CHICKEN HONEY NUT STIR FRY

- Heat 1 teaspoon of the oil in a wok over high heat. Add the carrots and celery and stir fry for 3 minutes. Add remaining 1 teaspoon oil, then add the chicken and stir fry for 5 more minutes.
- In a small bowl, dissolve the cornstarch into the orange juice. Mix in the soy sauce, honey and ginger. Add this sauce to the wok and cook over medium heat until thickened. Top with the cashews and green onions.

HONEY NUT CHICKEN STICKS

- Preheat oven to 400 degrees F.
- Season chicken tenders with salt and pepper. Place flour in a large shallow dish. Coat chicken in flour. Beat eggs and milk in a shallow dish. Combine cereal, bread crumbs, paprika, poultry seasoning, grill seasoning and vegetable oil in food processor. Transfer breading to a shallow dish. Place a nonstick baking sheet near chicken breading station. In batches, take flour coated chicken and coat in eggs then in breading and place on nonstick cookie sheet. When all the chicken has been coated, transfer to oven and bake 15 minutes, until evenly brown and cooked through. Cool and serve, or pack up for a picnic! This chicken may be served hot or cold.

- Preheat oven to 400˚F (200˚C)
- Season chicken thighs with salt and pepper.
- Melt 1 tablespoon butter in a large ovenproof skillet over medium heat. Add chicken, skin-side down, and sear both sides until golden brown. (The skin side will take much longer, in order to properly render the fat and crisp up the skin.)
- Remove chicken thighs and set aside. Pour out any excess fat, but leave some in for the sauce.
- Add garlic, stir until fragrant, then add brown sugar, honey, thyme, and oregano, and stir. Reduce heat to low.
- Return chicken to the skillet. Coat the chicken in the sauce.
- Add green beans to skillet.
- Bake for 25 minutes or until chicken is cooked through.
- Enjoy!

- Preheat oven to 475. Line a rimmed baking sheet with foil. In a small bowl (or glass measuring cup), whisk together honey, vinegar, thyme, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper.
- Place chicken pieces on prepared pan; brush with honey glaze to coat. Roast, brushing twice with glaze (do not baste during last 5 minutes of cooking), until chicken is deep brown on the outside and opaque throughout, 20 to 25 minutes.

- Put nuts, bread crumbs and grill seasoning in food processor and pulse grind to combine the nuts into bread crumbs. Pour nutty-breading onto a plate.
- Beat eggs and half-and-half or milk with hot sauce in a shallow dish.
- Pour flour out on a plastic board or plate.
- Dust both sides of the chicken with flour. Dip the chicken into the egg mixture and then coat with the nutty-breading.
- Preheat a nonstick skillet over medium high heat. Add vegetable oil to coat the bottom of the pan with a thin layer, 2 or 3 turns of the pan. Brown chicken pieces 2 minutes on each side in hot oil or until evenly light golden in color. Transfer to a baking sheet and cook in oven until juices run clear and breasts are cooked through, about 10 to 12 minutes. Serve with Barbecued Succotash.
- Heat a medium skillet over medium high heat. Add onions and peppers and saute 5 minutes. Add beans and corn and season with salt and pepper. When corn heats through, add barbecue sauce. Stir to combine and serve succotash with chopped chives, parsley or cilantro to garnish.
HONEY! CHICKEN
I just love chicken...this is an easy, fast, tasty dish to prepare with few ingredients. It makes lovely moist, tender and crispy chicken breasts. This lovely simple dish is very versatile, if you'd like to add garlic, shallots, sweet onion, red pepper flakes, candied ginger or herbs by all means do so. My dh & I eat a lot of spicy dishes so every now and then we enjoy a simpler, subtler fare.

- Preheat oven to 375 degrees fahrenheit.
- In a 9 x 13 inch baking dish combine the butter, honey and mustard.
- Put baking pan in oven to melt butter, making sure to blend everything together well.
- Next roll chicken in butter mixture.
- Place in baking dish with skin side down.
- Bake for 45 minutes in preheated 375 degree fahrenheit oven; baste every 15 minutes with sauce.
- After 45 minutes turn chicken and bake 30 minutes more until crispy.
- Serve with garlic mashed potatoes and green beans.
