze the wok/pan with some broth, transfer to a pot and continue with step 4.)
  • Add the remaining coconut milk, broth and palm sugar. Stir to combine and add the chicken pieces. Bring the curry soup to a boil, then turn heat to low and simmer until the meat is soft and tender (30-45 minutes).
  • In the meantime, cook the remaining noodles in boiling water (4-5 minutes for dried/1 minutes for fresh noodles). They should still have some 'bite'. Then divide the noodles into serving bowls.
  • Once the chicken is tender, stir the fish sauce into the soup. Taste and adjust flavor with palm sugar for sweetness or more fish sauce for saltiness.
  • Place the chicken with the cooked egg noodles and pour over the coconut curry soup broth.
  • Top each bowl with some crispy noodles. Serve with sliced shallots, lime wedges, chili oil for more heat, pickled mustard greens, cilantro and sliced green onion.

In Northern Thailand, kao soi is a meal for one, served up in an enormous bowl and garnished with a playful tangle of crunchy egg noodles fried crisp for a contrast in texture to the tender noodles and smooth, sunny-colored sauce. The standard condiments include Chinese-style ground chilies in oil, chopped pickled cabbage and wedges of lime. *** To make crispy noodle nests, you'll need about ½ lb thin fresh egg noodles. Heat about 2 cups vegetable oil in a wok or small, deep skillet to about 375 F. Carefully add a handful of noodles, let it sizzle and brown a few seconds, turn gently with tongs, and transfer the "nest" to a platter to cool. 1 tablespoon finely chopped garlic
2 tablespoons red curry paste or 2 tablespoons panang curry paste
3/4 lb boneless beef such as tri-tip steak or 3/4 lb flank steak, thinly sliced crosswise into 2-inch strips
2 cups unsweetened coconut milk
1 3/4 cups chicken broth
2 teaspoons ground turmeric or 2 teaspoons curry powder
2 teaspoons dark soy sauce or 2 tablespoons soy sauce
1 teaspoon sugar
1 teaspoon salt
2 tablespoons freshly squeezed lime juice
1/2 lb angel hair pasta or 1/2 lb spaghetti
1/3 cup coarsely chopped shallot
1/3 cup coarsely chopped fresh cilantro
1/3 cup thinly sliced green onion

Steps:

  • Heat the vegetable oil in a medium saucepan over medium heat, and then add the garlic. Toss well and add the red curry paste, mashing and stirring to soften it in the oil, about 1 minute. Add the chicken and cook 1 to 2 minutes, tossing now and then to brown it evenly and mix it with the curry paste.
  • Add the coconut milk, chicken broth, turmeric, soy sauce, sugar and salt and stir well. Bring to a gentle boil and adjust heat to maintain a lively simmer. Cook about 10 minutes until meat is cooked through.
  • Stir in lime juice, remove from heat and cover to keep curry warm while you prepare the noodles.
  • Cook the noodles in a large pot of rapidly boiling water until tender but still firm, as little as 2 minutes for fresh noodles and 7 minutes or more for dried. Drain, rinse well in cold water, drain again and divide the noodles among individual serving bowls. Ladle on hot curry, and sprinkle each serving with the shallots, cilantro and green onions. Serve hot and garnish with crunchy noodle nests as noted in description if using.
