Steps:

  • Combine pork sausage and spicy pork sausage together in a bowl using your hands. Form mixture into meatballs, about 1 tablespoon each.
  • Fry meatballs in a skillet over medium heat until browned and completely cooked through, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Transfer meatballs to a large bowl and add 1/2 of the orange juice concentrate; gently toss to coat, adding more if needed to completely coat.
  • Put meatballs in a slow cooker and add the remaining orange juice concentrate; turn on Low setting to keep warm before serving.

  • To reheat: Let a container of the meatballs and sauce thaw in the refrigerator overnight. Transfer them to a microwave-safe container, and microwave in 2-minute increments, gently stirring after each, until the meatballs are heated through.

What an easy recipe, and only 4 ingredients. This was on the cover of the newest issue of Kraft's "What's Cooking" magazine. I did add minced garlic and some Italian seasoning....just couldn't help myself :) I baked the meatballs on a rack to eliminate excess fat. Two sauce options were given as serving suggestions. Steps:

  • Preheat oven to 400*F. Line 2 large pans with foil. Spray pan and rack (if using) with cooking oil.
  • Mix together all ingredients, and form into 32, 1-1/2" balls.
  • Place meatballs on the pan (or rack if using) and bake for 16 - 18 minutes, or until done. (160*).
  • Tomato-Basil Cream Sauce:.
  • Mix 1-1/2 cups pasta sauce, 1/4 cup light cream cheese spread, and 2 tbsp chopped fresh basil in a large skillet. Cook on medium-low heat for 3 minutes or until heated through, stirring occasionally. Add 16 hot meatballs and stirr to evenly coat. Sprinkle with 1/4 cup grated Parmesan cheese before serving.
  • Creamy Brown Gravy:.
  • Mix 1 cup beef gravy, 1/4 cup light cream cheese spread and 2 tbsp chopped fresh parsley in a large skillet. Continue with the directions as given for the tomato basil sauce, omitting the Parmesan.

1/2 cup grated Romano cheese
1/2 teaspoon finely minced garlic

2 tablespoons olive oil
1 pound spaghetti
1 tablespoon butter
3/4 cup olive oil
3/4 cup minced garlic
2 (1 pound 8-ounce) cans of crushed, peeled tomatoes with their juice
2 tomato cans of water
1 teaspoon ground pepper
2 tablespoons chopped fresh basil
2 heaping teaspoons salt
Sugar to taste
1 tablespoon chopped parsley

Steps:

  • Meatballs: In a bowl mix together the milk and egg. Add mixture to bowl of bread cubes. Toss to coat. Let the bread stand for 15 minutes. Mash the bread cubes and add to a 1 pound of ground beef, grated Romano, garlic, and parsley. Mix together. Add salt and pepper to taste With wet hands form walnut size balls. Brown the meatballs lightly in olive oil. Add meatballs to 6 cups sauce bubbling in pot. Simmer 45 minutes Tomato sauce: Heat oil in a casserole. Add garlic and stir until lightly golden. Then add the crushed tomatoes with their juice, 2 tomato cans of water, the ground pepper, chopped parsley, chopped fresh basil and salt. Then taste it. If it seems a little acidic, add a little sugar Bring to a boil and simmer, stirring occasionally, for 45 minutes.
