OBATZDA (BEER CHEESE)



Obatzda (Beer Cheese) image

Number Of Ingredients 9

8 ounces Camembert or Brie, at room temperature, chopped into large chunks
1 stick (8 tablespoons) unsalted butter, at room temperature
1/4 cup wheat beer
1/4 cup heavy cream
1/4 cup chopped fresh chives, plus more for topping
1 teaspoon smoked paprika, plus more for topping
1/2 teaspoon ground caraway seeds, optional
1 small yellow onion (or 1/2 large), chopped
Kosher salt and freshly ground black pepper

Steps:

  • Combine the cheese, butter, beer, cream, chives, paprika, caraway if using, onion and some salt and pepper in a food processor and blend to combine until smooth. Transfer to a serving bowl. Taste and adjust the salt and pepper as needed. Top with additional paprika and chives.

1 loaf (1 pound) rye bread
1 tablespoon butter
2 pounds processed cheese, cubed
1 package (8 ounce) cream cheese, softened
3 tablespoons prepared horseradish
1 tablespoon prepared yellow mustard
1 tablespoon (or to taste) garlic salt
1/2 can (1/2 ounce) beer, at room temperature

Steps:

  • Cut a thin slice off the top of bread loaf; hollow out a bowl in the loaf. Slice the removed bread into small pieces and assemble around the bread bowl on a platter.
  • Melt the butter in a saucepan over medium-low heat. Add the cheese food, cream cheese, horseradish, mustard, and garlic salt to the melted butter and stir to combine. Slowly add the beer while stirring until you reach your desired consistency. Continue heating and stirring until all the cheese has melted, 10 to 15 minutes.
  • Pour the mixture into the bread bowl while hot to serve.

Tried about 5 different beer cheese recipes, and just couldn't find exactly what I was looking for. I finally found one on the McCormick website, I believe, that I jazzed up a bit. Wonderful with pretzels!

8 ounces sharp white cheddar cheese
4 ounces cream cheese, room temp
1/3 cup beer (I use either light beer or a pale ale)
1 teaspoon Worcestershire sauce
1 teaspoon chili powder
1/2 teaspoon ground mustard
1/4 teaspoon crushed dried cayenne pepper
1 teaspoon minced garlic
1 teaspoon italian seasoning

Steps:

  • In food processor, blend cheddar, cream cheese, beer, worcestershire, chili powder, mustard, red pepper, and garlic.
  • Blend for 5 minutes, or until creamy.
  • Add in parsley, blend 1 more minute.
  • Pour into bowl, cover, and chill in refrigerator.
  • Cheese will firm.
