A perfect salad for leftover BBQ, boiled, broiled or baked chicken. A very crunchy salad with a tasty sweet Asian-style dressing. The kids love it too! The Chinese rice noodles are of the cellophane type and can be found in the Asian section of most grocery stores. They are often in rectangle form and in clear packaging.

2 tablespoons brown sugar
2 teaspoons soy sauce
1 tablespoon sesame oil
¼ cup vegetable oil
3 tablespoons rice vinegar
1 (8 ounce) package dried rice noodles
1 head iceberg lettuce - rinsed, dried, and chopped
4 boneless chicken breast halves, cooked and shredded
3 green onions, chopped
1 tablespoon sesame seeds, toasted

Steps:

  • Prepare the dressing 30 minutes ahead of time by combining the brown sugar, soy sauce, sesame oil, salad oil, and rice vinegar in a salad dressing carafe.
  • To prepare the Chinese rice noodles, heat a skillet with a few tablespoons of oil and break off a little bit of the noodles and add them to the skillet and fry them. They will puff up in the skillet, so only add a few at a time. As they begin to puff up, remove and drain them on paper towels. Be sure to cook long enough as the under cooked noodles will be like eating needles. Once cooked, add them to the salad mixture.
  • In a large bowl combine the iceberg lettuce, cooked and shredded chicken, green onions and toasted sesame seeds. Let chill about 10 minutes, and just before serving add the cooked rice noodles. Serve in salad bowls and offer the dressing in a pourable container so your family can add as much dressing as they want. You can also pour the dressing over the top of the salad, toss, and serve immediately.

2 (3 ounce) packages ramen noodles, crushed
1 cup blanched slivered almonds
2 teaspoons sesame seeds
½ cup butter, melted
1 head napa cabbage, shredded
1 bunch green onions, chopped
¾ cup vegetable oil
¼ cup distilled white vinegar
½ cup white sugar
2 tablespoons soy sauce

Steps:

  • In a medium skillet over low heat brown ramen noodles, almonds, and sesame seeds with melted butter or margarine. Once browned, take off heat and cool.
  • In a small saucepan bring vegetable oil, sugar, and vinegar to boil for 1 minute. Cool. Add soy sauce.
  • In a large bowl, combine shredded napa cabbage and chopped green onions. Add the noodle and soy sauce mixture. Toss to coat. Serve.

This is a staple dinner in my home. It's extremely quick, easy, and cheap to make. To make life super easy buy a rotisserie chicken and make this the next day from the leftovers.

2 cups diced chicken
1 head green cabbage, shredded
3 green onions, chopped
1 (3 ounce) package oriental flavored ramen noodles, do not cook
1/3 cup rice wine vinegar
1/3 cup vegetable oil
1/4 cup sugar
1 tablespoon soy sauce
1 seasoning packet from the ramen noodles
salt and pepper
1 tablespoon sesame seeds

Steps:

  • Combine the chicken, cabbage, and onions in a large bowl. Crush the dry noodles into small pieces and combine in salad.
  • In a separate bowl or dressing container, combine all ingrediants for the dressing and mix well. Pour over salad and toss.
  • Hints: You can add any combination of extra veggies to this salad. I have used pea pods, oranges, water chestnuts, avocados, etc. You can also adjust the fat by adding less oil and more vinegar. You may need to add extra sugar though.

2 cups thinly sliced store-bought rotisserie chicken (about 2 small chicken breasts)
1/2 cup slivered almonds, toasted** see Cook's Note
1 tablespoon toasted white or black sesame seeds*
1/4 cup peanut or vegetable oil
2 tablespoons low-sodium soy sauce
2 tablespoons rice vinegar*
1/2 teaspoon granulated sugar

Steps:

  • 1/2 cup chow mein noodles, for garnish
  • For the salad: Using a vegetable peeler, shave the carrot and add to a large salad bowl. Stir in the cabbage, lettuce, pepper, Thai basil, chicken, almonds, and sesame seeds.
  • For the dressing: In a small bowl, whisk together the oil, soy sauce, vinegar, and sugar until smooth. Season with salt and pepper, to taste, if using.
  • Pour the dressing over the salad and toss well. Garnish with the chow mein noodles and serve.

Quick and easy Asian chicken salad with teriyaki salad, mandarins, lettuce and homemade teriyaki sauce!

1/3 cup tamari sauce or soy sauce
1/4 cup rice vinegar
1/3 cup water
2 tablespoons sesame seed oil
1/4 cup packed brown sugar
2 large chicken breasts (portioned into halves)
1 head of Romaine lettuce (shredded)
1/3-1/2 red cabbage (sliced)
1 large carrot (grated)
2-3 green scallions (chopped)
small bunch cilantro (chopped)
1 can mandarins (drained)
crispy chow mien noodles
slivered almonds
sesame seeds (optional)

Steps:

  • Preheat the oven to 400F. First, prepare the sauce. In a small saucepan, combine all ingredients for glaze: soy sauce, sesame seed oil, water, brown sugar and rice vinegar. Bring the sauce to a simmer over medium-low heat and cook for about 15 minutes until glaze is reduced in half.
  • Next, preheat a medium frying pan over medium heat. Add a splash of olive oil and brown the chicken breast on both sides, about 4 to 5 minutes per side. Pour in half of the prepared glaze into the pan. Transfer the pan into the oven to finish cooking the chicken.
  • Bake for 15-18 minutes or until internal temperature reaches 165F. Turn the half way through cooking to ensure even cooking and seasoning. If glaze reduces too quickly in the oven, add a small amount of water. Thicker cuts of chicken may take longer to cook.
  • Meanwhile, toss together all the remaining salad ingredients in a large bowl; add chow mien crispy noodles and almonds to your liking.
  • Once the chicken is ready, let it rest for about 5 minutes, then slice it into thin pieces. Place the chicken on top of salad and dress with the remaining prepared glaze. Garnish with sesame seeds if desired. Serve salad while chicken is warm for best taste!

  • Combine the chicken and ginger in a medium saucepan and cover with water by 1 inch. Bring to a boil over medium-high heat, then reduce the heat to medium and simmer until the chicken is cooked through, about 10 minutes. Drain and transfer the chicken to a cutting board.
  • Meanwhile, make the dressing: Whisk the lime juice, peanut oil, brown sugar, fish sauce and Sriracha in a small bowl; set aside.
