ENCHIRITOS

Enchiritos image

Recipe I got from a Taco Bell dinner and now do from scratch. Much like enchiladas and very good. The recipe calls for ground beef, but I've used canned chicken, and also calls for cheddar cheese, but any cheese you prefer can be used. I've also started using diced tomatoes, shredded lettuce, cilantro, and jalapenos to top it with.

Provided by Chef Will 2

Categories     Low Cholesterol

Time 10m

Yield 8 single tortillas servings, 8 serving(s)

Number Of Ingredients 7

1 lb ground beef
1 (1 1/4 ounce) package taco seasoning
1 cup water
8 flour tortillas
1 (14 ounce) can refried beans
1 (14 ounce) can enchilada sauce
shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees F.
  • Brown the ground beef and drain off the fat. If using chicken, just throw the taco seasoning with the chicken into a skillet. Follow the taco seasoning directions for the rest of this preparation.
  • Warm the tortillas in the microwave, covered with a damp paper towel, for 1 minute.
  • Open the can of beans and place 1 tablespoon (or more, if desired) down the middle of the tortilla. Spoon 2 tablespoons (or more, if desired) of the beef or chicken on top of the beans. Roll the tortilla up, the beans and protein lengthwise, leaving both ends open. Continue until all tortillas are used.
  • Place rolled tortillas in a 13"x9" baking dish. I usually place the "seam" side down. Open the enchilada sauce and pour oven the rolled tortillas and top with as much cheese as desired. Place in the oven for approximately 10 minutes, or until cheese is melted. Top with any garnishes desired.

TACO BELL ENCHIRITO RECIPE

Taco Bell Enchirito Recipe image

Provided by Bobby

Time 30m

Number Of Ingredients 14

1lb ground beef
¼ cup all-purpose flour
1 tablespoon chili powder
1 teaspoon salt
½ teaspoon dried minced onion
½ teaspoon paprika
¼ teaspoon onion powder
1 dash garlic powder
½ cup of water
1 (16-ounce) can refried beans
10 to 12 small (fajita size) flour tortillas
½ cup diced onion
1 (10-ounce) can red enchilada sauce
2 cups shredded cheddar cheese

Steps:

  • In a medium bowl combine the ground beef, flour, chili powder, salt, dried minced onion, paprika, onion powder, and garlic powder.
  • Mix the spice mixture into the ground beef using your hands.
  • Add the water to a large skillet over medium heat and add the ground beef mixture.
  • Mix well with a wooden spoon or spatula and break the meat up as it cooks. Heat until fully cooked. The finished product should be very smooth with no large chunks of beef remaining.
  • Heat the refried beans in a medium saucepan over medium heat, or in the microwave (in a microwave safe dish) for 1-2 minutes on high.
  • Wrap the tortillas in a moist paper towel and microwave them on high for 1 minute. You can also heat them up individually by placing them into a pan over medium heat for about 15 seconds per side.
  • Spoon about 3 tablespoons of the refried beans down the center of each tortilla. Spoon about 3 tablespoons of the beef mixture on top of the beans, followed by a couple teaspoons of minced onion.
  • Fold the two sides of the tortilla over the meat and beans and flip the tortilla over onto a plate. Spoon a couple tablespoons of the enchilada sauce over the top of the tortilla and then sprinkle a couple of tablespoons of the cheddar cheese over the sauce.
  • Heat in the microwave for 30 to 45 seconds or until the cheese has melted. Repeat with the remaining tortillas.

ENCHARITOS

This is a quick and easy dish that everyone will love. It's a great meal for the family after a long day. Yummy cheesy goodness!

