A delicious Chinese style braised pork ribs that only take fifteen minutes to prepare.

1 stick of meaty spare rib, about 600g
4 g cornflour, mix with 1 tablespoon of water
Scallion to garnish
30 ml vegetable oil
15 g ginger, cut into slices
15 g chopped garlic, whole clove
2 stalks of scallion, about 15g
1 star anise, (about 7 star-point)
1 stick cinnamon, about 5 cm length
2 tablespoons fermented soybean paste
2 tablespoons light soy sauce
4 teaspoons oyster sauce
2 teaspoons sugar
1 teaspoon sesame oil
4 tablespoons Shaoxing wine
1500 ml water

Steps:

  • Place the pork rib in a large skillet with boiling water, which is sufficient to cover the entire pork rib.
  • Blanch for 5 minutes. Remove the pork rib and discard the water.
  • Heat up the vegetable oil in a wok or saucepan, saute the ingredients in B until aromatic.
  • Add ingredients C. Bring it to a boil.
  • Place the spare rib in the boiling liquid. Reduce the heat and braise for 3 hours.
  • Turn over the spare rib occasionally.
  • After 3 hours, add the cornflour and water in INgredients A to thicken the braised liquid.
  • Remove the spare ribs and place it on a serving plate.
  • Pour the thickened sauce over the spare rib.
  • Garnish with scallion.

These are the best oven-roasted ribs ever, and they can also be finished on a grill for extra smoky flavor. Creating steam in the oven is the key to tender meat. The ingredients here are close to the ones used by traditional Cantonese barbecue masters to produce sticky-salty-sweet meat that has a reddish, caramelized crust - with ketchup standing in for Chinese red fermented tofu. (It can be left out if desired.) Although these ribs are presented as an appetizer in many American Chinese restaurants, barbecued meat is traditionally a main course, served with freshly cooked rice and a green side like smashed cucumber salad or stir-fried bok choy.

3 cloves garlic, smashed and peeled
4 scallions, white and pale green parts only, plus additional sliced scallion for garnish
3/4 cup hoisin sauce
1/2 cup ketchup, or 4 tablespoons tomato paste or Chinese red bean paste (nan ru)
1/4 cup honey or light corn syrup, more to taste
1/4 cup soy sauce, more to taste
1/3 cup Chinese rice wine or vodka
1/4 cup rice vinegar or cider vinegar
1/2 teaspoon five-spice powder
2 racks baby back or St. Louis-style pork spareribs, 5 to 10 pounds total (see note)
Cilantro leaves, for garnish

Steps:

  • In a food processor or blender, mince garlic and scallions. Add hoisin, ketchup, honey, soy sauce, rice wine or vodka, rice vinegar and five-spice powder. Process until well blended. Taste for sweetness; the mixture should be sweet like barbecue sauce, not candy. Adjust the taste with honey, soy sauce and vinegar.
  • Set aside 1/3 cup marinade for basting. Transfer remaining marinade to a container or pan large enough to hold the ribs, or to large resealable plastic bags. Add ribs and turn until well coated. Refrigerate at least 4 hours, and up to 2 days, turning occasionally in the marinade.
  • Heat oven to 300 degrees. Set up a rimmed baking sheet (or two) with an oven-safe wire rack that fits inside, the kind you'd use for cooling cookies. Line the bottoms of the pans with foil or nonstick baking mats. Place the racks inside the pans and place the empty pans on the bottom rack of the oven. Pour in hot water until it comes about halfway up the sides of the pan. (Do not skip the water: The steam helps cook the meat to the right tenderness.)
  • When the oven is hot, remove the ribs from the marinade and place on the racks, meaty side up. Bake without basting, 1 hour for baby back ribs, 2 hours for St. Louis style ribs. Check the water level occasionally to make sure it hasn't cooked off.
  • Remove ribs from the oven and raise the oven temperature to 450 degrees. Pour off any water from the baking sheet and return the ribs to the racks. (Alternatively, you can finish the ribs on a medium-hot grill; see below.)
  • Return ribs to the oven and roast (or grill), basting 2 or 3 times with reserved marinade, for 20 to 30 minutes (less time for baby backs, more for spareribs). Watch the ribs carefully to make sure that the edges don't burn, and don't baste them too close to the end; they should be dry and sticky, not wet on the surface.
  • Use a big knife to cut between the bones, making sure that each rib has meat on both sides. Mound on a platter, sprinkle with scallions and cilantro, and serve immediately.

