2 cups flour
1 egg, beaten
2 tsp dried parsley
2 tsp garlic powder
2 tsp dried oregano
salt & pepper to taste
1 cup beer
1 large eggplant, cut in 1/4" slices
1 cup oil

Steps:

  • In a shallow bowl combine flour, egg, parsley, garlic powder, oregano, salt & pepper. Gradually add beer, stirring, until a thick batter forms. Add more or less beer depending on the desired consistency of the batter. In a heavy frying pan, heat oil (adjust amount, depending on the size of your pan, so that you have a couple of inches of oil) over medium-high heat. When oil is hot, dip eggplant in batter and fry, turning once to brown evenly on both sides. Drain on paper towels.

Dip:
8 ounces chive and onion cream cheese
1 tablespoon chopped fresh dill
1 English cucumber, cut into chunks
1 to 2 teaspoons fresh lemon juice
Kosher salt and freshly ground black pepper

Eggplant:
2 eggplant, peeled and cut into fry-length spears (avoid the seeded center)
Vegetable oil, for brushing
1 cup all-purpose flour
1 tablespoon Greek seasoning blend
Batter:
2 cups all-purpose flour
2 tablespoons Greek seasoning blend
Zest of 2 lemons
Kosher salt
About 12 ounces beer
Peanut or vegetable oil, for frying
Lemon wedges, for squeezing
Kosher salt

Steps:

  • For the dip: In a food processor, add the cream cheese, dill, cucumber and 1 teaspoon of the lemon juice and pulse until smooth. Taste and add more lemon juice if needed. Season with salt and pepper. Refrigerate until ready to serve.
  • For the eggplant: Place the eggplant spears on a baking sheet and lightly brush with the oil just to coat. In a large bowl, whisk together the flour, Greek seasoning, a pinch of salt and a few grinds of pepper. Add the eggplant in batches and coat with the flour mixture, shaking to remove the excess, then remove to a plate.
  • For the batter: In a large bowl, whisk together the flour, Greek seasoning, lemon zest and a nice pinch of salt until combined. Slowly whisk in the beer until you achieve a pancake batter consistency; you may not use all of the beer. Allow the batter to rest 5 minutes. If it thickens, loosen with a bit more beer.
  • Heat a fryer filled with oil to the proper level or a pot with about 2 inches of oil to 365 degrees F.
  • In batches, dunk the flour-coated eggplant spears into the batter, shake off the excess and gently place in the oil. Fry until golden brown, 4 to 6 minutes, making sure to maintain an oil temperature around 350 degrees F. Remove the eggplant to a paper towel-lined plate and immediately spritz lightly with lemon juice and sprinkle with a pinch of salt. Serve immediately with the chilled dip.

1 (9-inch) eggplant (about 3 inches wide; 1 1/4 lb)
1/4 lb ground pork (not lean)
2 tablespoons finely chopped scallion greens
1 teaspoon minced peeled fresh ginger
1 1/2 tablespoons soy sauce
1/4 teaspoon salt
3 to 4 cups peanut or vegetable oil for frying
1 cup all-purpose flour
1 large egg, lightly beaten
3/4 cup water

a deep-fat thermometer

Steps:

  • Cut off 1 1/2 inches from bottom of eggplant and discard. Move knife 1/4 inch from cut side and cut almost but not all the way through eggplant (this is the pocket). Move knife 1/4 inch from pocket cut and cut slice free from eggplant. Make 7 more slices with pockets in same manner.
  • Stir together pork, scallion, ginger, soy sauce, and salt in a bowl with a fork. Spread 1 tablespoon filling in each eggplant pocket.
  • Heat 1/2 inch oil in a 10-inch heavy skillet over moderate heat until it registers 360°F on thermometer (see cooks' note, below).
  • Meanwhile, whisk together flour, egg, and water in a bowl until batter is smooth. Dip 4 eggplant slices, 1 at a time, into batter, shaking off excess to leave a thin coating, and fry, turning over once, until eggplant is tender when pierced with a fork and batter is pale golden, 4 to 5 minutes total. Transfer to paper towels to drain. Return oil to 360°F, then coat and fry remaining 4 slices in same manner. Drain briefly on paper towels and serve immediately.
