WASABI CRUSTED CHICKEN BREASTS
Adapted from Bon Appetit. This is absolutely "to die for!" Looks fab, but is quick and easy to prepare. Very gourmet!

Steps:
- Combine breadcrumbs, wasabi powder, salt, and pepper.
- Place beaten eggs in pie dish.
- Dip chicken in egg, then in breadcrumb mixture.
- Turn to coat completely.
- Heat 2 tablespoons peanut oil in heavy large skillet over medium-high heat.
- Sauté 2 chicken breasts until golden and cooked through, about 3 minutes per side.
- Transfer to platter.
- Repeat with remaining oil and chicken.
- Add teriyaki sauce, sake, and chicken broth to skillet and bring to boil.
- Scrape up browned bits.
- Drizzle sauce over chicken.
- Sprinkle with sliced green onions and serve.

YELLOWFIN TUNA WITH WASABI CREAM
Steps:
- In a spice grinder, coarsely grind peppercorns. Coat the tuna with the peppercorns, pressing them into the flesh of the fish. Add oil to a hot saute pan. Sear the tuna in the saute pan, for about 1 minute per side. Remove tuna from the pan and slice into 1/4 inch thick slices. In a saucepan, combine the soy sauce and orange juice and bring to a boil. Boil the soy sauce mixture until reduced by 70 percent and has achieved a syrup consistency. Cool. Whip the cream. Fold in the wasabi powder. Drizzle a little orange soy sauce onto each slice of tuna. Top with a little wasabi cream.
MONGOLIAN KICKIN' WINGS WITH CREAMY WASABI DIPPING SAUCE
Steps:
- For the dipping sauce: Combine the mayonnaise, sour cream, cilantro, lime juice and wasabi in a small bowl and season with salt and pepper. Keep the sauce in the fridge until ready to serve.
- For the wings: Cut the meat of the drumettes at the base of the bone and pull the meat down to form lollipops.
- In a saucepan, combine the honey, sweet soy sauce, sambal chili sauce, vinegar, Sriracha, ginger, low-sodium and regular soy sauce, garlic, black pepper and salt. Bring the mixture to a simmer over medium heat and cook until thickened a bit. Remove from the heat and transfer to a large bowl.
- Fill a large, heavy pot just over halfway with oil. Heat the oil over medium-high heat until a deep-fry thermometer inserted in the oil registers 350 degrees F. Fry the wings in batches until golden brown and cooked through, 8 to 10 minutes. Immediately toss the hot wings with the sauce.
- Serve the wings with the dipping sauce on the side.
ASIAN SALMON CAKES WITH SESAME-WASABI CREAM

- In a medium bowl, gently combine the salmon, bread crumbs, egg, cilantro, cumin, and 2 tablespoons of the mayonnaise until combined. Shape mixture into 4 patties, each about 1-inch thick.
- In a small bowl, add the sesame oil and wasabi paste to the remaining 1/4 cup mayonnaise and mix well. Set aside.
- Heat the olive oil in a large skillet over medium heat. Add the salmon cakes and cook until golden brown and cooked through, 3 to 5 minutes per side.
- Serve the cakes with sesame-wasabi cream spooned over the top (1 tablespoon per salmon cake).

- In a large saucepan, cover the chicken breasts with water and bring to a gentle simmer; cook over moderately low heat until the chicken is white throughout, about 12 minutes.
- Transfer the poached chicken breasts to a plate and let stand until cooled slightly, about 10 minutes.
- Meanwhile, in a small bowl, whisk the mayonnaise with the rice vinegar, wasabi powder, Asian sesame oil and 1 1/2 tablespoons of water and season with salt and pepper.
- In a large serving bowl, toss the lettuce with the Asian pear slices, cucumber, scallions, bean sprouts and 2/3 cup of the wasabi dressing.
- Slice the chicken breasts crosswise 1/4 inch thick and lay the slices on top of the salad.
- Spoon the remaining wasabi dressing over the chicken breasts, sprinkle with the chopped wasabi peas and.
- Serve at once.

- In sauce pan on medium heat add butter.
- Stir in cream, lemon juice, shallots and tamari sauce and boil for 4 minutes.
- Remove from heat and let sit for 2 minutes.
- Add wasabi paste and mix well.
- Serve with fish or as a condiment for asian foods.
