Here's what you need: vegan butter, almond milk, vegan butter, organic sugar, active dry yeast, flour, salt, vegan butter, brown sugar, ground cinnamon, powdered sugar, almond milk, vanilla extract

2 tablespoons vegan butter, to coat the foil pan
2 cups almond milk, at room temperature
½ cup vegan butter, melted
¼ cup organic sugar
1 packet active dry yeast
5 ½ cups flour, divided
1 teaspoon salt
¾ cup vegan butter
¾ cup brown sugar
2 tablespoons ground cinnamon
1 cup powdered sugar
2 tablespoons almond milk
½ teaspoon vanilla extract

Steps:

  • Generously rub two disposable foil pie pans with vegan butter.
  • In a large bowl, whisk together the almond milk, melted butter, and sugar. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If it is hotter, allow to cool slightly.
  • Sprinkle the yeast evenly over the warm mixture and let set for 1 minute.
  • Add 5 cups flour and 1 teaspoon of salt to the milk mixture and mix with a wooden spoon until just combined.
  • Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.
  • Preheat oven to 350˚F (180˚C).
  • After 1 hour, the dough should have nearly doubled in size.
  • Remove the towel and add an additional ½ cup (95g) of flour and salt. Stir well, then turn out onto a well-floured surface.
  • Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface.
  • Roll the dough out into a large rectangle, about ½-inch (1 cm) thick. Fix corners to make sure they are sharp and even.
  • Spread the softened vegan butter evenly over the dough.
  • Sprinkle evenly with brown sugar and cinnamon.
  • Roll up the dough, forming a log, and pinch the seam closed. Place seam-side down. Trim off any unevenness on either end.
  • Cut the log in half, then divide each half into 7 evenly sized pieces. About 1½ inches (8 cm) thick each.
  • Place 7 cinnamon rolls in each cake pan, one in the center, six around the sides. Cover with plastic wrap and place in a warm place to rise for 30 minutes.
  • To prepare the frosting. In a medium-size mixing bowl, whisk together powdered sugar, almond milk, and vanilla until smooth.
  • Remove plastic wrap. Bake the cinnamon rolls in a preheated oven at 350˚F (180˚C) for 25-30 minutes, until golden brown.
  • While still warm, drizzle evenly with frosting.

A healthier version of this beloved sweet, this quick and easy vegan cinnamon rolls recipe contains spelt flour, yet makes for soft and gooey cinnamon buns. A simple brown sugar glaze drizzled on top of the warm cinnamon buns makes these super delicious. The dough can also be made the night before for easy Sunday mornings (see below for instructions).

12 ounces (1 1/2 cups) of warm almond milk (100'F)
2 tablespoons virgin olive oil
2 teaspoons instant yeast
3 tablespoons sugar
1 teaspoon vanilla extract
2 cups all purpose flour
1 1/4 cups spelt flour (or whole wheat flour)
1 teaspoon salt
1/2 cup sugar
2 teaspoons ground cinnamon
1/2 cup brown sugar
1/3 teaspoon vanilla extract
2 tablespoons coconut oil (or vegan butter)
1/4 cup almond milk

Steps:

  • Line a 10" round pan with parchment paper. set aside.
  • In a large bowl, stir together the warm almond milk, yeast, olive oil, sugar and vanilla. Let stand for 5 minutes or until the yeast has bloomed (foamed).
  • In a medium bowl, sift together the flours and salt. Add the dry ingredients to the milk mixture and stir until rough ball forms.
  • Turn the dough out onto a floured surface and knead for 2-3 minutes. If the dough becomes sticky, add more flour to the surface and your hands. Form the dough into a ball and place back in the mixing bowl, cover and let rise in a warm place for 1 1/2 hours, or until doubled in size.
  • Punch down the dough and turn out onto a floured surface. Roll the dough into a 12"x18" rectangle (approx 1/4" thick). In a small bowl, combine the cinnamon and sugar, then sprinkle evenly over the surface of the dough. Use a rolling pin to gently press the sugar mixture onto the dough to help it adhere.
  • Starting at the short end, roll the dough in on itself, using a scraper if the dough sticks to the surface. With a serrated knife, cut the roll into 8 equal slices and arrange them in the prepared pan. Cover and let rise in a warm place for 30 minutes, or cover and place in the fridge overnight for baking the next morning.
  • Preheat the oven to 350'F bake the proofed rolls for 40 minutes, or until golden brown. Remove from the oven and let cool. Meanwhile, prepare the glaze.
  • In a medium saucepan, over medium-high heat, stir together the glaze ingredients. Bring to a boil, stirring constantly. Remove from heat and let cool (stirring occasionally) until the glaze ribbons off the spoon.
  • Drizzle the glaze over the warm cinnamon buns and serve.

