CINNAMON BISCUIT ROLLS

Just as good as regular cinnamon rolls, but without the hassle of creating a yeast dough first! Uses a mouthwatering homemade biscuit dough as your cinnamon roll base. There's lots of gooey filling, and a scrumptious vanilla glaze for on top. This is now one of my favorite recipes! I'm going to make it the next time I have friends over. I can't wait to hear what some other Zaar'ers think! I found a recipe similar to this one at allrecipes.com, but I've changed it. Enjoy a delicious treat!

Yield 12 cinnamon rolls

Number Of Ingredients 12

2 cups all-purpose flour
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
1/4 cup cold butter or 1/4 cup margarine
1 cup cold milk
1/3 cup butter or 1/3 cup margarine
1 cup packed brown sugar
3 -4 teaspoons ground cinnamon
1 cup confectioners' sugar
enough cold milk, to make a glaze
4 -5 drops vanilla

Steps:

  • Generously grease an 8x11 or 9x13 inch baking pan with butter.
  • Cream 1/3 cup butter or margarine with the brown sugar and cinnamon.
  • In a large bowl, combine flour, sugar, baking powder, and salt.
  • Cut in 1/4 cup butter or margarine until crumbly.
  • Make a well in center of dry ingredients.
  • Add cold milk all at once.
  • Stir to form a soft dough.
  • Turn dough out onto a lightly floured board.
  • Knead 8 times- do NOT overknead!
  • (This will make the biscuit dough tough.) Roll dough into rectangle about 12 inches long and 6 inches wide.
  • Spread the cinnamon, sugar and butter mixture over the entire surface of the dough.
  • Roll up as you would a jelly roll.
  • Mark, and then cut 12 slices with a serrated knife.
  • Place in greased pan.
  • Rolls will touch slightly.
  • Bake at 400 degrees for 20-25 minutes or until golden brown and bubbling.
  • Turn out onto a wire rack to cool.
  • (Line underneath the rack with paper towels to catch the gooey drippings).
  • Combine the confectioners' sugar with the vanilla, and then add enough milk to make a thin glaze.
  • Drizzle this over the rolls while still warm.
  • Eat with a cup of tea or coffee and expect rave reviews from friends and family!

½ cup white sugar
2 tablespoons ground cinnamon

1 (10 count) package refrigerated biscuit dough
¼ cup butter, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter the bottom of an 8-inch round or square baking pan and sprinkle with 2 tablespoons brown sugar.
  • Combine white sugar, cinnamon, 2 tablespoons brown sugar, and vanilla extract in a bowl. Mix filling well.
  • Combine confectioners' sugar and milk for glaze in another bowl until well mixed.
  • Separate biscuits and roll or punch down each one until flat. Coat with melted butter and sprinkle each with filling mixture to coat. Roll up each piece of dough and cut in 1/2, placing each cut-side down into the prepared pan, yielding 20 pieces.
  • Bake in the preheated oven until biscuit portion on top of rolls begins to brown, about 15 minutes. Remove from the oven and glaze.

I had these for the first time at my sister-in-law's when I was staying with them as a teen. They are now a much loved tradition in my home too. Any time it snows, the kids beg me to make them. I've changed them just a bit by adding the nuts but they are good with or without them. For an Orange Cinnamon variation see recipe #112535.

1 tablespoon baking powder
1 teaspoon salt
1/4 cup shortening
3/4 cup milk
1 teaspoon vanilla extract
1/4 cup butter, melted (or very soft)

chopped pecans (optional)
1 cup powdered sugar
1 -2 tablespoon milk
1/4 teaspoon vanilla

Steps:

  • Combine flour, baking powder and salt; cut in shortening.
  • Add milk and 1 tsp. vanilla; stir with fork just until dough leaves sides of bowl.
  • Roll dough out, on lightly floured surface, into a 1/4 inch thick rectangle.
  • Brush top with butter (I prefer to use soft butter rather than melted).
  • Combine cinnamon and sugar; sprinkle evenly over dough.
  • Sprinkle with chopped pecans (or other nuts or raisins) if desired.
  • Roll up, starting on long side.
  • Cut into 1/2 inch thick rounds.
  • Place rounds, with sides just touching, in greased 9" round pan.
  • Bake at 425°F for 18-20 minutes or until golden brown.
  • Remove from oven and drizzle with glaze, serve warm.
  • For glaze: Combine all ingredients and beat until smooth.

