10 bacon strips, diced
1/3 cup chopped onion
1 package (16 ounces) hot roll mix
1 egg, lightly beaten

Steps:

  • In a skillet, cook bacon and onion over medium heat until bacon is crisp and onion is tender; drain on paper towels., Prepare roll mix according to package directions. Turn the dough onto a floured surface; knead until smooth and elastic, about 5 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 40 minutes., Divide dough into 18 pieces. On a floured surface, roll out each piece into a 5-in. circle. Top each with 1 tablespoon of bacon filling. Fold dough around filling, shaping each piece into a small loaf; pinch edges to seal. Place seam side down on greased baking sheets. Cover loosely with plastic wrap coated with cooking spray. Let rise in a warm place for 20-30 minutes., Brush egg over buns. Bake at 350° for 20-25 minutes or until golden brown. Remove from pans to wire racks. Serve warm. Refrigerate leftovers.

8 slices (about 8 oz.) bacon
4 large eggs
2 tablespoons milk
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1 tablespoon unsalted butter
1 (8 oz.) tube refrigerated crescent roll dough
1/4 cup shredded cheddar cheese

Steps:

  • Bake or fry the bacon according to its package directions. Cool. Blot grease away with paper towels. Chop or use your hands to crumble the bacon into very small pieces.
  • Add the eggs, milk, salt, and pepper to a large bowl. Whisk until the eggs are well scrambled. Add the butter to a medium skillet and place over medium heat until the butter is melted. Add the eggs to the skillet. Cook the eggs, stirring occasionally, for 5 minutes until the eggs are done (160 degrees Fahrenheit).
  • Preheat oven to 375 degrees Fahrenheit.
  • Unroll and separate the crescent roll dough into 8 triangles. Gently stretch out the dough. Push the center of each triangle down into the center of a muffin cup in a nonstick muffin tin. The 3 points of the triangle should be sticking out of the top of the muffin cup.
  • Divide the cooked eggs between the crescent rolls. Use the back of a spoon to smash the eggs down into an even flat layer. Top the eggs with the bacon. Top the bacon with the shredded cheese.
  • Fold the points of the crescent roll over the top of the filling, trying to cover as much of the filling as possible. Pinch the dough together where it touches.
  • Bake for 12-13 minutes.
  • Cool for 5 minutes before removing from the muffin tin.* Serve warm.

1 (8 ounce) package cream cheese, softened
1 pound sliced bacon, cut in half

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut each slice of white bread in half horizontally. Spread with cream cheese. Tightly roll each piece of bread with half a piece of bacon. The bacon should be on the outside of the bread. Secure with toothpicks.

¼ teaspoon salt
½ teaspoon ground black pepper
3 tablespoons barbeque sauce
½ teaspoon garlic powder
½ pound bacon, cut into 1/4 inch pieces
1 medium onion, finely chopped
¾ cup shredded Cheddar cheese
6 hamburger buns, split

Steps:

  • In a large mixing bowl, mix together the ground beef, salt, black pepper, barbeque sauce and garlic powder using your hands. Taking a small handful at a time (approximately 1/4 pound), shape into 12 patties. Lay patties out on a cookie sheet and cover with plastic wrap; place patties in the refrigerator.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown, about 5 minutes. Remove bacon from skillet with a slotted spoon and drain on paper towels. Turn the heat down to medium and pan fry the onions in the remaining bacon drippings until soft and translucent and just beginning to brown. Mix together onions and bacon in a small bowl.
  • Prepare a grill or large skillet for medium heat.
  • As the grill heats, pull beef patties out of the refrigerator; top 6 of the patties with 1- 1/2 tablespoons of the bacon and onion mixture each, and sprinkle with shredded cheese. Top each with one of the remaining patties and press the edges together to seal.
  • Grill or pan fry the stuffed and sealed patties until cooked through, 2 to 3 minutes per side. Serve on hamburger buns with condiments of your choice.

