2 tablespoons yeast
2 tablespoons sugar
3/4 tablespoon salt
2 cups hot water (not boiling)
2 tablespoons olive oil
4 -5 cups flour
cornmeal (optional)

Steps:

  • Using a Bosch or Kitchen Aid mixer, put yeast, sugar, salt, hot water, and olive oil in the mixer.
  • Gradually add the flour until the dough has sufficiently scraped everything off the sides of the mixing bowl. Continue to mix on low for 8-10 minutes.
  • Remove and cover with plastic wrap - let the dough rise until doubles in size (about 30 minutes).
  • Grease 2 cookie sheets and sprinkle with corn meal.
  • Punch down the dough and make tennis ball-size dough balls (about 8-12, depending on how large you want your bread bowls).
  • Place on cookie sheet with no more than 6 to a cookie sheet (don't let them touch). Let them rise for another 30 minutes.
  • Bake each cookie sheet at 400 for 18 minutes.

1 tablespoon olive or vegetable oil
1 teaspoon dried basil leaves
1/2 teaspoon garlic salt

Steps:

  • Lightly grease outsides of six 10-ounce custard cups with shortening (do not use cooking spray). Place cups upside down on large cookie sheet.
  • Divide dough into 6 equal pieces. Shape each piece into a ball, then pat into 6- inch round. Place rounds over bottoms of custard cups. Brush dough with oil. Sprinkle with basil and garlic salt. Cover and let rise in warm place 20 minutes.
  • Heat oven to 350°. Bake 16 to 20 minutes or until golden brown. Cool 5 minutes; remove from cups and place right side up on wire rack. (Interiors of bread bowls may be slightly moist.)
  • To serve, place warm or cooled bread bowls in individual shallow soup or pasta bowls. Spoon soup, stew or chili into bread bowls.

2 cups warm water, (+ 4 TBS water)
2 packages active dry yeast (or 4 1/2 tsp fast acting yeast)
1/2 cup butter, melted
2 TBS granulated sugar
3 tsp salt
6 1/2 cups bread flour
1 egg white

Steps:

  • Using a stand mixer or large mixing bowl, add warm water and sprinkle in yeast. Let dissolve for a few minutes until yeast becomes foamy (You only have to do this step if you are using regular yeast, not fast acting. If you are using fast acting, just sprinkle it in the water and move to next step, no waiting needed).
  • Add melted butter, sugar and salt and mix until combined. Gradually add flour.
  • Once combined, allow your mixer to knead the dough for about 5 minutes (you could do this by hand if you weren't using a mixer).
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 40 minutes.
  • Punch dough down, and divide into 6 equal portions. Shape each portion into a 4 inch round loaf. Place loaves on lightly greased baking sheets sprinkled with cornmeal. Cover with damp towel and let rise in a warm place, free from drafts, until doubled in bulk, about 35 minutes.
  • Preheat oven to 400 degrees F. In a small bowl, beat together egg white and 1 tablespoon water; lightly brush the loaves with half of this egg wash. Sprinkle with any seasonings you may like (I use thyme and oregano).
  • Bake in preheated oven (400 degrees F) for 15 minutes, remove, and brush with remaining egg mixture, and bake 10 to 15 more minutes or until golden. Cool on wire racks.
  • To make bowls: Cut a 1/2 inch thick slice from top of each loaf; scoop out centers, leaving 3/4-inch-thick shells. Fill bread bowls with hot soup and serve immediately.

11 grams (2 ¼ teaspoon) kosher salt
¾ teaspoon instant yeast or 1 teaspoon active dry yeast
398 grams (1 ¾ cup, 420 ml) water, at about 120-130°F/ 49-54°C
Canola or vegetable oil, for greasing the bowl

Steps:

  • In a large bowl, mix together the flour (540 grams, 4 ½ cups), salt (11 grams, 2 ¼ teaspoon), yeast (¾ teaspoon instant yeast or 1 teaspoon active dry yeast), and warm water (398 grams, 1 ¾ cup) until combined. Keep mixing until all of the flour is mixed throughout.
  • Dust a clean work surface with flour, and knead the dough for about 8-10 minutes until smooth and elastic. Alternatively, you can do this in a stand mixer fit with the dough hook attachment at medium speed for about 6-8 minutes. Add more flour if the dough is too sticky.
  • Grease a clean large bowl with oil, and place the dough in the bowl, turning to coat all sides. Cover the bowl with a towel and let rise in a warm spot until doubled in size, about 1 hour.
  • Gently deflate the dough by pressing in the center. Place the dough on a clean work surface and cut it into 4 equal pieces using a bench knife or sharp knife.
  • Shape the dough into balls by holding them in your hand and pulling down on the edges to create a seam at the bottom and pinch the seam closed. Then roll the ball under your hand to seal the seam on the bottom. Place the shaped balls on a sheet pan lined with parchment paper and cover with a towel to rise for 1 hour.
  • While the dough is proofing, preheat the oven to 425°F/ 220°C.
  • Lightly dust the balls with flour and use a sharp knife or bread lame to slash the top of the balls with an X pattern. Bake for 25-30 minutes or until golden brown and crusty.
  • Let the bread cool slightly. Use a pairing knife to cut a circle out of the top of the bowls. Use a fork to scoop out some of the extra bread so that you have enough room in the bowl to fill. Reserve the extra bread pieces for dipping.
  • Fill up the bowls with your favorite soup or dip.
  • Unused bowls can be cooled completely, wrapped well in plastic wrap and stored in the freezer. Rewarm in a 325°F/ 165° C oven until heated through.

