BAKED ZITI WITH ITALIAN TURKEY SAUSAGE
Baked Ziti with Italian Turkey Sausage is a hearty, make ahead casserole that's family and freezer friendly! A healthier twist with all of the same incredible flavor!

Steps:
- In a medium saucepan, crumble and cook turkey sausage over medium-heat until just cooked.
- Add onion, garlic, Italian seasoning and salt and cook, stirring often, until onion has softened - about 5 minutes.
- Stir in marinara sauce and turn off the heat.
- Meanwhile, cook pasta according to package directions, removing from the heat 1-2 minutes before the cook time is up so pasta still has a slight bite to it. Drain and toss with oil to prevent from sticking.
- Preheat the oven to 375 degrees and lightly grease a 9x13" baking dish.
- Spread a thin layer of sauce in the bottom of the dish.
- Top with half of the pasta, half of the sauce, half of the ricotta (dollop it and swirl into the sauce if you desire), half of the mozzarella and half of the Parmesan. Repeat layers one more time to use remaining ingredients.
- Cover and bake for 20-30 minutes until bubbly. Remove lid and broil for 1-2 minutes if desired.

THE BEST BAKED ZITI
I am half Italian, was raised eating the finest Italian-American cuisine, and have filmed almost 2000 recipe videos, so when you consider all of those facts, it seems incredible that I have never posted a video for baked ziti. Hopefully I make up for that long wait by posting what I think is the best version of it.

Steps:
- Cut down the length of each sausage with a sharp knife. Remove and discard casings.
- Heat olive oil in a large saucepan set over high heat. Add sausages and onion. Cook, stirring occasionally and breaking up with a spatula, until the sausage begins to brown, and the onion turns translucent, 5 to 7 minutes. Add oregano, thyme, and rosemary and cook for 1 minute more. Pour in marinara sauce. Pour 1 cup water into each jar to rinse out remaining sauce; add to the saucepan. Stir together and bring sauce to a simmer.
- Reduce the heat to medium-low, and let simmer, stirring occasionally, for 1 hour. Taste for seasoning and adjust if needed. Turn off heat and reserve until needed. Before using, skim any excess fat that rises to the surface.
- While sauce simmers, bring a large pot of generously salted water to a boil. Add ziti and cook, stirring occasionally, for 1 or 2 minutes less than the directions on the package call for, about 8 minutes. Drain well and transfer into a large mixing bowl.
- Carefully add the meat sauce and stir until thoroughly combined. Let rest for 5 minutes.
- Meanwhile, preheat the oven to 375 degrees F (190 degrees C). Grease a large 9x15-inch or 9x13-inch casserole dish with a drizzle of olive oil.
- Use a slotted spoon to transfer half of the pasta and sauce mixture to the prepared dish, then use a spatula to even out into a uniform layer. Top with 1/2 of the ricotta cheese, 1/2 of the mozzarella cheese, and then 1/2 of the grated Pecorino Romano cheese, being sure to distribute evenly. Top with the rest of the pasta and sauce mixture and give the pan a little shake to settle the sauce. Repeat the cheese application.
- Bake in the center of the preheated oven until the cheese is melted and the casserole is piping hot, 30 to 35 minutes. Remove from the oven and let cool 10 to 15 minutes before serving. Top with parsley.

- Cook sausage links according to package directions; drain, cut into ¼-inch slices.
- In a large bowl, combine sausage slices, pasta, pasta sauce, water, basil, garlic, Parmesan cheese, pepper and mix well.
- Spoon mixture into a greased 9-in. x 13-in. x 2-in. baking dish.
- Arrange garlic bread slices on top of meat mixture.
- Sprinkle evenly with mozzarella cheese.
- In a small bowl, dip tomato slices into olive oil.
- Place one slice of tomato on each piece of bread.

- Cook pasta according to package directions. Drain and set aside. Meanwhile, cook sausage in a hot skillet over medium heat until golden brown on all sides. Add tomatoes, thyme and rosemary and simmer 5 minutes. Remove from heat. In a medium bowl, combine ricotta cheese, mozzarella cheese and garlic powder and mix well. - Cook ziti pasta al dente.
- In large skillet, brown the chopped onion and ground turkey. Add the minced garlic as the turkey begins to brown. Add the spaghetti sauce and simmer for approximately 15 minute.
- Preheat oven to 350 degrees.
- Butter or grease in your preferred way a 9 x 13 " baking dish.
- Layer the ingredients as follows:.
- - spread some sauce as the bottom layer to help prevent sticking.
- -add 1/2 the ziti pasta.
- - layer the slices of provolone cheese to cover the ziti.
- -add sour cream.
- -add 1/2 the sauce mixture.
- -add remaining ziti.
- -add1/2 the mozzarella cheese to cover.
- -add remaining sauce on top.
- -add remaining mozzarella to cover.
- -add parmesean on top if desired (I found it not to be necessary).
- -bake in the covered dish for 30 minutes @ 350 degrees.

