4 carrots, peeled, sliced (about 1/2 lb)
4 cups cauliflower florets, small
3 cups broccoli florets, small
2 teaspoons vegetable oil
3 green onions, sliced thin
1 (8 ounce) container PHILADELPHIA Chive & Onion Cream Cheese Spread
1/3 cup 2% low-fat milk

Steps:

  • In a steamer, cook carrots and cauliflower for 3 or 4 minutes.
  • Add broccoli and steam another 4 or 5 minutes or until vegetables are just crisp tender.
  • Meanwhile, heat vegetable oil in a small saucepan over medium-high heat.
  • Add onions and cook, stirring constantly for 1 minute.
  • Add cream cheese spread and milk, cooking and stirring constantly for 2 to 3 minutes or until cream cheese is melted.
  • Transfer vegetables to a serving dish.
  • Top with the cream cheese sauce.

Delicate, elegant and very easy to prepare. The creamy sauce and colorful delicious julienned vegetables compliment the delicate flavor of poached salmon. This is one of my favorite salmon recipes. I hope it will become yours as well. Cooking something à la nage translates as "while swimming". In culinary terms that means poaching food in broth flavored with white wine, vegetables, and herbs.

1 1/2 lbs salmon fillets, cut into 2-3 pieces
1 large zucchini
2 leeks
2 large carrots
2 medium parsnips
1/4 cup heavy cream
1 lemon, juice of
1 teaspoon salt
1/2 teaspoon pepper
1 salmon head, tail and fins
8 cups water
1 large onion
1 large carrot
1 parsley root
2 celery ribs
1 tablespoon Old Bay Seasoning
4 -5 black peppercorns
1 tablespoon salt
1/2 bunch parsley, and 1/2 of dill tied together with culinary rope

Steps:

  • Fill a large heavy-bottomed pot with cold water. Add the salmon head, tail and fins, peeled onion, peeled carrot, celery, parsley root and the whole black peppercorns. Bring the water to a boil over medium-low heat, skim off the foam, add parsley and dill bunch, white wine, Old Bay spice, lemon juice and salt and simmer for 25 to 30 minutes. Strain with chinois and keep it simmering at the lowest heat. There should be no bubbles.
  • Julienne leeks, zucchini, parsnip and carrots. Melt butter over medium heat in the skillet and sauté vegetables for 5 minutes stirring occasionally. Add a couple of ladles of fish stock, salt and pepper and continue to cook for another 5 minutes.
  • Carefully submerge the fish into the stock. Make sure that the heat is low and stock is not boiling with bubbles. The fish should be poached, not boiled. Poach the fish for about 13-15 minutes.
  • Add heavy cream to sautéing vegetables and let it reduce for another 2-3 minutes. Add a little bit of fish stock if needed to achieve creamy consistency. Remove from the heat and mix in chopped dill.
  • Place vegetables in the center of the plate, carefully place the fish on top and ladle over some of the sauce. Sprinkle with some chopped dill. Enjoy it with a glass of nice crisp Chardonnay or Pinot Griggio.

1/2 tablespoon parsley, roughly chopped

Steps:

  • Prepare all the vegetables and add the vegetables, from the carrots through to the broccoli, to a steamer and steam until they are just tender, 6-8 minutes.
  • In the last three minutes, add the zucchini and mushrooms, and for the last minute add the baby spinach leaves.
  • Place the tofu, cornflour and tamari in a blender or food processor, and add any herbs and spices you want to add at this stage (optional). Process while gradually adding the water until the mixture reaches a thick consistency.
  • Transfer the sauce to a saucepan and carefully heat, while stirring, until it comes to the boil. If the sauce becomes too thick, add a little water, until it reaches a consistency you are happy with.
  • Simmer for 1 minute.
  • Combine the sauce with the vegetables, basil and parsley, and serve with a rice or pasta dish.
  • NOTES: Tamari can be used in any recipe instead of stock cubes. It is available in health food stores and larger supermarkets.

1 carrot, peeled and diced
1 stalk celery, diced
1 leek, halved and chooped
1 medium portabello mushroom, chopped
3 garlic cloves, miced
1/2 cup chicken broth
1/2 cup milk or 1/2 cup cream
1/2 cup vermouth
2 tablespoons dry sherry
2 tablespoons sour cream
1 sprig fresh rosemary
1 bay leaf
salt and pepper
1 dash thyme, and red pepper flakes to taste
3 tablespoons butter
3 tablespoons flour
approx. 1 lb. pasta

Steps:

  • - In a large sauce or saute pan, brown pork.
  • - As it cooks add leek, carrot and celery.
  • - Add garlic and mushroom.
  • - After the mushrooms have released most of their water add chicken stock.
  • - Bring to light boil and return to low simmer, begin to slowly add cream and vermouth. Stir in sour cream.
  • - Add rosemary and bay leaf, thyme and red pepper.
  • - As sauce is simmering, make a roux in a separate pan. Melt butter and slowly whisk in flour to do this. You should have a paste.
  • - Add this slowly to the sauce to thicken it.
  • - In the meantime, cook noodles as directed.
  • After sauce has thickened, add sherry if desired. Let simmer for a few minutes and then top the noodles with it!
  • - I put fresh parsley on top and thought it was a very nice addition!

MEDITERRANEAN VEGETABLES IN A CREAMY WHITE WINE SAUCE

I like lots of sauce with this dish, but if you prefer less, you could reduce the white wine and cream slightly. For a vegetarian version, simply use a vegetable stock cube instead of a chicken one.

1 large green bell pepper, diced
1 large red bell pepper, diced
1 white onion, diced

Steps:

  • In a skillet over medium heat, warm up the olive oil.
  • Add the green and red bell peppers, onion and garlic and cook, stirring, for 4 minutes.
  • Add the zucchini and mushrooms and cook, still stirring, for a further 4 minutes.
  • Add the dry white wine and simmer uncovered for 4 minutes. By the end of the 4 minutes, the wine should have reduced a little.
  • Crumble in the chicken stock cube, stir it in and simmer for 2 minutes.
  • Add the cream. Turn up the heat a little and simmer for 5 minutes, until the sauce has reduced and thickened.
  • Serve over pasta, rice, baked potatoes, chicken or as a side dish.

3/4 cup green peas
1 onion, finely chopped
1 tomatoes, finely chopped

1 tablespoon butter

  • Cut the French beans and carrots into long strips.
