- Using a Bosch or Kitchen Aid mixer, put yeast, sugar, salt, hot water, and olive oil in the mixer.
- Gradually add the flour until the dough has sufficiently scraped everything off the sides of the mixing bowl. Continue to mix on low for 8-10 minutes.
- Remove and cover with plastic wrap - let the dough rise until doubles in size (about 30 minutes).
- Grease 2 cookie sheets and sprinkle with corn meal.
- Punch down the dough and make tennis ball-size dough balls (about 8-12, depending on how large you want your bread bowls).
- Place on cookie sheet with no more than 6 to a cookie sheet (don't let them touch). Let them rise for another 30 minutes.
- Bake each cookie sheet at 400 for 18 minutes.

- Lightly grease outsides of six 10-ounce custard cups with shortening (do not use cooking spray). Place cups upside down on large cookie sheet.
- Divide dough into 6 equal pieces. Shape each piece into a ball, then pat into 6- inch round. Place rounds over bottoms of custard cups. Brush dough with oil. Sprinkle with basil and garlic salt. Cover and let rise in warm place 20 minutes.

- Using a stand mixer or large mixing bowl, add warm water and sprinkle in yeast. Let dissolve for a few minutes until yeast becomes foamy (You only have to do this step if you are using regular yeast, not fast acting. If you are using fast acting, just sprinkle it in the water and move to next step, no waiting needed).
- Add melted butter, sugar and salt and mix until combined. Gradually add flour.
- Once combined, allow your mixer to knead the dough for about 5 minutes (you could do this by hand if you weren't using a mixer).
- Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 40 minutes.
- Punch dough down, and divide into 6 equal portions. Shape each portion into a 4 inch round loaf. Place loaves on lightly greased baking sheets sprinkled with cornmeal. Cover with damp towel and let rise in a warm place, free from drafts, until doubled in bulk, about 35 minutes.
- Preheat oven to 400 degrees F. In a small bowl, beat together egg white and 1 tablespoon water; lightly brush the loaves with half of this egg wash. Sprinkle with any seasonings you may like (I use thyme and oregano).
- Bake in preheated oven (400 degrees F) for 15 minutes, remove, and brush with remaining egg mixture, and bake 10 to 15 more minutes or until golden. Cool on wire racks.

- In a large bowl, mix together the flour (540 grams, 4 ½ cups), salt (11 grams, 2 ¼ teaspoon), yeast (¾ teaspoon instant yeast or 1 teaspoon active dry yeast), and warm water (398 grams, 1 ¾ cup) until combined. Keep mixing until all of the flour is mixed throughout.
- Dust a clean work surface with flour, and knead the dough for about 8-10 minutes until smooth and elastic. Alternatively, you can do this in a stand mixer fit with the dough hook attachment at medium speed for about 6-8 minutes. Add more flour if the dough is too sticky.
- Grease a clean large bowl with oil, and place the dough in the bowl, turning to coat all sides. Cover the bowl with a towel and let rise in a warm spot until doubled in size, about 1 hour.
- Gently deflate the dough by pressing in the center. Place the dough on a clean work surface and cut it into 4 equal pieces using a bench knife or sharp knife.
- Shape the dough into balls by holding them in your hand and pulling down on the edges to create a seam at the bottom and pinch the seam closed. Then roll the ball under your hand to seal the seam on the bottom. Place the shaped balls on a sheet pan lined with parchment paper and cover with a towel to rise for 1 hour.
- While the dough is proofing, preheat the oven to 425°F/ 220°C.
- Lightly dust the balls with flour and use a sharp knife or bread lame to slash the top of the balls with an X pattern. Bake for 25-30 minutes or until golden brown and crusty.
- Let the bread cool slightly. Use a pairing knife to cut a circle out of the top of the bowls. Use a fork to scoop out some of the extra bread so that you have enough room in the bowl to fill. Reserve the extra bread pieces for dipping.
- Fill up the bowls with your favorite soup or dip.
- Unused bowls can be cooled completely, wrapped well in plastic wrap and stored in the freezer. Rewarm in a 325°F/ 165° C oven until heated through.

- In a small mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
- In a large mixing bowl, combine the yeast mixture with the whole wheat flour, salt and one cup of the bread flour; stir well to combine. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and supple, about 8 minutes.

- Pre heat oven to 180c (350f).
- Slice the top off the bread rolls using a serrated knife and set these "lids" aside.
- Using your fingers, scoop out the centre of the roll and reserve for another use (making your own breadcrumbs!).
- Combine the melted butter (4 tbsp), crushed garlic (2 large cloves), salt (if using) and finely chopped parsley (1 tbsp if using) in a small bowl. Using a pastry brush, brush this butter mixture around the inside of the rolls, plus both sides of the lids you set aside earlier.
- Sprinkle the grated parmesan onto the cut side of the lids (these will be garlic bread dippers) and around the inside of the rolls. Tilt the rolls slightly as you go, the parmesan will stick to the butter.

- Dissolve the yeast and sugar in the warm water in the mixing bowl of a stand mixer. (You can make this bread by hand too, it will just take some muscle). Let stand about 5 minutes until foamy.
- Mix in the oil, salt, and flour using a dough hook. Once all the flour is mixed in, knead at a medium speed for 5 minutes (10 minutes by hand). Cover dough with a dish towel and set in a warm place.
- Over the next hour, knead the dough about 3 times approximately every 10 minutes. It doesn't have to be exactly every 10 minutes, just make sure to have kneaded the dough at least 4 times over the next hour.
- After that hour let the dough rise until doubled. This will take about 30 minutes.
- Once the dough has doubled, dump it out onto a lightly floured surface and divide into pieces.
- 4 Pieces for 4 large bread bowls about the same size after baking, as you buy from the store.
- 6 Pieces for 6 Medium bowls about the size of cantaloupes after baking.
- 8 Pieces for 8 Small bowls about the size of grapefruits after baking.
- Shape the pieces into smooth balls and place on a baking sheet lined with parchment paper or lightly sprayed with non-stick cooking spray.
- Cover to let rise until doubled.
- While the bowls are rising, place an empty aluminum (never glass) baking sheet on the very bottom rack of your oven.
- Make sure the other rack is in the center of your oven.
- Preheat the oven to 375 degrees.
- After placing the bread on the center oven rack to bake, before closing the oven door, throw a ½ cup of water onto the now super hot baking sheet you placed on the bottom oven rack and quickly close the oven door.

- Pour the warm water over yeast in the bowl of a stand mixer fitted with a dough hook attachment. Or, if you don’t have a stand mixer, a regular large mixing bowl. Whisk together and allow to sit for 5 minutes. Cover the bowl with a towel. The mixture should be frothy and foamy after 5 minutes.