1 tablespoon white sugar
1 ¾ cups warm water (110 degrees F)
2 cups whole wheat flour
2 cups bread flour
2 teaspoons salt
1 egg white
2 tablespoons water

Steps:

  • In a small mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  • In a large mixing bowl, combine the yeast mixture with the whole wheat flour, salt and one cup of the bread flour; stir well to combine. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and supple, about 8 minutes.
  • Place into a lightly oiled bowl, and turn to coat the whole surface with oil. Cover, and let rise in a warm place until doubled, about 45 minutes.
  • Punch down the dough, and let rest 10 minutes. Divide into 4 balls. Place on cookie sheets, and flatten into disks. Cover and let rise until doubled, about 30 minutes. Preheat oven to 375 degrees F (190 degrees C).
  • Lightly beat the egg white with the water and brush the risen loaves with this mixture. Bake at 375 degree F (190 degree C) for 40 to 50 minutes. When done bread should sound hollow when thumped on bottom. Remove from oven, and let cool.
  • Cut a circle out of the top of each loaf, and remove that part of the crust. Either remove the soft bread beneath, or compress it to form a bowl.

4 round bread rolls (I used sourdough)
4 tbsp butter (melted)
2 garlic cloves (large - crushed)
4 tbsp parmesan cheese (finely grated)
1 tbsp finely chopped fresh parsley (optional)

Steps:

  • Pre heat oven to 180c (350f).
  • Slice the top off the bread rolls using a serrated knife and set these "lids" aside.
  • Using your fingers, scoop out the centre of the roll and reserve for another use (making your own breadcrumbs!).
  • Combine the melted butter (4 tbsp), crushed garlic (2 large cloves), salt (if using) and finely chopped parsley (1 tbsp if using) in a small bowl. Using a pastry brush, brush this butter mixture around the inside of the rolls, plus both sides of the lids you set aside earlier.
  • Sprinkle the grated parmesan onto the cut side of the lids (these will be garlic bread dippers) and around the inside of the rolls. Tilt the rolls slightly as you go, the parmesan will stick to the butter.
  • Place the bowls and lids (cut side up) onto a lined baking tray and bake for 20 minutes or until golden.

You don't have to go all the way to Panera to enjoy your favorite soup in a bread bowl. With my step by step instructions I will show you how to make these easy bread bowls at home! You can eat hot soup as well as chili out of them! The best part is you can make them large or make them small!

2 1/2 Cups Warm Water
1/4 Cup Sugar
2 Tbs Active Dry Yeast
1/4 Cup Vegetable Oil
3 tsp Salt
6 Cups All Purpose Flour

Steps:

  • Dissolve the yeast and sugar in the warm water in the mixing bowl of a stand mixer. (You can make this bread by hand too, it will just take some muscle). Let stand about 5 minutes until foamy.
  • Mix in the oil, salt, and flour using a dough hook. Once all the flour is mixed in, knead at a medium speed for 5 minutes (10 minutes by hand). Cover dough with a dish towel and set in a warm place.
  • Over the next hour, knead the dough about 3 times approximately every 10 minutes. It doesn't have to be exactly every 10 minutes, just make sure to have kneaded the dough at least 4 times over the next hour.
  • After that hour let the dough rise until doubled. This will take about 30 minutes.
  • Once the dough has doubled, dump it out onto a lightly floured surface and divide into pieces.
  • 4 Pieces for 4 large bread bowls about the same size after baking, as you buy from the store.
  • 6 Pieces for 6 Medium bowls about the size of cantaloupes after baking.
  • 8 Pieces for 8 Small bowls about the size of grapefruits after baking.
  • Shape the pieces into smooth balls and place on a baking sheet lined with parchment paper or lightly sprayed with non-stick cooking spray.
  • Cover to let rise until doubled.
  • While the bowls are rising, place an empty aluminum (never glass) baking sheet on the very bottom rack of your oven.
  • Make sure the other rack is in the center of your oven.
  • Preheat the oven to 375 degrees.
  • After placing the bread on the center oven rack to bake, before closing the oven door, throw a ½ cup of water onto the now super hot baking sheet you placed on the bottom oven rack and quickly close the oven door.
  • This creates steam that sets that crusty, chewy crust you want.
  • Bake at 375 for 20-25 minutes.
  • Loaves should be golden brown and sound hollow when thumped.
  • Cool at least 20 minutes before cutting the top off, hollowing the center, filling with soup and eating.

  • In a large bowl or the bowl of a stand mixer, mix together the warm water, yeast, sugar, oil, salt, and 2 cups of flour. Add the remaining flour, 1/2 cup at a time, until the dough pulls away from the sides of the bowl and is smooth, but still slightly tacky. Knead the dough until smooth and elastic.   • Turn it out onto a lightly floured surface and form into a ball. Then place into a large greased bowl, turning once to grease the top. (I just use the same mixing bowl– remove the dough, grease it with nonstick spray or olive oil, put the dough back in.) Cover the bowl with plastic wrap and place it in a warm environment to rise until doubled, about 90 minutes. Tip: For the warm environment on a particularly cold day, heat your oven to 150°F (66°C). Turn the oven off, place the dough inside, and keep the door slightly ajar. This will be a warm environment for your dough to rise. After about 30 minutes, close the oven door to trap the air inside with the rising dough. When it’s doubled in size, remove from the oven.
  • Once doubled in size, punch down the dough to release any air bubbles. Remove dough from the bowl and turn it out onto a lightly floured surface. Punch down again to release any more air bubbles if needed.