- in a large saucepan heat olive oil add yellow onion and cook until tender.
- add sausage, continue to cook for 2 minutes.
- add tomatoes, oregano and basil.
- simmer sauce on low In a large bowl, combine ricotta cheese, salt,parsley and parmesan cheese.
- set aside.
- In a large pot of boling salted water, cook pasta until it is not quite al dente.
- drain pasta and combine with ricotta cheese mixture.

- Adjust oven rack to middle position; preheat oven to 475°.
- Pulse tomatoes in food processor until coarsely ground and no large pieces remain, about 12 pulses.
- Cook sausage in 12-inch ovensafe nonstick skillet over med-high heat, breaking up meat with wooden spoon, until no longer pink, about 4 minutes.
- Stir in garlic and pepper flakes and cook until fragrant, about 1 minute.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the ziti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
- While pasta is cooking, heat a large skillet over medium heat. Add the sausage, and cook and stir until brown, about 10 minutes. Drain sausage and set aside.
- Stir together the ricotta, egg, onion, garlic, and oregano in a large bowl until well combined. Stir in the drained pasta, the drained sausage, salt, pepper, and 1/2 jar of the spaghetti sauce; mix well.
- In the prepared baking dish, cover the bottom with 1/3 jar of spaghetti sauce. Layer 1/2 of the pasta mixture, 1/3 jar of spaghetti sauce, and 1/2 of the shredded cheese. Then layer the remaining 1/2 of the pasta, 1/3 of the sauce, and 1/2 of the cheese. Sprinkle with basil. Cover the dish tightly with aluminum foil.
- Bake in the preheated oven until heated through, about 20 minutes. Uncover; return to the oven and bake until cheese is melted, 5 to 10 more minutes.

- In a large mixing bowl, blend the ricotta cheese and seasonings until thoroughly mixed.

- Fill a large saucepan with water and bring to a boil.
- Meanwhile, line a large plate with paper towel. Heat a large skillet on medium-high and mist with cooking spray. Add sausage and cook, breaking up meat with a wooden spoon, until no longer pink, 7 to 9 minutes. With a slotted spatula, transfer sausage to plate and cover with 2 more layers of paper towel, pressing lightly to absorb excess fat; set aside.
- Preheat oven to 350°F. To boiling water, add kale and cook until just tender, 1 to 2 minutes. With a slotted spoon, transfer kale to a colander and set aside to drain. Return saucepan to a boil, add pasta and cook until just barely al dente (undercooked by about 1 minute). Meanwhile, line a large bowl with paper towel and transfer kale to bowl to absorb any remaining liquid. Drain pasta and set aside.
- In a separate large saucepan, melt butter on medium-low. Add garlic and cook, stirring frequently, for 1 minute, until fragrant. Gradually whisk in flour and cook, whisking constantly, for 2 minutes. Slowly whisk in 1 cup milk. Increase heat to medium-high and simmer, whisking frequently, until slightly thickened, 2 to 3 minutes. Slowly whisk in remaining 3 cups milk. Bring to a simmer and cook, whisking frequently, for 5 minutes. Reduce heat to low, add mozzarella and whisk until melted and mixture thickens, 1 to 2 minutes. Turn off heat.
- To milk mixture, add tomatoes, salt, pepper, sausage, pasta and kale and stir to combine. Transfer to a 9 x 13-inch baking dish and top with Parmigiano-Reggiano. Bake until cheese melts and sauce bubbles, 15 to 18 minutes. Let rest for 10 minutes before serving.
- (MAKE AHEAD: Prepare up to 24 hours ahead, but don't bake. Cool to room temperature, then cover and refrigerate. To serve, bake covered for 20 minutes, then uncover and bake for 15 to 20 minutes, until sauce is bubbly. You can bake this dish at home then reheat, covered, at your host's place in a 350°F oven just until warmed through.).