3/4 pound bacon , cut into 1/4-inch pieces
1 medium onion, finely chopped
For the Dough:
1 cup milk
4 ounces unsalted butter
1/4 cup sugar
1/2 teaspoon salt
1 (0.25-ounce) packet active dry yeast (2 1/4 teaspoons)
3 large eggs, slightly beaten, at room temperature
3 cups all-purpose flour
For the Egg Wash:
1 large egg yolk , at room temperature
2 teaspoons water

Steps:

  • Gather the ingredients.
  • In a large skillet, place bacon and onion and barely cover with water. Place the lid on the pan and let simmer until water has evaporated.
  • Transfer entire contents of the skillet (fat and all) to a container and refrigerate until cool.
  • Gather the ingredients.
  • Scald the milk and mix in butter, sugar, and salt. Cool to 110 F.
  • Dissolve yeast in this milk mixture, stirring well.
  • Transfer milk-yeast mixture to a large bowl or stand mixer. Add eggs and flour and beat vigorously with a Danish dough whisk, Batter Blender, wooden spoon or the paddle attachment of a mixer until smooth.
  • Cover with greased plastic wrap and let rise until doubled.
  • Punch down dough and let rise again.
  • Turn dough out onto a lightly floured surface. Cut it in half and work with one half at a time keeping the other half covered.
  • Roll the dough 3/8-inch thick. Cut out 2- to 3-inch circles of dough with a round cookie cutter.
  • Place a tablespoon or so of cooled bacon mixture in center of dough circle.
  • Fold edges over to completely cover the filling and shape into a ball.
  • Place filled dough balls seam-side down on a parchment-lined baking sheet. Repeat with re-rolled scraps and the other half of dough.
  • Cover rolls with greased plastic wrap and let rise until almost doubled in bulk.
  • Heat oven to 375 F.
  • When rolls have risen nicely, remove the plastic wrap and bake 15 to 20 minutes.
  • When rolls are lightly tan, brush them with the egg wash of 1 egg yolk beaten with 2 teaspoons water.
  • Return to oven and bake until golden brown.
  • Serve hot, at room temperature or reheated in the oven.

1 1/2 cups shredded Monterey Jack
6 slices cooked bacon, finely chopped

Steps:

  • Preheat the oven to 425 degrees F.
  • To make the dough, whisk together the flour, sugar, baking powder, baking soda and salt in a deep bowl.
  • In a separate bowl or measuring cup, whisk together the buttermilk and 6 tablespoons of the melted butter. Pour over the dry ingredients, and stir together with a wooden spoon until it forms a shaggy dough.
  • Dump the dough onto a lightly floured surface. Using your fingertips, gently press the dough out into a 12-by-8-inch rectangle. Sprinkle the cheese on top, leaving a 1/4-inch border. Evenly sprinkle the bacon over the cheese. Roll the dough into a log, starting from the longest (12-inch) side nearest you. Pinch the ends closed. Cut into 8 equal pieces.
  • Using a pastry brush, use 1 tablespoon of the butter to coat the bottom and sides of an 8-inch round cake pan. Arrange the rolls, cut-side down, in the pan. Gently press them down with your fingertips to flatten slightly. Brush the tops of the buns with the remaining melted butter.

2 cups + 1 tablespoon flour ((268 grams))
1/4 teaspoon salt
1 teaspoon sugar
1 tablespoon olive oil
1/2 cup freshly grated Parmesan cheese (divided) ((50 grams))
1 1/2 teaspoons active dry yeast
1/2 cup + 2 tablespoons warm water* (not hot) divided ((148 grams))
1 egg beaten
1/2 cup grated mild Provolone cheese or Medium Cheddar Cheese ((50 grams))
1/4 - 1/2 cup shredded Parmesan, Cheddar etc ((25-50 grams))

Steps:

  • In the bowl of a stand up mixer mix add the flour, salt, sugar, olive oil, 3 tablespoons Parmesan cheese (20 grams) and yeast then add a 1/4 cup of water (58 grams) then start to mix with a fork.
  • Then add the beaten egg, remaining Parmesan cheese and Provolone and remaining water. Combine with a fork just until the dough starts to come together. Then add the dough hook attachment and knead for approximately 5 minutes or until smooth and elastic. (see below for hand kneading instructions). Remove dough to a lightly floured flat surface.
  • Form the dough into a ball, place in lightly oiled medium-sized bowl (make a couple of slashes on top with a knife). Cover well (I use a folded tablecloth) and let rise in a draft free area for 1-2 hours or doubled in bulk. (mine actually sat for 3 hours).
  • Remove the dough from bowl and on a lightly floured flat surface knead dough a couple of minutes, shape into 6 bun shapes, score with a knife and place on a lightly oiled parchment paper lined cookie sheet, cover and let rise for 1 hour.
  • Pre-heat oven to 400° (200° celsius).
  • Brush buns with milk and sprinkle with additional Parmesan cheese or grated Provolone. Bake for approximately 30 minutes. Let cool or eat warm. Enjoy!

1 cup / 235 ml warm water
1/3 cup / 80 ml canola oil
3 tbsp yeast
1/4 cup / 50 g sugar
1 beaten egg
1/2 tsp kosher salt
3 1/2 cups / 435 g unbleached all purpose flour
1 Tablespoon chopped, cooked & drained bacon
1 tablespoon grated cheese
1 Teaspoon grated cheese per roll
1 tablespoon milk

Steps:

  • First we get the bread ready: Combine first 4 ingredients in the bowl of the mixer and wait 20 minutes. The mixture will become foamy.
  • Then, using the hook attachment for the mixer add the remaining ingredients. Knead for 10 - 15 minutes
  • Allow to rise in the bowl, covered with a cloth, in a draft-free place. (Do not place on oven top, just leave the bowl on your kitchen work top). About 30 - 45 minutes
  • Whilst rising, make up the filling (fry off bacon & drain & grate cheese) and allow to cool.
  • Once it has doubled, flour your hands very well and also the work top, and pull off pieces of the dough, slightly smaller than a tennis ball. Don't be frightened to add some flour if your dough is very sticky. It will be fine. Place your piece of dough on the work top and flatten as in the picture. Add a heaped teaspoon of filling in the center. Pull the dough from the sides to enclose the filling and squash the edges together so they are sealed, and reshape if necessary into a roll shape. Turn upside down (so the seal is on the bottom of the tray).
  • Place the rolls apart from each other on a floured tin / tray. Allow to rise again on the cookie sheet, until the dough balls are touching (like in the picture). Rising will take about 30 - 45 minutes
  • Carefully brush the tops of the rolls with milk and sprinkle some cheese over them
  • Bake at 400 F / 200C / Gas 6 for 20-30 minutes (until golden brown).
  • Eat warm or cold. I love them when they are still warm!

1/2 cup whole milk
2 1/4 teaspoons active dry yeast (one 1/4-ounce package)
2 tablespoons sugar
4 tablespoons unsalted butter, melted, plus more for the bowl and plastic wrap
1 large egg yolk
2 3/4 cups all-purpose flour, plus more for the work surface
1 teaspoon kosher salt
5 slices bacon, cut into 1/4-inch pieces
2 tablespoons all-purpose flour
3/4 cup milk
1 large egg yolk
1 cup shredded Cheddar
2 tablespoons chopped fresh chives
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter, at room temperature, for the pan
4 tablespoons unsalted butter, at room temperature
2 tablespoons chopped fresh chives
2 tablespoons grated Parmesan

Steps:

  • For the dough: Warm the milk and 1/2 cup water in a medium saucepan over low heat until it is about 100 degrees F (but no more than 110 degrees F). Remove the saucepan from the heat, and sprinkle the yeast over the the liquid. Sprinkle a pinch of the sugar over the top, and set aside without stirring until foamy, about 5 minutes. Then whisk in the butter and egg yolk.
  • Whisk together the flour, remaining sugar and salt in a large bowl. Make a well in the center, and stir in the yeast mixture with a wooden spoon until you have a thick and slightly sticky dough. Turn the dough onto a floured work surface, and knead until soft and elastic, about 6 minutes. Shape the dough into a ball.
  • Brush the inside of a large bowl with butter. Add the dough ball, turning to coat lightly. Cover the bowl with plastic wrap, trace a circle the size of the dough ball on the plastic and note the time. Let the dough rise in a warm place until doubled in size, about 1 hour 30 minutes.
  • Turn the dough out of the bowl, and knead briefly to release excess air; re-form it into a ball, and return it to the bowl. Lightly butter a large piece of plastic wrap, and lay it on the dough. Cover the entire bowl tightly with the rest of the plastic, and refrigerate for 4 hours or overnight to let the dough proof.
  • For the filling: Cook the bacon in a large nonstick skillet over medium heat until browned and crisp, about 5 minutes. Transfer the bacon to a small bowl, and remove all but 1 tablespoon of the fat from the skillet. Return the skillet to medium heat. Whisk the flour into the bacon fat, and cook, whisking, until light brown, about 1 minute. Slowly whisk in the milk, and continue whisking until thickened, about 1 minute more. Transfer the mixture to a medium bowl, add the egg yolk, Cheddar, chives, cooked bacon, 1/2 teaspoon salt and a few grinds of pepper and stir to combine. Let cool completely. (The filling will firm up a bit, but if it's too warm, it will be difficult to form the buns.)
  • To fill and form the buns: Butter a 9-by-13-inch baking pan with 2 tablespoons softened butter. Turn the dough onto a floured work surface, and press it flat. Roll it into a 10-by-18-inch rectangle, with a long edge facing you. Spread the filling evenly over the dough, leaving a 1-inch border on the side opposite you. Starting from the side facing you, roll the dough up into a tight roll. Lightly brush the 1-inch border with water, and continue rolling to seal the roll. Fold the ends in just a bit, and if any spots look thicker than others, even out the roll with your hands.
  • Cut the roll every 1 1/2 inches with a serrated knife, to make 12 buns. Place the buns cut-side down (except for the end pieces) in the prepared pan, spacing them 1 inch apart. Cover the buns loosely with plastic wrap, and set aside in a warm place to rise until the buns double in size, leaving no gaps in between, 1 hour 30 minutes to 2 hours.
  • For the topping: Stir the butter, chives and Parmesan in a small bowl; set aside.
  • Position an oven rack in the center of the oven, and preheat to 350 degrees F. Bake the buns until they're golden brown and the tops spring back when pressed lightly, 25 to 30 minutes. Spread the topping evenly over the buns, and return them to the oven for 5 minutes more. Let them cool in the pan for 10 minutes before serving.

1 tbs olive oil

60 g (1/2 cup) breadcrumbs
1 tsp salt

Steps:

  • Preheat oven to 200 degrees celsius. Line two baking trays with baking paper and set aside.
  • Lay the puff pastry sheets onto the bench and allow to defrost.
  • Add the olive oil to a frying pan over medium heat. Add the bacon, onion and garlic and cook for 5 minutes or until soft and fragrant. Place on to paper towel to remove any excess oil. Set aside to cool.

  • Roll the pastry over the mixture, placing the seam face-down. Cut the roll into 4 equal pieces.

This is from my husband's "Grannie" passed on to my mother-in-law, now to me. Use day or two old French bread or any other crunchy crusted bread. My husband LOVES them on English Muffins. I also tried this on Frito's "scoops"...oooooh, yummy!!

1 lb shredded sharp cheddar cheese
7 ounces tomato sauce
1/2-3/4 teaspoon garlic powder, to taste
1/4 cup olive oil
1 small green pepper
4 ounces chopped black olives
2 loaves Italian bread or 9 English muffins, halved (or 1 bag of Frito's scoops)

Steps:

  • Finely chop green pepper (in food processor is GREAT).
  • Drain green pepper VERY well.
  • Drain black olives VERY well.
  • Mix all together.
  • Let stand, covered, in refridgerator for 3 or more hours.
  • Pre-heat oven 400 degrees.
  • Spread cheese mixture on bread or muffins within 1/4" from edges or scoop with Frito's scoops.
  • Place on cookie sheet.
  • Bake 10-15 minutes, till bubbly.
  • Remove, cool slightly-- cheese IS HOT!
  • ENJOY!