1 (7 1/2 ounce) package refrigerated biscuits
1/3 cup margarine
1/3 cup sugar
2 tablespoons cinnamon

Steps:

  • Bake biscuits according to package directions. (Sam's brand directions are to bake at 400 degrees for 8-10 minutes).
  • Meanwhile, melt the butter in a microwave safe bowl for 30-40 seconds. Mix the cinnamon and sugar together in a separate shallow bowl.
  • As soon as the biscuits come out of the oven, roll them in the butter, and then immediately in the cinnamon sugar. (You may need to use tongs, or I guess you could let them cool slightly).
  • Enjoy them warm.
  • I seldom make these, so I like to take the leftover cinnamon sugar and mix it into the remaining butter to spread on toast. It is hard to roll the biscuits if you use any less, but I suppose you could cut it down to 1/4 cup each of the sugar and margarine if you'd rather not have any left over.

2 tablespoons baking powder
4 tablespoons sugar
1 1/2 teaspoons fine salt
8 tablespoons (1 stick) cold butter, cubed
1 1/2 cups milk
8 ounces mascarpone or cream cheese, room temperature
1 tablespoon cinnamon
1 cup golden raisins, plumped in water
1 cup heavy cream, room temperature
3 tablespoons unsweetened instant ice tea mix
1 cup sugar
2 teaspoons vanilla extract

Steps:

  • For the biscuits: Preheat the oven to 400 degrees F.
  • Whisk together the flour, baking powder, 1 tablespoon of the sugar, and the salt in a medium bowl. Using a bowl scraper or your fingers, mix in the butter until the mixture resembles a coarse meal (using your fingers will yield a more cake-like texture). Make a well in the center, pour in the milk and stir until just combined.
  • Turn the dough out onto a floured work surface and knead 5 or 6 times. Roll into a 10-by-14-by-1/4-inch rectangle.
  • Mix together the mascarpone, cinnamon and the remaining 3 tablespoons sugar in a small bowl until well combined. Gently spread the mixture onto the rolled-out biscuit dough, leaving a 1/2-inch border. Sprinkle with the raisins and then roll the dough into a long cylinder. Transfer to a baking sheet and freeze for 20 minutes.
  • Set the dough cylinder on a floured work surface and slice into 8 equal pieces. Place cut-side down on a parchment-lined baking sheet, spaced 1 1/2-inches apart. Use the palm of your hand to gently press the biscuits into 1-inch-thick disks.
  • Bake until the tops start to brown, 20 to 25 minutes.
  • For the caramel: Whisk the cream and the instant tea together in a small bowl until the tea has dissolved (or add to a Mason jar and shake).
  • Without stirring, heat the sugar in a dry pan over medium heat until liquefied and starting to brown, 6 to 10 minutes. (When the edges begin to brown and the sugar is liquid, go ahead and stir to ensure even browning.) Continue cooking until copper colored, 1 to 4 minutes. Immediately turn off the heat and VERY CAREFULLY stir the cream-tea mixture into the hot sugar. Add the vanilla and stir until smooth. (If lumps form, turn the heat back on to low and stir until dissolved.) Set aside to cool a bit.
  • Drizzle the biscuits with the caramel and eat as soon as cool enough not to burn the roof of your mouth.

Stir in just enough milk so dough leaves side of bowl and forms a ball.

  • Blend 2/3 cup sugar, flour, cake flour, baking powder, salt, cinnamon and baking soda in large bowl. Add butter, rub in with fingertips until mixture resembles coarse meal. Beat eggs in medium bowl. Transfer 1 tablespoon beaten eggs to small bowl; reserve for glaze. Whisk yogurt into remaining eggs in medium bowl. Stir yogurt mixture into dry ingredients. Gather dough into ball.
  • Gently knead dough on lightly floured surface until dough just holds together, about 6 turns. Roll or pat dough into 1-inch-thick round. Using 2 1/2- to 3-inch-diameter heart-shaped cookie cutter, cut out biscuits. Gather dough scraps, reroll to 1-inch thickness and cut out additional biscuits. Place biscuits on ungreased baking sheet. (Can be prepared 1 day ahead. Cover biscuits and reserved egg glaze separately and refrigerate.)