After searching the internet for a good Chinese Spareribs recipe and not finding any that caught my eye, I decided to make my own. This recipe is pretty simple, and yields tender, juicy, tangy ribs. In Japan, I cooked this in the fish broiler, but it should be fine on the grill or in the oven.

3 tablespoons hoisin sauce
1 tablespoon ketchup
1 tablespoon honey
1 tablespoon soy sauce

Steps:

  • In a shallow glass dish, mix together the hoisin sauce, ketchup, honey, soy sauce, sake, rice vinegar, lemon juice, ginger, garlic and five-spice powder. Place the ribs in the dish, and turn to coat. Cover and marinate in the refrigerator for 2 hours, or as long as overnight.
  • Preheat the oven to 325 degrees F (165 degrees C). Fill a broiler tray with enough water to cover the bottom. Place the grate or rack over the tray. Arrange the ribs on the grate.
  • Place the broiler rack in the center of the oven. Cook for 40 minutes, turning and brushing with the marinade every 10 minutes. Let the marinade cook on for the final 10 minutes to make a glaze. Finish under the broiler if desired. Discard any remaining marinade.

750g/1½lb pork spareribs
600ml/1 pint groundnut (peanut) oil
1 tbsp Shaoxing rice wine or dry sherry
1 tbsp light soy sauce
1 tbsp Chinese black rice vinegar or cider vinegar
2 tsp sesame oil
1 tbsp cornflour
2 tbsp finely chopped garlic
2 tsp five-spice powder
3 tbsp finely chopped spring onions
3 tbsp Chinese rock sugar or granulated sugar
3 tbsp Shaoxing rice wine or dry sherry
150ml/5fl oz chicken stock
1½ tbsp light soy sauce
2 tbsp dried grated orange peel
85ml/3fl oz Chinese black rice vinegar or cider vinegar

Steps:

  • Have your butcher separate the spareribs into individual ribs and then into chunks which are approximately 7.5cm/3in long. Alternatively do this yourself using a heavy sharp cleaver that can cut through the bones.
  • Mix the marinade ingredients together in a bowl and steep the spareribs in the marinade for about 25 minutes at room temperature. Remove the spareribs from the marinade with a slotted spoon.
  • Heat the oil in a deep-fat fryer or large wok. When the oil is very hot and slightly smoking, slowly brown the marinated spareribs in several batches until they are brown. Drain each cooked batch on kitchen paper. (Leave the cooking oil to cool. Strain it through a filter if you want to re-use it when cooking pork.)
  • Put the sauce ingredients into a clean wok or frying pan.
  • Bring the sauce to the boil and then reduce the heat. Add the spareribs, cover and simmer gently for about 40 minutes, stirring occasionally.
  • If necessary, add a little water to the sauce to prevent the spareribs from drying up. Skim off any surface fat, turn onto a warm serving plate and serve at once.

CHINESE SPARE RIBS (SLOW COOKER)

Cooking these Chinese spare ribs in the slow cooker makes them easy, without heating up the house, and still tender and packed with flavor.

