SQUID INK PASTA WITH SHRIMP AND CHERRY TOMATO SAUCE
Steps:
- Add the shrimp shells to a small pot and cover with water. Bring to a boil and allow to simmer until it has reduced by half. Strain and keep on the heat at a low simmer until ready to use.
- Add the olive oil, fennel, onions, a pinch of salt and crushed red pepper flakes in a saute pan over medium heat. Let the fennel and onions cook until translucent. Then add the tomatoes, garlic, oregano and white wine. Let it reduce until there is about 1/4 cup of liquid left. Then add the squid, shrimp and 1/2 cup of the shrimp stock. Stir in the parsley.
- Cook the fresh squid ink pasta in salted boiling water until tender, but still has a bite. Add the cooked pasta to the saute pan and toss to coat. Garnish the pasta with fennel fronds, a drizzle of olive oil and grated Parmesan.

Also, don't worry about the lumps. When enough flour has been incorporated into the egg mixture that it will not run all over the place, begin to use your hands to really get everything well combined. If the mixture is tight and dry, wet your hands and begin kneading with wet hands. When the mixture has really come together into a homogeneous mixture, THEN you can start kneading.
- When kneading, it is VERY important to put your body weight into it; get on top of the dough to really stretch it and not to tear the dough. Using the heels of your palms, roll the dough to create a very smooooooth, supple dough. When done, the dough should look VERY smooth and feel almost velvety. Kneading will usually take from 8 to 10 minutes for an experienced kneader, or 10 to 15 minutes for an inexperienced kneader. Put your body weight into it; you need to knead! This is where the perfect, toothsome texture of your pasta is formed. Get in there and have fun!
- When the pasta has been kneaded to the perfect consistency, wrap it in plastic and let it rest for at least 20 to 30 minutes. If using immediately, do not refrigerate.
- Roll and cut the pasta into the desired shape.

SQUID INK PASTA WITH SEAFOOD
This squid ink pasta with seafood is the perfect dinner for a special night. It's luxurious and refined, but still approachable enough that you'll want to make it again and again. The black squid ink gives the pasta a beautiful color, and the shrimp, clams, and squid provide a rich and savory flavor to the broth.

Steps:
- Bring a large pot of salted water to a boil. Add the squid ink pasta and cook according to package directions.
- Just before draining the pasta, reserve 1/2 cup of the pasta water. Set the drained pasta and the reserved pasta water aside for later.
- Slice half of the cherry tomatoes in half and leave the rest of them whole. Set aside for later.
- Heat 4 tablespoons of the oil in a large pot over medium-high heat (I used a Dutch Oven). Add the shallots and cook for about 3 minutes or until translucent. Add the garlic and red pepper flakes and cook for 1 minute.
- Add the clams and place the lid on the pot. Cook, keeping the pot covered and shaking occasionally for 3 to 4 minutes. Take a peak under the lid, if they are not open, cover the pot and continue to cook them. Check them every 2 to 3 minutes until all or nearly all of them are open.
- Transfer the clams to a bowl and discard any that have not opened. It's ok if some of the garlic and shallots get stuck to the clams. Leave any broth from the clams in the pot. Cover the bowl of clams to keep them warm and prevent them from drying out.
- Add the tomato paste and anchovy paste to the pot. Pour in a splash of the white wine and whisk it around until the tomato and anchovy pastes are lump-free. Stir in the whole cherry tomatoes (save the halved tomatoes for later).
- Pour in the rest of the wine, the clam juice, 1/2 cup of parsley (reserve the other half for later), thyme, salt, and pepper. Bring to a simmer and cook for 10 to 12 minutes, uncovered, until the sauce is reduced by about one-third.
- Reduce the heat to medium-low and stir in the shrimp. Cover the pot and cook for 3 minutes (if you have extra large shrimp, cook for 4 to 6 minutes).
- Add the squid, lemon zest, the remaining 1/2 cup parsley, and the halved tomatoes. Cover the pot and cook for 2 more minutes or until the shrimp and squid are cooked through (extra large shrimp may need an extra minute to cook).
- Remove the pot from the heat and stir in the clams and black squid ink pasta. Cover the pot and let it sit for 2 to 3 minutes until the clams warm up again.
- Adjust the consistency of the sauce with the reserved pasta water. Taste and season with additional salt and pepper if desired.
- Serve with lemon wedges, freshly grated parmesan cheese, chopped basil leaves, and a drizzle of good olive oil.