Provided by Sharon Whitley

Categories     Tacos & Burritos

Time 45m

Number Of Ingredients 11

1 lb ground beef
6-8 flour tortillas (not the big burrito size)
1 can(s) (16 oz) refried beans
1/2 c onion, chopped
2 clove garlic, finely chopped
2 tsp ground cumin
1 Tbsp oil
2 can(s) (10 oz) red enchilada sauce
2 c cheddar cheese, grated
salt and pepper to taste
sliced black olives and/or chopped onion for garnish, if desired

Steps:

  • 1. Add oil to skillet over medium-high heat. Add onion and garlic, stir for a few minutes until onion becomes translucent. Add ground beef. Break up with spoon and continue to do so and stir until all meat is browned. Add cumin, salt and pepper. Stir and cook for a few minutes, then taste for seasoning.
  • 2. Add refried beans, and mix to thoroughly combine. Let mixture cool for 10 minutes.
  • 3. Lay one tortilla on a flat surface and spoon 3-4 tablespoons of the mixture and spread over the tortilla. Leave a quarter inch of space around the edge. Roll up the tortilla and place in a greased 9" x 13" baking dish. Repeat with remaining tortillas. Leave a little space between the rolls if you can. The number of rolls will depend on how much filling you use in each. (Leftover meat mixture can be refrigerated and is great for nachos.) Pour enchilada sauce over the rolls and covering the rolls completely with sauce. Sprinkle on grated cheese and top with olives and/or onions, if desired. Bake at 350F, uncovered, for 20-30 minutes. It's done when the cheese is melted and the sauce is bubbling around the sides.

4 tortillas
1 cup refried beans
1 cup cheddar cheese

COPY CAT TACO BELL ENCHIRITO RECIPE

Copy Cat Taco Bell Enchirito Recipe image

Remember the Enchiritos at Taco Bell back in the day? Soft flour tortillas wrapped around taco seasoned ground beef and refried beans, topped with a flavorful red enchilada sauce and melty cheese? It's been a while since you could "make a run for the border" and order and Enchirito, but that's okay - making them at home is so much better anyway. Especially with these great tips and tricks!

Provided by Michaela Kenkel

Categories     Restuarant Copy Cat Recipes

TACO BELL ENCHIRITO COPYCAT RECIPE

Taco Bell Enchirito Copycat Recipe image

The taco bell enchirito recipe is the perfect dish to create a copycat of. Unique and rare at their restaurant, you'll be lucky to get this from their secret menu, as a result knowing how to make this from home is crucial.

Provided by Laura Ritterman

Categories     Main

Time 55m

Number Of Ingredients 28

1 1/2 tbsp masa harina
4 1/2 tsp chili powder
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp seasoning salt
1/2 tsp paprika
1/4 tsp ground cumin
1/2 tsp garlic salt
1/4 tsp sugar
1 tsp dried minced onion
1/2 tsp beef bouillon powder
1 1/3 pounds of ground beef
8 ounce of tomato Sauce
1/3 cup of Water
1/4 tsp chili powder
1 1/2 tsp cumin
1 1/2 tsp minced onions
1 tsp white vinegar
1/2 tsp garlic powder
1/2 tsp garlic salt
1/4 tsp paprika
1/4 tsp sugar
1/4 tsp cayenne pepper
4 tortillas
1 cup of refried beans
1 cup of cheddar cheese
1/4 cup of white onions (chopped)
olive slices (As per your taste)

Steps:

  • First of all, create a mixture of all the ingredients but don't mix the meat just yet.
  • Next, stir the pot to ensure that the spices have created a perfect blend.
  • Crumble the beef in a nonstick skillet until it turns brown.
  • Once it's ready, you should take it off the stove.
  • Make sure you don't keep it on the heat longer than this or you may end up ruining the taste. So, ensure you keep this in mind.
  • Get a strainer and add the meat in it. Then use hot water to rinse it.
  • Once the grease and water is drained from the beef, you should put it back in the pan. Now, stir the meat in the spice mix that contains ¾ cup of water.
  • Next, simmer it on low/medium heat for up to 20 minutes. The idea is to cook away almost all of the moisture.
  • Make sure to remove it from the stove before all of the moisture is gone.
  • Place everything in a saucepan and simmer at low heat for 20 minutes. After 20 minutes, you should take the saucepan off the stove and let it sit for a while to cool down.