1.2 lb St Louis style pork ribs (approx (545g) - 1/2 a rack (can also use other cuts, these are just probably best suited))
2 tbsp hoisin sauce
2 tbsp honey
1 tbsp soy sauce
1 tbsp rice wine
1 tsp Chinese five spice powder
1/2 tsp ginger (grated/minced)
1/2 tsp garlic (grated/minced)

Steps:

  • Cut the ribs between the bones to give individual ribs. Put the in a single layer in the bottom of the slow cooker.
  • Mix together the hoisin sauce, honey, soy sauce, rice wine, Chinese five spice, ginger and garlic. Pour on top of the ribs and turn them over a little to coat. You should have a thin layer of sauce over the top and a slight 'puddle' around the ribs (see photo above). Put the lid on and cook on low for 6-7 hours.
  • After they are cooked and tender, but not falling off the bones too much, carefully remove the ribs from the slow cooker and place on a foil-lined baking sheet/tray. Pour the sauce into a small pan and simmer for a few minutes to reduce slightly. Pour a little over the ribs and put under the broiler/grill for a couple minutes to caramelize. Serve with some more of the sauce on the side, if you like.

12 meaty pork ribs
100ml hoisin sauce
2 tbsp soy sauce
1 tbsp clear honey
1 tbsp vinegar (you can use cider, malt or wine)
1 tsp Chinese five-spice powder

Steps:

  • Put the ribs in a large pan and cover with water. Bring to the boil and simmer for 15 mins. Meanwhile, pour the hoisin sauce in a jug and stir in the soy sauce, honey, vinegar and five-spice.
  • Drain the ribs very well, then brush with the glaze - if barbecuing, chill, cover and keep in the fridge for later.
  • Heat the grill to high, if using. Grill or barbecue for 15-20 mins, turning from time to time until shiny and slightly charred in places. Serve hot.

1/2 cup hoisin sauce
1/4 cup soy sauce
3 tablespoons dark brown sugar
2 tablespoons honey, plus a bit extra to finish
1 tablespoon five-spice powder
1 teaspoon granulated garlic
1 teaspoon grated fresh ginger
1 teaspoon red food coloring
2 racks spare ribs (8 to 10 pounds, St. Louis-style work best), individually sliced into single ribs

Steps:

  • Mix together the hoisin sauce, soy sauce, brown sugar, honey, five-spice powder, garlic, ginger and food coloring in a metal, non-reactive bowl. Pour the marinade into a large zip-top bag, reserving 1/2 cup on the side for basting later. Add the ribs to the bag and marinate, refrigerated, for at least 3 hours, though longer is better and overnight is ideal.
  • Heat a charcoal or gas grill to 275 degrees F for direct and indirect grilling.
  • Remove the ribs from the marinade (discard the marinade) and place onto a wire rack. Place the rack directly on the cooler side of the grill. Cook until the meat is very tender, basting with the reserved marinade 3 times during the cooking process, 2 to 3 hours.
  • Drizzle the ribs with honey, move them to the direct heat side and quickly char each rib to caramelize.

I adopted this recipe after Mean Chef left the site. The recipe is from Fine Cooking Magazine. My comments from my first reviews were, "I prepared these for my Christmas Open House appetizer buffet. I used baby back ribs and rubbed liberally with the spice rub. They smelled heavenly while baking, and had a great flavor even before I added the sauce. Everyone raved, and they were the first item to disappear from the buffet." I have since made these for many, many parties and everyone always loves them. I use baby back ribs, and 2 racks are never enough. Cooking time for baby back ribs is about 3 hours.

2 tablespoons ground coriander
2 tablespoons hot chili powder
2 tablespoons dark brown sugar
1 tablespoon five-spice powder

2 full 13-rib st. louis-cut pork spare rib racks (about 3 pounds each, ask the butcher to remove the breastbone and adjacent strip of fatty joints)

Steps:

  • Note: Yields 1/2 cup spice rub and about 2/3 cup sauce.
  • Make the spice rub: In a small bowl, stir together all the ingredients.
  • Cook the ribs: Position a rack in the center of the oven and heat the oven to 300°F Sprinkle and press 1/4 cup of the rub on both sides of each rib rack.
  • Put the racks, meaty side up, on a broiling pan or a wire roasting rack set over a baking sheet.
  • Lightly season the ribs with salt and put them in the oven.
  • After the first hour, rotate the pan every 30 minutes (If you use two baking sheets, switch their position in the oven, too.) The ribs will sizzle gently as they cook, and they'll become tender after about 2 - 3 hours in the oven.
  • To test for doneness, pick up the center of the ribs with tongs; the ends of the ribs should flop downward (this means the fat and cartilage have broken down), and a skewer inserted between the ribs should meet little resistance.
  • If the meat between the ribs is still tough, keep cooking, checking every 15 minutes and rotating the pan.
  • Meanwhile, make the dipping sauce: In a medium saucepan over medium heat, bring the soy sauce, sugar, rice vinegar, ginger, and sesame oil to a simmer, stirring occasionally.
  • Remove from the heat and let cool to room temperature.
  • The sauce will keep for about a week in the refrigerator.
  • Cut and serve: When the ribs are done, remove them from the oven, put them on a cutting board meaty side down (so they're easier to slice), and slice them into individual ribs.
  • Arrange on a platter and serve with the sauce on the side.
  • Or, stack the ribs, drizzle with some of the dipping sauce (serve the rest on the side), and garnish with the sliced scallions.

1 teaspoon toasted sesame oil
2 tablespoons soy sauce
2 tablespoons mirin (or dry sherry)
1/2 teaspoon five spice powder
2 tablespoons chopped garlic
2 tablespoons honey
2 tablespoons ketchup
2 pounds pork spare ribs

Steps:

  • In a medium sized bowl combine Hoisin sauce, sesame oil, soy sauce, rice cooking wine, five spice powder, chopped garlic, honey, and ketchup.
  • Stir until the sauce if fully blended.
  • Pour over pork spare ribs and marinate for at least 1 hour. These taste better if you can allow them to marinate a little longer.
  • Place ribs on a wire rack on a foil lined baking sheet. Try to place the ribs fat side up. Discard any leftover marinade.
  • Bake at 375 for about 40 to 50 minutes.

800 g ribs
black pepper
1 tbsp. toasted white sesame seeds for garnishing
2 cloves garlic (finely chopped)
1 tsp. cumin powder + 1 tsp. Chinese five spice powder as a dry dip mix (optional)
2 tbsp. hoisin sauce
2 tbsp. light soy sauce
1 tbsp. oyster sauce
1 tbsp. Chinese cooking wine or rose wine
1 tbsp. honey
1/4 tsp. Chinese five spice powder
1 thumb ginger (sliced)
1 tbsp. honey
1/2 tbsp. previous marinating sauce
1/2 tbsp. hot water

Steps:

  • Pre-soak the ribs with clean water for 30 minutes. During the process, the clean water turns slightly pink or red. Change the water once after the first 10 minutes. Then drain completely.
  • Whisk all of the marinating sauce in a bowl. Pour the marinating sauce to the ribs. Set aside for at least 4 hours or overnight in fridge.
  • Get a lined baking sheet, place only the ribs in. Wrap the ribs with foil paper. Pre-heat oven to 180 degree C.
  • Place the baking sheet in the middle rack and roast for 40 minutes (depending how soft you want the ribs to be). Take the upper foil off and then brush the honey water. Rise the oven temperature to 200 degree C. Continue roasting for around 10 minutes until well colored.

1 tablespoon canned pineapple ((minced))
1 star anise ((ground in a mortar and pestle))
1 tablespoon salt
5 tablespoons sugar
2 tablespoons honey
2 tablespoons peanut oil
2 tablespoons hoisin sauce
1 teaspoon ground bean sauce
2 tablespoons tomato puree ((or 1 tablespoon tomato paste mixed with 1 tablespoon water))
5 tablespoons ketchup
½ tablespoon five spice powder
2 tablespoons fresh squeezed orange juice
1 teaspoon pepper
½ tablespoon paprika
2-3 racks baby back ribs

Steps:

  • Stir together all the ingredients from the garlic to the paprika to make the BBQ sauce. In a zip-loc bag, add the ribs and half the sauce. Either marinate them overnight, or for 4-6 hours with a little extra sauce. Store the leftover sauce for later use.
  • Preheat your oven to 325 degrees. Prepare a roasting pan lined with heavy duty foil for easy clean-up. Add about 2 cups of water to the pan so there is about a half inch of water. Place a roasting rack on top of the pan and place your spare ribs on the rack (rib side up) and place in your preheated oven.
  • Roast for 30 minutes. Flip the racks over and roast for another 45-60 minutes. Add water to the roasting pan as the water dries up during the roasting process. If you like, you can finish them with a couple minutes under the broiler.

