My mom shared this recipe. It requires almost no preparation and makes a delicious addition to just about any main course. Try it with beef bouillon instead of chicken bouillon it that's a better fit with your meal.

1-1/2 cups water
2 teaspoons chicken bouillon granules
1 teaspoon dried minced onion
1/2 teaspoon dried thyme
1/2 teaspoon dried marjoram
1/4 teaspoon dried rosemary, crushed
1-1/2 cups uncooked instant rice

Steps:

  • In a large saucepan, bring water to a boil. Add the bouillon, onion, thyme, marjoram and rosemary; stir until bouillon is dissolved. Stir in rice. Cover and remove from the heat; let stand for 5 minutes. Fluff with a fork.

For a slightly nuttier flavor, use long-grain brown rice.

3 tablespoons extra-virgin olive oil
1 1/2 cups minced onion (from 1 onion)
3 cups long-grain white rice
Coarse salt
4 1/2 cups water
3 cups diced zucchini (from 2 zucchini)
1/2 cup finely chopped mixed fresh herbs, such as flat-leaf parsley, dill, and chervil

Steps:

  • Heat oil in a medium saucepan over medium-high heat. Add onion, and cook, stirring, until translucent, about 5 minutes. Stir in rice and 2 teaspoons salt. Stir rice until coated with oil, then cook 1 minute. Add water, and bring to a boil. Reduce heat, cover, and simmer until water is absorbed, about 16 minutes. Turn off heat. Let rice stand, covered, 10 minutes.
  • Meanwhile, bring a medium pot of water to a boil. Add zucchini, and cook until tender, about 2 minutes. Drain.
  • Add zucchini and herbs to rice, and fluff with a fork.

1 tablespoon butter
1/8 teaspoon each dried tarragon, thyme, basil, parsley flakes, and pepper

Steps:

  • In a small saucepan, cook rice and onion in butter until onion is tender. Add the seasonings; cook for 1 minute. Add broth and salt if desired; bring to a boil. Cover and simmer for 15 minutes or until liquid is absorbed and rice is tender.

  • Heat butter over medium heat in a medium-size saucepan. Add onion, and sauté until pale golden, 1 to 2 minutes. Add rice, and stir to coat.
  • Add 3 cups water, and bring to a boil. Add salt and pepper. Cover, and reduce to a simmer. Cook until the liquid is absorbed and the rice is al dente, 18 to 20 minutes.
  • Remove from the heat. Fluff with a fork, and stir in chopped parsley.

  • Heat the butter in a medium saucepan over medium heat. Add the scallions and saute for 2 to 3 minutes. Add the rice and stir until the rice is fully coated with butter.
  • Add 3 cups water and bring to a boil. Add the salt and pepper, cover and reduce the heat to a simmer. Cook until the liquid is absorbed and the rice is al dente, 18 to 20 minutes.
  • Remove from the heat; fluff the rice with a fork; and stir in the parsley and the lemon zest, if using.

1 3/4 cups water
3/4 teaspoon kosher salt
1 tablespoon unsalted butter

1 tablespoon minced fresh scallions, white and green parts
Pinch freshly ground black pepper

Steps:

  • Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan. Bring to a boil over high heat; reduce the heat to low, stir once, and simmer, covered tightly, for 15 minutes. (I need to pull the pot half off the burner to keep it from boiling over.) Turn off the heat and allow the rice to sit covered for 5 minutes. Add the parsley, dill, scallions, and pepper. Fluff with a fork, and serve warm.

An awesome Greek side dish. Feel free to use whatever rice you prefer, just watch the cooking time if using white. Very easy.

1/2 teaspoon garlic powder
1 cup brown rice
1/4 teaspoon sage
1/4 teaspoon thyme

Steps:

  • Pre-heat your oven to 350 degrees.
  • Prepare a baking dish with the olive oil. Add green onion and bake until golden.
  • Add the thyme, parsley, and sage. Sprinkle the pepper and salt. Add the rice and water. Stir in the garlic powder. Bake covered for 40-50 minutes or until the rice is tender.

1 cup thinly sliced carrot
2 cups basmati rice (or other fine quality rice)
1/2 teaspoon dill weed
2 tablespoons chopped fresh parsley
1 cup chopped onion
3 cups water
2 teaspoons salt
1 dash black pepper
non-stick olive oil flavored cooking spray (or 1 tsp. olive oil, spread in pan with paper towel)
1 tablespoon fat-free margarine (or vegan margarine) (optional)

Steps:

  • Spray large saucepan with cooking spray.
  • Add onion and carrots and saute over medium heat, adding a few drops of water if necessary to prevent sticking, stirring frequently, until onion is translucent and carrot is fairly tender.
  • Add water rice, salt, dill weed, and pepper; bring to a boil.
  • Cover; simmer 20-25 minutes or until rice is tender.
  • Stir in parsley and fat-free margarine.
  • Serve.

Herbed Steamed Rice image

Can be prepared in 45 minutes or less.

Number Of Ingredients 9

3/4 cup long-grain rice
1/4 cup chicken broth
2 garlic cloves, minced and mashed into a paste with 1/2 teaspoon salt
1 tablespoon minced peeled fresh gingerroot
1/4 cup finely chopped scallions
2 teaspoons fresh lemon juice
1 teaspoon soy sauce
1/2 teaspoon salt, or to taste
1/2 cup packed coriander sprigs, washed well, spun dry, and chopped fine

Steps:

  • To a kettle of boiling salted water add rice and return to a boil stirring. Boil rice 10 minutes. Drain rice in a large sieve and rinse. Set sieve over another kettle of boiling water (rice should not touch water) and steam rice, covered with a kitchen towel and lid, 20 minutes, or until tender (check water level in kettle occasionally, adding water if necessary).
  • In a large bowl stir together remaining ingredients except coriander and add rice. Toss mixture until combined well. Cool rice to room temperature and stir in coriander.

Stir in rice and 1/2 teaspoon salt. Cover; reduce heat to low and simmer until rice is tender and water is absorbed, 18 to 20 minutes. Mix in herbs and season with additional salt, if desired.
