1 tbsp. vegetable oil
1 lb. ground sirloin
1 tbsp. Worcestershire sauce
1 tsp. kosher salt
1 tsp. ground black pepper
12 oz. cream cheese, softened
1 8 oz. bag shredded cheddar jack cheese
1 c. thinly sliced lettuce, such as romaine
1/2 c. diced tomatoes
1/4 c. diced red onions
1/4 c. chopped dill pickles
For serving: Kettle cooked potato chips or pita chips
1/3 c. mayonnaise
1 tbsp. mustard
1 1/2 tbsp. ketchup
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. smoked paprika
1 tbsp. pickle brine (juice from the jar)

Steps:

  • Preheat the oven to 375˚.
  • For the dip: Heat the oil in a medium skillet over medium-high heat. Add the ground beef, Worcestershire sauce, salt, and pepper. Cook, while breaking apart into small pieces with a wooden spoon, until lightly browned and no longer pink, about 6 minutes. Remove from the heat.
  • Spread the cream cheese to fill the bottom of a 10-inch cast-iron skillet. Top with ½ of the shredded cheese, the cooked ground beef, then the remaining shredded cheese on top. Bake for 18 to 20 minutes until the edges are bubbly. Let cool slightly, about 10 minutes.
  • For the special sauce: In a small bowl, stir together the mayonnaise, mustard, ketchup, garlic and onion powders, smoked paprika, and pickle brine.
  • Top the dip with lettuce, tomato, red onion, and pickle slices. Drizzle with special sauce. Serve with kettle-cooked potato chips or pita chips.

2 sesame seed hamburger buns
1 cup plus 1 tablespoon mayonnaise
2 cups shredded yellow Cheddar
Kosher salt and Freshly ground black pepper
1/2 cup ketchup
1/4 cup yellow mustard
10 strips bacon
1 tablespoon vegetable oil
1 large red onion, finely chopped
1 pound ground beef
3 medium tomatoes, chopped
1 cup chopped dill pickles (about 6 spears)
2 cups finely chopped romaine hearts
Corn, potato or tortilla chips, for serving

Steps:

  • Preheat the broiler. Open the hamburger buns and arrange on a baking sheet. Brush the buns all over with 1 tablespoon of the mayonnaise. Toast until golden on both sides, 1 to 2 minutes per side. Cut into very small pieces and set aside.
  • Combine the cheese, 1/2 cup mayonnaise and a pinch of salt in a food processor and process until very smooth. Transfer to a bowl, cover and refrigerate until ready to use.
  • Whisk the remaining 1/2 cup mayonnaise, the ketchup and mustard in a bowl for the sauce, cover and refrigerate until ready for use.
  • Arrange the bacon in a large nonstick skillet (do in batches if necessary) and heat over medium heat. Cook until golden brown and crispy, 4 to 5 minutes per side. Remove, let cool slightly and chop into small pieces.
  • Wipe out the skillet. Heat the oil in the skillet over medium-high heat. Add one-third of the onion and cook, stirring frequently, until soft and just beginning to brown, about 4 minutes. Add the ground beef, 3/4 teaspoon salt and a few grinds of pepper. Cook, stirring and breaking up into smaller pieces, until browned and cooked through, about 4 minutes. Stir in a 1/3 cup of the prepared ketchup sauce and cool the beef mixture to room temperature.
  • Let the cheese mixture soften at room temperature, about 30 minutes, before building the dip. Layer the dip in a medium, straight-sided 3-quart clear glass trifle bowl or your favorite serving dish. Spread out the cheese mixture and then top, in even layers, with the buns, tomatoes, beef, the remaining ketchup sauce, the pickles, the remaining onions and the bacon.
  • Wrap and refrigerate until chilled, at least 1 hour and up to overnight. Top with the shredded lettuce right before serving. Serve with chips for dipping.

1 pound ground beef
1 small onion, finely chopped
2 tablespoons tomato paste
1/2 teaspoon garlic powder
One 15-ounce jar salsa con queso
1/3 cup half-and-half
1 cup shredded yellow Cheddar
1/4 cup mayonnaise
2 tablespoons pickle relish
2 tablespoons ketchup, plus more for serving
Kosher salt and freshly ground black pepper
Chopped onion, dill pickle chips, thinly shredded iceberg lettuce, diced tomato and yellow mustard, for garnish
Round white tortilla chips, for serving

Steps:

  • Preheat the oven to broil.
  • Heat a medium cast-iron skillet over medium heat and add the oil. When the oil is hot, add the ground beef and cook, crumbling it with a wooden spoon, until beginning to brown, about 3 minutes. Add the onion and cook until the onion is softened and the beef is cooked through, 7 to 8 minutes. Clear an empty spot in the middle of the skillet, add the tomato paste and toast the paste for a minute. Sprinkle with the garlic powder and stir to coat the meat. Stir in the salsa con queso and half-and-half. Bring to a simmer and cook, stirring, until smooth, about 1 minute. Sprinkle the middle of the dip with the Cheddar, leaving a small border around the edge without cheese. Broil until the top is bubbly and browned in places, 1 to 2 minutes.
  • Mix together the mayonnaise, relish and ketchup in a small bowl. Season with salt and pepper.
  • Top the dip with a sprinkle of onions and pickle chips, a mound of lettuce and tomatoes and drizzles of the mayo-relish sauce, ketchup and mustard. Serve with tortilla chips for dipping.

2 cups mild salsa
2 cups sour cream
8 ounces Velveeta cheese

Steps:

  • Set oven to broil.
  • Brown ground beef, drain.
  • In a 9x9 baking pan, spread ground beef evenly in the bottom.
  • Spoon in salsa, making sure to cover all of ground beef.
  • Add sour cream smoothing out over salsa (it may mix with salsa giving a pinkish hue, but this is ok).
  • Slice velveeta in thin squares and layer over the top of salsa in rows.
  • Place in oven to broil until cheese melts. Make sure you watch the top so that the cheese doesn't burn.
  • ( You can also put it in on 350, but it takes much longer).
  • Enjoy with Tostitos Scoops!

His favorite food is cheeseburgers, and since I couldn't make cheeseburgers for his family party, I turned his fave dish into a easy-to-make dip! It's a simple recipe that can be expanded on with a variety of ingredients. Serve dip with tortilla chips (scoop-style chips are easiest), potato chips, or thin slices of baguette bread.

3 tablespoons extra-virgin olive oil
1 small sweet onion (such as Vidalia®), minced
4 cloves garlic, minced
1 ½ pounds lean ground beef
¾ cup chili sauce
3 tablespoons Worcestershire sauce
1 tablespoon garlic powder
1 tablespoon chili powder
1 pinch salt and ground black pepper to taste
½ cup pasteurized process cheese spread (such as Cheez Whiz®)
1 small head iceberg lettuce, finely shredded
2 tomatoes, chopped
2 Kosher dill pickles, chopped

Steps:

  • Heat olive oil in a skillet over medium heat. Cook and stir sweet onion and garlic in the hot oil until the onion is tender, about 5 minutes. Break ground beef into the skillet; cook and stir until browned and crumbly, 5 to 7 minutes more.
  • Reduce heat to medium-low. Stir chili sauce, Worcestershire sauce, garlic powder, chili powder, salt, and pepper into the beef mixture. Pour cheese spread into the skillet; cook and stir until the cheese spread is melted evenly through the beef mixture, 3 to 5 minutes. Transfer beef mixture to a serving dish.
  • Layer lettuce, tomatoes, and pickles atop the beef mixture to serve.