- Fill a large pot with water and bring to a boil. Add pasta and cook according to pasta directions. No need to add extra salt, as this pasta has a salty taste. Drain and return to the pot, tossing with 2 tablespoons butter to coat the pasta and prevent it from sticking.
- While the pasta cooks, heat a large skillet to medium-high heat. When hot, add 4 tablespoons butter. Do not allow to get too hot or the butter will burn.
- Add scallops, searing on each side for 2 minutes. Remove and set aside. Add shrimp, cooking until pink and slightly curled. Remove and set aside.
- Add remaining butter, shallots, and garlic, stirring for 2 minutes. Add flour, scraping up butter and bits to a paste.
- While stirring, pour in white wine to deglaze the pan. Bring to a boil, reducing slightly.
- Stir in lemon zest, heavy cream, crushed red pepper, Parmesan cheese, and parsley. Season with fine sea salt and pepper. Return seafood to the pan, spooning sauce over to reheat for approximately 2-3 minutes. The sauce should be a loose, creamy sauce, but not heavy.
- Divide squid ink spaghetti and seafood between bowls, spooning sauce over top. Garnish with shaved Parmesan cheese and grape tomatoes.

- Make the calamari: In a large bowl, toss the calamari with the lemon juice. Let sit for 30 minutes to help tenderize the calamari.
- While the calamari tenderizes, make the aioli: In a medium bowl, stir together the mayonnaise, garlic, white wine vinegar, lemon juice, squid ink, and salt until smooth. Transfer to a serving bowl and chill until ready to serve.
- In a large bowl, whisk together the flour, cornstarch, salt, pepper, activated charcoal, black sesame seeds, and smoked paprika.
- In a medium bowl, whisk together the buttermilk and squid ink until fully combined.
- Heat the vegetable oil in a large pot over medium-high heat until it reaches 375°F (190°C).
- Working in batches, transfer the calamari to the flour mixture and toss to coat. Transfer to the buttermilk mixture, toss to coat, then return to the flour mixture and toss until fully coated.
- Immediately transfer the calamari to the hot oil and fry for 2-3 minutes, until crispy. Using a slotted spoon, transfer to a paper towel-lined plate to drain. Repeat with the remaining calamari.
- Transfer the calamari to a serving platter. Sprinkle with the parsley and garnish with lemon wedges. Top the aioli with more black sesame seeds and serve alongside.

SQUID INK TAGLIATELLE WITH SQUID AND WHITE WINE-TOMATO SAUCE

- Add the olive oil, smashed garlic and red chile flakes to a large saute pan. Turn the heat to medium-high and allow the garlic to become fragrant and the oil heated. Once heated, add the tomatoes and oregano, and season with salt. Stir to combine. Cook until the tomatoes release their water, 2 to 3 minutes. Deglaze the pan with the white wine. Cook until the wine is bubbling and has begun to reduce, about 1 minute. Add the squid, stir to combine, and cook until the squid becomes opaque in color--be careful not to overcook it! Taste and adjust the seasoning as needed.
- Meanwhile, bring a large pot of salted water to a boil. Add the tagliatelle and cook for about 2 minutes. Remove the pasta from the water and add it directly to the sauce along with about 2 tablespoons of the pasta water, some more oregano, some grated parm and a drizzle of big fat finishing oil. Gently toss to combine.
- Plate and garnish with more grated parm.

- Make the pasta: In a large bowl, whisk together the flour and salt, then turn out onto a clean surface and make a large well in the center.
- Add the eggs, egg yolks, olive oil, and squid ink to the well and mix with a fork until combined, slowly incorporating more and more flour into the mixture by moving the fork along the edges of the well. Once almost all of the flour is incorporated, start bringing the dough together with your hands. (The dough should be malleable, but not sticky--add more flour if the dough is sticking too much to your hands or the surface. Alternatively, if it's too dry and tough, whisk another egg with 1 tablespoon of water and use your hand to sprinkle a bit of the mixture over the dough, continuing to do so until the dough is easier to knead.)
- Knead the dough for 7-10 minutes, until smooth and elastic. When you poke the dough, it should spring back. Wrap the dough in plastic wrap and let rest at room temperature for 30-60 minutes, or until it does not spring back when poked.
- On a lightly floured surface, divide into 4 equal portions. Using a pasta roller, laminate and roll out 1 portion of the dough to setting #6. Repeat with the remaining dough.
- Dust the dough sheets with flour and fold each sheet onto itself 4-5 times. With a sharp knife, cut a dough sheet into ¼-inch (6 mm) strips. Unravel and place onto a floured baking sheet. Repeat with the remaining dough sheets.
- Bring a large pot of salted water to a boil. Cook the pasta in the boiling water until al dente, about 4 minutes. Reserve ¼ cup (60 ml) of the cooking water, then drain the pasta and set aside.
- Cook the mussels: Melt the olive oil and butter together in a large pot over medium-high heat. Add the garlic, shallot and salt and cook until the garlic is fragrant and the shallot is translucent, about 5 minutes. Add the wine and olives and cook until the wine is reduced by half, about 5 minutes more. Add the mussels, cover the pot with a lid, and cook until the mussels have opened fully, about 6-8 minutes. Discard any mussels that do not open. Remove the pot from the heat.
- Add the cooked pasta to the pot with the mussels and stir until the pasta is coated in the wine reduction. Add the reserved pasta water a bit at a time until a silky sauce is created.
- Divide the pasta and mussels between 4 plates, garnish with the parsley, and serve warm.
