1 cup granulated sugar
1/4 cup cocoa powder
1/4 cup milk
3 tablespoons butter
1/2 teaspoon vanilla

Steps:

  • In a saucepan over med heat combine butter, sugar, milk, and cocoa.
  • Melt, and bring to a boil.
  • When it has bubbles all the way across the top of surface now time.
  • Boil hard one minute only.
  • Remove from heat, add vanilla.
  • let cool slightly, stir and beat until its like very thick corn syrup, and sticky to bottom of pot. I always use a spoon, so I can tell how it is thickening up.
  • Pour over brownies or cake.

375g good quality dark chocolate
375g butter, cut into pieces
500g caster sugar
6 medium eggs
225g plain flour
140g good quality dark chocolate
50g butter, cut into pieces
icing sugar for dusting

Steps:

  • Butter and line a 30cm x 21cm tin. Preheat the oven to 180C/160C fan/gas 4. Break up the chocolate with the butter and melt in the microwave on medium for about 5 minutes, stirring halfway through.
  • Beat the sugar and eggs in a bowl. Stir in the melted chocolate, add the flour and beat well. Pour into the tin and bake for 40-45 minutes, or until the top looks papery and feels slightly wobbly. Leave to cool in the tin.
  • If you're making the topping, break up the chocolate with the butter and melt in the microwave on medium for about 1 minute. Stir until smooth then spread over the cake. Dust with icing sugar and cut into squares.

1/2 cup chopped nuts (optional)
3 tablespoons butter, softened

Steps:

  • Stir oil or melted butter, sugar and vanilla together in large mixer bowl.

1/2 cup/100 grams granulated sugar
1 1/3 cup/170 grams all-purpose flour

3 large eggs
1 1/2 teaspoons vanilla extract

Steps:

  • Heat the oven to 350 degrees. Lightly butter a 10-inch oven-safe skillet. Fill a medium pot with about 1 1/2 inches of water, and bring to a simmer.   • Bake the brownie until the surface appears set: A toothpick inserted into the center should come out with a few moist crumbs attached, 30 to 33 minutes. Let cool completely.
  • While the brownie cools, make the ganache: Place the chocolate in a medium, heat-safe bowl. Bring the cream to a simmer in a small pot over medium heat. Pour the hot cream over the chocolate and let it stand undisturbed for 15 seconds. Stir the ganache until the chocolate is melted and the mixture is smooth. Let cool slightly.
  • Once the brownie is cool, spread the ganache onto the brownie in an even layer. (It will have thickened slightly. If it's not thick enough, you can refrigerate it for 10 minutes or so; if it thickens too much, you can microwave it in 10-second bursts in a microwave-safe bowl until it's spreadable again.)   • Remove the cream mixture from the heat, and stir in 5 ounces of baking chocolate and 1/2 cup butter, stirring to melt and blend the chocolate. Add 1 teaspoon vanilla extract; whisk until smooth. Place the frosting in the refrigerator and stir every few minutes until the frosting is chilled and thick, about 30 minutes. Frost the cooled brownies, and cut into squares.