GOLDEN CINNAMON BISCUITS

An easy and quick mix biscuit (cookie) dough to make. You can use 3 teaspoons of ginger powder instead of 3 teaspoons of cinnamon powder. These biscuits (cookies) are great dunking biscuits. The bicuits (cookies) do have a bit of crunch in them.

These cinnamon flavoured Christmas biscuits are great for getting the kids involved in cooking, and they will look great on the tree too

175g dark muscovado sugar
85g golden syrup
100g butter
3 tsp ground ginger
1 tsp ground cinnamon
350g plain flour, plus extra for dusting
1 tsp bicarbonate of soda
1 egg, lightly beaten
100g white chocolate
edible silver balls

Steps:

  • Heat the sugar, golden syrup and butter until melted. Mix the spices and flour in a large bowl. Dissolve the bicarbonate of soda in 1 tsp cold water. Make a well in the centre of the dry ingredients, add the melted sugar mix, egg and bicarbonate of soda. Mix well. At this stage the mix will be soft but will firm up on cooling.
  • Cover the surface of the biscuit mix with wrapping and leave to cool, then put in the fridge for at least 1 hr to become firm enough to roll out.
  • Heat oven to 190C/170C fan/gas 5. Turn the dough out onto a lightly floured surface and knead briefly. (At this stage the dough can be put into a food bag and kept in the fridge for up to a week.) Cut the dough in half. Thinly roll out one half on a lightly floured surface. Cut into shapes with cutters, such as gifts, trees and hearts, then transfer to baking sheets, leaving a little room for them to spread. If you plan to hang the biscuits up, make a small hole in the top of each one using a skewer. Repeat with remaining dough.
  • Bake for 12-15 mins until they darken slightly. If the holes you have made have closed up, remake them while the biscuits are warm and soft using a skewer. Cool for a few mins on the baking sheets, then transfer to a wire rack to cool and harden up completely.
  • Break up the chocolate and melt in the microwave on Medium for 1-2 mins, or in a small heatproof bowl over simmering water. Drizzle the chocolate over the biscuits, or pipe on shapes or names, then stick a few silver balls into the chocolate. If hung up on the tree, the biscuits will be edible for about a week, but will last a lot longer as decorations.

¼ cup butter, divided
2 cups all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1 teaspoon salt
3 tablespoons butter, softened
¾ cup milk
1 egg
½ cup white sugar
½ cup brown sugar
1 tablespoon ground cinnamon
1 cup confectioners' sugar
4 ounces cream cheese, softened
¼ cup butter, softened
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Brush a 9-inch square baking dish with 2 tablespoons melted butter.
  • Whisk flour, 2 tablespoons white sugar, baking powder, and salt together in a large bowl. Work 3 tablespoons softened butter into flour mixture using your hands. Beat milk and egg together in another bowl; pour into flour-butter mixture and stir with a rubber spatula until a soft dough forms.
  • Turn dough out onto a floured work surface and roll dough into a 1/4-inch thick rectangle. Brush surface of dough with 2 tablespoons melted butter.
  • Whisk 1/2 cup white sugar, brown sugar, and cinnamon together in a small bowl. Sprinkle 1/2 of the cinnamon sugar mixture in the bottom of the prepared baking dish. Sprinkle remaining cinnamon sugar over butter-brushed dough. Roll dough around filling to form a log; cut log into 18 rolls and place rolls in the prepared baking dish.
  • Bake in the preheated oven until rolls are set, 20 to 25 minutes.
  • Beat confectioners' sugar, cream cheese, 1/4 cup softened butter, and vanilla extract together in a bowl until frosting is smooth. Top hot cinnamon rolls with cream cheese frosting.
