CHERRY BROWNIES FROM SCRATCH
I came up with this brownie recipe after being overwhelmed with cherries on our tree this year. It has the taste of a chocolate-covered cherry.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
- Mix sugar, oil, and almond extract together in a large bowl until well blended.
- Combine flour, cocoa, baking soda, and salt in another bowl; stir into sugar mixture until combined. Beat in 1/2 of the cherries using an electric mixer until moistened. Fold in remaining cherries. Pour batter into the prepared pan.
- Bake in the preheated oven until brownies spring back when gently touched, 25 to 30 minutes.

CHERRY CHEESECAKE SWIRL BROWNIES
Fudgy Betty Crocker™ brownies get the royal treatment, swirled with a tangy cheesecake filling and jeweled with tart cherries.

- Gather your ingredients and heat oven to 350°F. Spray 8-inch square pan with cooking spray.
- Make brownie batter as directed on box; pour into pan. In medium bowl, beat cream cheese, sugar and egg with electric mixer on medium speed until smooth.
- Drop heaping spoonfuls cream cheese mixture all over brownie mixture, followed by spoonfuls of cherry pie filling. Swirl into brownie batter using a few strokes of butter knife or spatula.
- Bake 35 to 40 minutes or until brownie is set and cream cheese swirls have puffed and turned slightly golden. Cool completely in pan, about 1 hour, before cutting.

EASY CHERRY CHOCOLATE BROWNIES

- Preheat oven to 350 degrees.
- Prepare brownie mix according to package directions using the oil, water, and eggs.
- Mix the chocolate chips into the batter and then fold in the cherry pie filling until combined.
- Line a 9 x 13 inch baking pan with foil and spray with non-stick cooking spray. Spread batter into the pan.
- Bake in the lined 9 x 13 inch baking pan according to package directions until a toothpick inserted in the center comes out clean. This may take a little longer than listed on the box. Cool completely on a wire rack.
- Once cooled frosting this frosting and cut into 18 squares. Makes 18 brownies.
EASY CHERRY BROWNIES
My family's favorite brownie. I get requests from friends and co-workers all the time for this recipe! If you like chocolate and cherries, you will love this recipe!

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 15x10-inch jelly roll pan.
- Stir cherry filling, cake mix, eggs, and almond extract together in a bowl by hand. Pour into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 30 minutes. Remove from the oven and let cool completely.
- While brownies are cooling, bring sugar, milk, and butter to a boil in a saucepan over medium-high heat. Stir in chocolate chips until melted. Remove from heat. Spread over cooled brownies.

FROM-SCRATCH CHERRY BROWNIES
I didn't see any recipes for cherry brownies that don't use pie filling or box mix, so I came up with my own. The cherries make the brownies very moist and add subtle fruit flavor. I bet you could use other canned or cooked fruits in this (berries, peaches, pears) with good effect. The base brownie recipe comes from "The Wise Encyclopedia of Cookery" ca. 1949 and it's still a super recipe.

- Preheat oven to 350°F
- Grease a 9" square pan.
- Melt unsweetened chocolate and butter in the microwave.
- Combine flour, baking powder, and salt in a large bowl. Whisk briefly to aerate (could sift, but I find it messier).
- In a separate bowl, beat eggs and vanilla until fluffy. Add sugar in three additions, beating well between additions.
- Add the butter/chocolate mixture to the egg/sugar mixture and mix thoroughly.
- Add the wet mixture to the dry. Stir very gently just until combined.
- Add cherries and chips and stir just until distributed.
- Pour into prepared pan. Sprinkle top with nuts if desired.
- Bake for 20-30 minutes. The edges should pull away from the pan slightly when they're done. Don't overbake.
- Note: The original recipe says 20 minutes. Mine took 30. I can't tell if my oven's off or the cherries are causing the baking time to be longer.

FUDGY CHERRY BROWNIES
When I first saw this recipe in a local newspaper years ago, I couldn't wait to try it for our guests that very night. I knew it was a winner from the first bite. These rich fudgy brownies have been making friends merry ever since!

- In a heavy saucepan or microwave, melt 1 cup chocolate chips and butter; stir until smooth. In a bowl, combine biscuit mix, milk, egg and almond extract. Stir in chocolate mixture; mix well. Fold in cherries and remaining chocolate chips., Pour into a greased 13x9-in. baking pan. Sprinkle with almonds. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out with moist crumbs and the edges pull away from the sides. Cool on a wire rack.

- Heat oven to 350 degrees.
- Spray bottom of 13"X9" pan with cooking spray.
- Beat cream cheese, sugar, cherries and one egg in medium bowl with spoon until smooth.
- Make brownie batter as directed on package; spread 1/2 of batter in pan.
- Spread cream cheese mixture over batter.
- Spoon remaining batter on top and spread gently to cover.
- Bake for 40-43 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean.
- Cool completely before cutting.
- Store covered in refrigerator.