2 (1/4 ounce) packages active dry yeast
1 cup warm water
2/3 cup sugar
1 teaspoon sugar
2/3 cup butter
2 teaspoons salt
2 eggs, slightly beaten
7 cups flour
1 cup warm milk
1 cup melted butter
1 3/4 cups sugar
3 tablespoons ground cinnamon
1 1/2 cups chopped walnuts (optional)
1 1/2 cups raisins (optional)
1 cup butter or 1 cup margarine
1/2 cup brown sugar
1/2 cup Karo syrup
2 cups pecans, chopped (optional)

Steps:

  • In a cup, combine yeast, warm water and 1 tsp sugar. Stir and set aside.
  • In a large bowl, mix milk, remaining sugar, butter, salt and eggs. Stir well.
  • Add yeast mixture.
  • Add half the flour and beat until smooth.
  • Stir in enough of the remaining flour until dough is stiff.
  • Turn out onto a well-floured board.
  • Knead for 10 minutes.
  • Place in a plastic bowl and cover.
  • Let dough rise in a warm place until double in bulk. This may take 1 1/2 hours.
  • Punch down dough and let it rest for 5 minutes.
  • Roll out on a floured surface into a 15x20 inch rectangle.
  • To prepare filling----------.
  • Spread dough with half cup butter.
  • Mix together 1 1/2 cups sugar and cinnamon and sprinkle over buttered dough.
  • Sprinkle with walnuts and raisins.
  • Roll up and pinch edge together to seal.
  • Cut into 12 slices.
  • Coat bottom of a 13 by 9 inch baking pan and an 8 inch square pan with remaining 1/2 cup melted butter.
  • Sprinkle with remaining 1/4 cup sugar.
  • Place cinnamon roll slices close together in pans.
  • Let rise in a warm place until dough is doubled in bulk i.e. for about 45 minutes.
  • Topping----------.
  • In a saucepan, place all ingredients except for pecans.
  • Melt these ingredients on range top.
  • Mix in pecans and then pour over the top of rolls.
  • Preheat oven to 350°F.
  • Bake for 25 minutes or until done.
  • Cool.

Add in 1 tbsp coconut sugar and the extra 1 tbsp flour. Gently whisk together, then sprinkle yeast, mix with a spoon lightly, cover, and let activate for 10 minutes in a warm area.
  • When activated, pour the mixture into a large bowl or a stand mixer with the dough attachment. Add in the remaining coconut sugar, applesauce, melted vegan butter, and vanilla extract. Mix on medium speed until combine. Then add in about half of the flour and mix on medium speed until the flour starts to incorporate into the wet mixture. Add the remaining flour, and mix on medium speed until a shaggy dough forms. Lightly flour a clean surface and place the dough onto the surface, sprinkling some extra flour on top or kneading.
  • Knead the dough lightly, for 2-4 minutes, until it forms a smooth dough ball that’s not sticky. Then place the dough into the greased medium bowl, cover with a cloth or wrap, and place into a warm area to let rise for 1 hour. It should be double in size. If it’s at least 80F outside, you can place the bowl outside, otherwise you can place it in the oven (which is turned off) and turn on the oven light or start preheating the oven to 350F and place the bowl near or on top of the oven.
