A light, lovely pink salad, this recipe puts a different spin on traditional Waldorf salad. It is super served with roast turkey or baked ham. People always go back for seconds. My family didn't think they liked cranberries until they tried this sweet crunchy salad. -Janet Smith, Smithton, Missouri

Number Of Ingredients 9

2 cups fresh or frozen cranberry halves
1/2 cup sugar
3 cups miniature marshmallows
2 cups diced unpeeled apples
1 cup seedless green grape halves
3/4 cup chopped pecans
1 can (20 ounces) pineapple tidbits, drained
1 cup heavy whipping cream, whipped
Sweetened shredded coconut

Steps:

  • In a small bowl, combine cranberries and sugar. In a large bowl, combine the marshmallows, apples, grapes, pecans and pineapple. Add cranberries and mix well. Fold in whipped cream. Cover and refrigerate. Sprinkle with coconut before serving.

Remember this classic? You might be surprised at how it satisfies a modern palate, even as it gives a retro wink to the last century.

Number Of Ingredients 8

1/2 cup pecans
3/4 cup heavy cream
1/3 cup sour cream
3 cups mini marshmallows
1 1/2 cups diced pineapple (1/2-inch dice)
1 cup sweetened shredded coconut
One 11-ounce can mandarin oranges in light syrup, drained well
One 10-ounce jar maraschino cherries, stems removed and halved

Steps:

  • Position an oven rack in the center of the oven and preheat to 350 degrees F.
  • Spread the pecans on a small baking sheet and bake, stirring once halfway through, until lightly browned and toasted, 6 to 8 minutes. Transfer the pecans to a medium bowl and cool completely.
  • Whip the heavy cream in a medium bowl with an electric mixer to stiff peaks. Stir in the sour cream by hand until combined. Stir in the marshmallows, pineapple and coconut. Gently fold in the mandarin oranges. Cover with plastic wrap and refrigerate until chilled, at least 2 hours and up to overnight.
  • Right before serving, roughly chop the pecans. Fold the pecans and maraschino cherries into the ambrosia salad. Transfer to a serving bowl and serve immediately.

  • Combine cranberries and sugar.
  • In a large bowl, combine the marshmallows, apples, grapes, pecans and pineapple.
  • Add cranberries and mix well.
  • FOld in whipped cream.
  • Cover and chill.
  • Sprinkle wih coconut before serving.

It's hard to believe that cranberries, apples, green grapes, pineapple, mashmallows and Cool Whip can make such a delightful tasting salad. It's abit different from the usual Waldorf Salad, but a great compliment to your holiday meal.

2 cups frozen cranberries, partially thawed and cut in half
1/2 cup sugar
3 cups miniature marshmallows
2 cups diced unpeeled golden delicious apples
1 cup green seedless grape (*See note)
1 (20 ounce) can pineapple tidbits, drained
1 (8 ounce) container Cool Whip

Steps:

  • In a large bowl, combine the cranberries and sugar; mix thoroughly.
  • In a 3-quart (12 cup) bowl, add the marshmallows, apples, grapes, and pineapple.
  • Add the cranberry/sugar mixture; mix well.
  • Fold in the Cool Whip.
  • Cover, and chill in the refrigerator until ready to serve.
  • *Note: If using rather large grapes, cut them in half.
  • If the grapes are small in size, I do not bother cutting them in half.

MOM'S WALDORF SALAD

3/4 cup low-fat buttermilk
1/4 cup plus 2 teaspoons low-fat mayonnaise
3 tablespoons chopped fresh chives
1 tablespoon plus 2 teaspoons apple cider vinegar
1 tablespoon sugar
1 lemon, juiced
Kosher salt and freshly ground black pepper
1 cup toasted walnuts, roughly chopped
8 ribs celery, sliced about 1/4 inch thick on the bias
2 Gala apples, skin on, cored and diced

Steps:

  • Whisk together the buttermilk, mayonnaise, chives, vinegar, sugar, lemon juice and 1/2 teaspoon each salt and pepper in a small bowl. Combine the walnuts, celery and apples in a separate large bowl. Pour three-quarters of the dressing over the celery-apple mixture and toss to coat. Let stand for 5 minutes at room temperature, then toss again. Adjust the seasoning as desired. Add the remaining dressing and toss again. Serve at room temperature.

"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.
