- Meanwhile put the flour and sparkling water in a bowl and season generously. Whisk together to form a batter.
- Coat a small batch of onion rings in batter. Carefully lower into the hot oil and deep-fry until crisp and golden, about 2 - 3 minutes. Remove with a slotted spoon and place on a piece of kitchen towel to drain. Repeat with the remaining onion and batter.

Steps:
- Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
- Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
- Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
- Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

Steps:
- Slice the onion as thinly as possible (a mandolin would be perfect, but I don't own one, so I used a sharp knife.).
- Soak the onion in the buttermilk for 15 minutes, or while the oil is heating.
- Toss the onion slices in a plastic bag with the baking mix until well coated.
- Drop the coated rings into the hot oil, fry for approximately 4 minutes, turning half way through so that both sides are the same color (should be light brown, and you will likely see the onion "peeking" through the coating.
- Drain on a plate lined with paper towel.
- Serve hot with your favorite dip- Ranch dressing or ketchup are both good with these.

Steps:
- Put the onions in a large bowl and cover with milk. Let soak for 30 minutes.
- Meanwhile, using a fine-sieve over a large bowl, sift together the flour, baking powder, 2 teaspoons salt, chili powder, and cumin, if using. Stir in the beer until a smooth batter is formed. Set aside.
- Drain the onions and transfer to a paper towel-lined baking sheet. Blot the onions with paper towels until dry.
- In a large, wide heavy-bottomed pot, pour in the oil to a depth of about 2 inches. Place over medium heat and heat to 400 degrees F. (The oil must be heated to 400 degrees F. since the temperature drops oil to about 375 degrees F. when the onions are added.)
- Working in batches, transfer about 8 to 10 of the onions to the batter and mix to coat well. Using tongs, pull several of the onions out of the batter, and let any excess batter fall back into the bowl. Carefully add to the oil and fry, flipping once, until golden brown and crispy, about 3 1/2 minutes per batch. Using the tongs, transfer to a dry paper towel-lined baking sheet to drain. Sprinkle with salt to taste. Repeat with the remaining onions. Serve immediately.

Steps:
- Prepare your onions by slicing off the root and stem end. Remove the outer few layers of the onion skin. Slice the onion into 1/4 to 1/2 inch slices, it'll normally be 4-5 slices per onion. Use your hands to separate the onion slices from each other, without breaking them and keeping them in rings.
- Add your oil to a large Dutch oven or high walled cast iron skillet and place it over medium-high heat to start heating your oil. If you have a paddle thermometer, you can clip it to the side to see the temperature (I recommend using a thermometer for best results).
- In a medium mixing bowl add the cornmeal, flour, sugar, baking soda, salt, and garlic powder. Whisk to combine.
- Add the eggs and milk and stir to combine well.
- When your oil has reached 350 degrees to 375 degrees F., drop one onion ring into the batter. Press it into the batter with a fork and use the fork to remove it from the batter. Hold it over the bowl and allow the extra batter to run off a bit. Add the battered onion ring carefully to the hot oil.
- Repeat with a few more pieces of onion so that you have 4-6 in your pan, depending on the size (don't crowd the pan or add too many).
- Let the onion rings cook for 3-5 minute or until they are a deep golden brown. Use a spider strainer or a wire skimmer to remove the onion rings from the oil and place them on a paper towel lined baking sheet.
- Repeat with remaining onion rings until they are all cooked, adjusting your burner temperature as needed to help maintain a steady oil temperature.
- Serve hot with your favorite dipping sauces.

Steps:
- Cut off the top of each onion and peel away the skin. Using a sharp knife, cut the onions into 1/4-inch slices (or thicker if you prefer). Separate the individual onion rings from each slice, discarding the centers. Set aside.
- In a medium mixing bowl, whisk together flour, seasoned salt, and baking powder. Add in water and eggs and mix until the batter is smooth.
- Heat 2-inches of oil in a large pot to 375 degrees F over medium-high heat. You can use a long stem thermometer to monitor the oil's temperature.
- Dip onion slices in the batter, and shake gently to remove any excess. Then carefully drop the onions into the hot oil. Do not overcrowd the pot.
- Cook for 2 to 4 minutes per side, or until golden brown. Use tongs or a spider strainer to remove cooked onion rings to a paper towel-lined baking sheet. Repeat with remaining onions and batter.
- Serve onion rings immediately. I like them with fry sauce, ranch, or ketchup for dipping.
