APPLE SYRUP (APPELSTROOP)
Apple syrup is exactly what it says on the jar (so to speak); i.e., syrup made from apples, and it's tart and fruity, full of apple goodness and you can use it in myriad ways.

Steps:
- Add the apple juice, lemon juice, star anise and cinnamon to a saucepan.
- Boil on a medium-high heat and reduce down to 1/4 of the original volume, stirring occasionally.
- This can take an hour or two.
- Remove the star anise pods.
- Now add the sugar and boil until the sugar is dissolved.
- The apple syrup is ready when it coats the back of a spoon but still drips off like honey.
- Pour the apple syrup into a clean jam jar. Apple syrup keeps for quite a long time. Tips: If the apple syrup has cooked for too long it may go hard in the jar. If this happens, you'll simply have to put it in the microwave for a minute before using, so it'll turn runny again. Therefore, it's probably best to keep it in a container that can go in the microwave if needed. Soak your saucepan in hot tap water and the gloopy syrup residue will simply dissolve. No need to scrub!

- Using a juicer, juice the apples. Allow the juice to sit for 5 minutes so the foam rises to the top. Scrape off as much of the foam as you can so you are left with only juice.
- Pour the apple juice through a cheese cloth into a wide frying pan or saucepan. Bring it to a simmer.
- Let it simmer on medium heat for about an hour stirring occasionally. Scrape off any dregs accumulating not the sides of the pan with a spoon.
- After about an hour the syrup should have reduced by about 5/6ths but it will still be still runny. Drop a spoonful onto a cold plate and leave it to sit for a minute. Run a finger through the syrup on the plate. If it leaves a line that doesn't run back into the middle, the syrup is ready.

- Stir all ingredients together in a medium-sized pot. Cover and cook on low heat, stirring occasionally, for 2 hours or so until apples have reduced (and your house smells like an apple-y-cinnamon-y heaven).
- Remove pot from stove and let cool, uncovered, for 15 minutes or so. Puree apple mixture with an immersion blender (you could also use a regular blender or food processor, but I love the immersion blender!) until it’s smooth and buttery.
- If you want to thicken your apple butter even more after you’ve pureed it, just return it to the stove over low heat and let it cook down until it’s reached your desired level of thickness. I generally cook the apple butter for an additional 30 minutes to an hour – it all depends on the apples you started with! Just keep an eye on it and tailor the process to suit your tastes.
- Serve apple butter warm or let it cool and keep it in an airtight container in the fridge for up to a week.

- In a 2-quart sauce pot, over medium heat, lightly boil the apple cider to reduce it to 1 cup. Stir as needed. It may be necessary to stop periodically and measure the cider in order to see when it has been reduced to 1 cup.
- Meanwhile, in a medium bowl, whisk together the white sugar, brown sugar, cinnamon, ginger, cloves, allspice and nutmeg. When the apple cider has been reduced, whisk the sugar and spice mixture into the apple cider.
- Add the butter and stir well until butter has melted. Simmer syrup lightly for 2 minutes, whisking constantly. Remove pot of syrup from heat and allow to cool. Use immediately or store in an airtight, covered jar in the refrigerator for up to two weeks. May also be frozen for several months until ready for use. If freezing, be certain to leave head space to allow for expansion of frozen product.
- Take the wrapping off of each candy cane. Break each candy cane into several pieces and place in a food processor fitted with the chopping blade. Process candy canes until powdered or at least in very small bits. There should be approximately 1 cup of candy cane powder. Optional—Place broken candy canes in a sturdy plastic bag. Put the bag on a cutting board and crush candy canes with a rolling pin or heavy bottomed pot.
