2 cups sliced fresh mushrooms
2 cups cut fresh asparagus (about 1/2 pound)
2 medium sweet onions, finely chopped
2 medium carrots, sliced
2 medium zucchini, halved and sliced
1 medium sweet yellow pepper, julienned
1/3 cup butter, cubed
2/3 cup chicken broth
1 cup sour cream
1/2 cup prepared ranch dip
1/2 cup grated Parmesan cheese
1/4 cup minced fresh parsley
2 tablespoons minced fresh basil
1/2 teaspoon salt

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute vegetables in butter for 5 minutes. Stir in broth; cook for 3 minutes or until vegetables are crisp-tender. , In a small bowl, combine the sour cream, dip, cheese, parsley, basil and salt; stir into skillet and heat through. Drain pasta; add to the skillet and toss to coat.

1 (8 ounce) package farfalle (bow tie) pasta
1 tablespoon olive oil
1 zucchini, chopped
1 large onion, chopped
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a skillet over medium heat, saute zucchini and onion in olive oil until tender. Toss farfalle pasta with vegetables and season with salt and pepper; serve.

1/4 cup balsamic vinegar
2 tablespoons lemon juice

  • Cook pasta according to package directions. Meanwhile, in a small saucepan, bring 1 in. of water to a boil. Add broccoli and cauliflower; cook for 2-3 minutes. Drain and immediately place vegetables in ice water; drain and pat dry. Drain pasta and rinse in cold water., In a large salad bowl, combine the pasta, broccoli mixture, red pepper, cherry tomatoes, olives, artichokes, sunflower kernels, basil and sun-dried tomatoes if desired. , In a small bowl, whisk the vinaigrette ingredients. Pour over salad; toss to coat. Cover and refrigerate until serving.

2 tablespoons olive oil, plus more for brushing vegetables
2 tablespoons apple cider vinegar
1/2 lb bow tie pasta
4 tablespoons chopped fresh parsley
salt and pepper
Italian vinaigrette dressing
1 small onion
3 large tomatoes
2 large zucchini
3 tablespoons chopped fresh basil

Steps:

  • Mix together the beans, 2 tablespoons.
  • olive oil, and vinegar, and refrigerate for several hours or overnight.
  • Cook the pasta, drain it, and rinse until cool.
  • Toss the pasta with the bean mixture.
  • Stir in the parsley, salt and pepper, and enough vinaigrette to moisten.
  • Refrigerate until needed.
  • Parboil the onion.
  • Cut the onion and tomatoes into quarters and cut the zucchini into 1-inch chunks.
  • Brush the vegetables with olive oil and place on skewers.
  • Grill, turning often, until lightly charred.
  • Chop the vegetables, toss them into the pasta salad, add the basil, and serve.

This is about three or four different recipes if done "The Chef Way" or my version. Wine Pairing: Look for the freshness of a Sauvignon Blanc from Sancere or New Zealand to accompany this pasta. Goldwater's Dog Point or Villa Maria are both excellent and affordable wines that are perfect accompaniments. :)

2 tablespoons oven dried tomatoes flavored oil
1 tablespoon roasted garlic (you can buy already roasted)
4 tablespoons unsalted butter, cut into small pieces
2 tablespoons sun-dried tomatoes
2 cups chicken stock or 2 cups organic low sodium chicken broth
2 teaspoons chopped fresh oregano
2 teaspoons thyme leaves
4 tablespoons chopped fresh Italian parsley
1/2 teaspoon kosher salt
fresh ground white pepper
2 ounces French haricots vert or 2 ounces green beans, trimmed
1 carrot, trimmed and cut into thin slices
12 asparagus, cut into 2-inch slices
1 cup broccoli floret
1/2 cup fresh peas
12 ounces bow tie pasta
1/2 cup freshly grated parmesan cheese, & some for serving

Steps:

  • Bring a large stockpot of water to a boil.
  • In a large skillet or saute pan, heat the flavored oil.
  • Add the roasted garlic, butter, tomatoes, and stock.
  • Season with the oregano, thyme, 2 tablespoons of the parsley, salt, and pepper, and reduce until slightly thickened.
  • Meanwhile, blanch all the vegetables, each type individually, in simmering salted water, about 1 minute.
  • Refresh in cold water, drain well, and set aside.
  • When the sauce has been reduced, add the vegetables and stir to heat through.
  • Add salt to the pot of boiling water and cook the bow ties until they are al dente, following the directions on the package.
  • Drain the pasta and stir it into the sauce, coating well.
  • Remove the skillet from the heat and stir in the grated cheese.
  • To serve, divide the pasta and vegetables among 4 large warm plates or bowls.
  • Sprinkle each serving with some of the remaining chopped parsley and serve immediately.
  • Additional Parmesan cheese can be grated onto the dish after serving.

1 cup skim milk
1 cup chicken broth