Easy Chinese steamed pork spare ribs with garlic and chilli image

A home-style Chinese dish that's easy to make, this is delicious served with steamed rice and stir-fried green vegetables.

600g (21oz) pork spare ribs, cut through the bone into 2cm (⅞ inch) pieces
20ml (4tsp) light soy sauce
20ml (4tsp) sake or Chinese rice wine (or substitute dry sherry)
½tsp fine sea salt
1tsp granulated sugar
1½tsp cornstarch
10ml (2tsp) cooking oil
3-4 garlic cloves, peeled
1 red banana chilli, or another type of long, mild chilli
2-3 red bird's-eye chillies, or another type of small, hot chilli, such as serrano
2-3 spring onions

Steps:

  • Rinse the pork ribs and drain them well. Put them in a bowl and add the soy sauce, rice wine, salt, sugar, cornstarch and oil, then mix thoroughly. Leave at room temperature while preparing the other ingredients.
  • Mince the garlic. Slice the banana chilli on the diagonal into 3mm (⅛in) pieces. Cut the bird's-eye chilli in half lengthwise and scrape out and discard the seeds. Slice the chillies into 3mm (⅛in) pieces. Mix the garlic and both types of chillies with the pork. Spread the ingredients in a shallow heat-proof serving dish.
  • Place a metal rack with low feet in the bottom of a wok and add water to the depth of about 4cm (1½in). Heat over a high flame until the water boils. Place the dish of pork on the rack, cover with the lid and steam over a medium-high flame for 20 to 30 minutes.
  • While the pork is cooking, mince the spring onions. When the pork is fully cooked, sprinkle the spring onions on top and serve with steamed white rice.

This recipe for Chinese roasted spareribs with hoisin sauce is the perfect dish to share with friends and family.

2 racks spare ribs (8 to 10 pounds)
3 tablespoons soy sauce
3 tablespoons hoisin sauce
3 tablespoons ketchup
2 tablespoons Chinese rice wine or dry sherry
1 tablespoon brown sugar
2 garlic cloves (finely chopped)
2 tablespoons honey
1/4 cup water

Steps:

  • Gather the ingredients.
  • Cut the spareribs apart into individual ribs, and place them in a shallow glass baking dish.
  • In a medium-sized bowl, combine the soy sauce , hoisin sauce , ketchup, rice wine or sherry, brown sugar, and chopped garlic. Pour the mixture over the spareribs.
  • Cover and marinate overnight in the refrigerator, turning occasionally to make sure the ribs are thoroughly coated.
  • Preheat the oven to 350 F/177 C. Fill a shallow roasting pan with 1/2-inch of water and place in the bottom of the oven. Place the pork on a rack above the water. Meanwhile, in a small pot, bring water to a boil and dissolve the honey. Brush the spareribs several times with the honey and water mixture during roasting.
  • Roast the pork for 30 minutes, or until the ribs just begin shrinking and the internal temperature reaches 160 F/71 C. Remove, let the ribs rest for 15 minutes, and serve.

This was my Mother's recipe and occasionally she would make them when I was a kid. Very basic but reminds me of a Chinese restaurants. Prep time does not include marinating time.

2 cups boiling water
2 beef bouillon cubes
4 cloves garlic
1 teaspoon salt
4 tablespoons honey
6 tablespoons soy sauce
1 tablespoon red food coloring (optional)

Steps:

  • Mix all ingredients together.
  • Add ribs and marinate 24 hours.
  • Bake at 350 degrees for 45 minutes (check for doneness).
  • Serve with white rice.
