- 1. Place all fruit in a bowl and mix in frozen orange juice concentrate.
- 2. In a blender, combine yogurt, ricotta, ginger, cinnamon and vanilla. Portion the fruit into dessert bowls, top each with yogurt-ricotta sauce and garnish with a walnut half.
- 3. Other fruits may be substituted, such as melon, kiwifruit, strawberries, blueberries, pears or pineapple. The fruit medley may also be served without topping.

- Preheat the oven to 350 degrees F.
- For the berry mixture: In a medium bowl, combine the raspberries and strawberries, granulated sugar, cornstarch and vanilla. Stir and set aside.
- For the crisp: Butter an 8-inch square baking dish. In a large bowl (or food processor), combine the butter pieces, flour, oats, granulated sugar, brown sugar, pecans and salt. Cut together with a pastry cutter (or pulse in the food processor) until the mixture resembles coarse crumbs.
- Press half of the crisp mixture into the prepared baking dish. Top with the berry mixture, then sprinkle the remaining crisp over the top. Bake until the topping is golden brown, about 45 minutes. Allow to sit for 10 minutes before serving.
- For the whipped cream: Add the cream and granulated sugar to the bowl of a mixer and whip until soft peaks form.
- Scoop out the crisp with a spoon and top with sweetened whipped cream

- Preheat oven to 350 degrees F (175 degrees C).
- Coat the bottom of a 9x13 inch baking dish with oil. Spread sweet potatoes on the bottom, then top with red potatoes, onion, garlic, green bell peppers, red bell peppers and carrots. Sprinkle seasoning generously over all and cover dish with aluminum foil.
- Bake at 350 degrees F 1 1/2 hours or until potatoes are cooked through and tender; remove foil cover and stir.

- Drain canned fruits, reserving 1 cup combined syrup.
- Cook syrup and sugar over medium heat about 5 minutes, stirring until sugar dissolves.
- In a large bowl, mix all ingredients including syrup together.
- Using about 2 cups at a time, place mixture in blender.
- Cover and puree until smooth but slightly chunky.
- Pour into another large bowl.
- Repeat until all fruit is processed.
- When all is blended, stir together in the large bowl.
- Line 30 muffin cups with paper liners.
- Ladle fruit into paper cups.
- Freeze until solid.
- When frozen, turn over muffin tins and punch out cups with your thumbs.
- Place cups in freezer bags and store in freezer.
- Remove from freezer 20 minutes before serving to use as a salad or dessert, or eat frozen.

- In a large saucepan, bring the two wines, sugar and vanilla pod to the boil. Put the mint and basil in the centre of a small piece of muslin and tie with string to make a bag, then add to the pan with a few turns of freshly ground black pepper.
- Remove from heat and leave to come to room temperature. Remove muslin bag, add raspberries and the melon balls. Chill for at least 4 hrs.

- If using fresh fruit rinse the fruit and remove the pits (if applicable) then place the fruit in a large pan/saucepan. If using large fruit, such as peaches, remove the pits and chop into chunks before cooking.
