3 cups chopped peeled apples
2 cups fresh or frozen cranberries
3 tablespoons all-purpose flour
1 cup sugar
TOPPING:
3 packets (1.51 ounces each) instant oatmeal with cinnamon and spice
3/4 cup chopped pecans
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/2 cup butter, melted
Whole cranberries for garnish
Vanilla ice cream, optional

Steps:

  • In a large bowl, combine first four ingredients and mix well. Place in a 2-qt. baking dish; set aside. For topping, combine oatmeal, nuts, flour, sugar and butter in another bowl. Mix well; spoon evenly over fruit mixture. Bake, uncovered, at 350° for 50-60 minutes or until fruit is bubbly and tender. Garnish with cranberries. Serve warm with ice cream if desired.

3/4 pound bulk Italian sausage
2 celery ribs, finely chopped
1 small onion, finely chopped
6 garlic cloves, minced
1 can (14-1/2 ounces) chicken broth
1/2 cup butter, cubed
1 package (12 ounces) seasoned stuffing cubes
1-1/2 cups chopped apples
1 cup dried cranberries
1/2 cup slivered almonds
1-1/2 teaspoons dried sage leaves
1-1/2 teaspoons dried thyme
1/8 teaspoon pepper
Dash salt
1 to 1-1/2 cups apple cider or juice

Steps:

  • Preheat oven to 350°. In a Dutch oven, cook sausage, celery, onion and garlic over medium heat until sausage is no longer pink; drain. Add broth, stirring to loosen browned bits from pan. Add butter; cook and stir until butter is melted. Remove from the heat., Stir in stuffing cubes, apples, cranberries, almonds, sage, thyme, pepper, salt and enough cider to reach desired moistness. Transfer to a greased 13x9-in. baking dish., Cover and bake 25 minutes. Uncover; bake until lightly browned, 5-10 minutes.

3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups sugar
1/2 cup shortening
2 eggs
1/2 cup orange juice
1/2 cup sour cream
1 cup chopped nuts (I use pecans, but walnuts would also work)
1 1/2 cups coarsely chopped fresh cranberries
1 cup apple, peeled,cored &,shredded

Steps:

  • Heat oven to 350*.
  • Grease& flour two 9x5 loaf pans.
  • Combine flour, salt& soda- sift together in medium bowl, and set aside.
  • In large mixing bowl, cream sugar and shortening.
  • Add eggs, sour cream& orange juice.
  • Stir flour in until just moistened.
  • Fold in cranberries, shredded apple and nuts.
  • Divide mixture between prepared loaf pans; bake 50 minutes, or until a tester comes out clean.
  • Bread should be golden brown.
  • Cool 10 minutes in pans, then cool on rack until cool.
  • Wrap each loaf tightly and store in refrigerator for 2 days before slicing, or freeze.

12 ounces fresh cranberries, rinsed and picked over for stems
1 Granny Smith apple, peeled, cored, and diced
1/2 cup light brown sugar, lightly packed
1 tablespoon grated orange zest (2 oranges)
1/4 cup freshly squeezed orange juice
1 1/8 teaspoons ground cinnamon, divided
2 extra-large eggs, at room temperature
1 cup plus 1 tablespoon granulated sugar
1/4 pound (1 stick) unsalted butter, melted and slightly cooled
1 teaspoon pure vanilla extract
1/4 cup sour cream
1 cup all-purpose flour
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 325 degrees F.
  • Combine the cranberries, apple, brown sugar, orange zest, orange juice, and 1 teaspoon of the cinnamon in a medium bowl. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs on medium-high speed for 2 minutes. With the mixer on medium, add 1 cup of the granulated sugar, the butter, vanilla, and sour cream and beat just until combined. On low speed, slowly add the flour and salt.
  • Pour the fruit mixture evenly into a 10-inch glass pie plate. Pour the batter over the fruit, covering it completely. Combine the remaining 1 tablespoon of granulated sugar and 1/8 teaspoon of cinnamon and sprinkle it over the batter. Bake for 55 to 60 minutes, until a toothpick inserted in the middle of the cake comes out clean and the fruit is bubbling around the edges. Serve warm or at room temperature.

2 pounds Granny Smith apples - peeled, cored and thinly sliced
¾ cup cranberries
¼ cup white sugar
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
⅓ cup quick-cooking oats
⅓ cup all-purpose flour
½ cup packed light brown sugar
¼ cup butter, cut into pieces
½ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.
  • In a large bowl, mix together apples, cranberries, white sugar, cinnamon and nutmeg. Place evenly into baking dish.
  • In the same bowl, combine oats, flour and brown sugar. With a fork, mix in butter until crumbly. Stir in pecans. Sprinkle over apples.

2 1/2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 cup cold unsalted butter, cut into cubes
1/2 cup cold buttermilk
1 -2 tablespoon cold water
1 large egg
1 tbp water
turbinado sugar (optional)
4 large apples, cored, peeled, and sliced (6 to 7 cups)
1/2 lemon a lemon, juice of
1 1/2 cups cranberries (fresh or frozen)
1 cup granulated sugar
1/3 cup all-purpose flour
1 teaspoon ground cinnamon
2 teaspoons orange zest
1 teaspoon vanilla extract

Steps:

  • First, make the pie crust. COmbine the flour, sugar, and salt in a large bowl. Add the cubed butter and toss to coat. Dump the mixture out onto a clean surface and use a rolling pin to roll the butter into thin sheets, combining it with the flour. Use a bench scraper to scrape the rolling pin and to bring the mixture back into a pile as necessary. Continue until all of the butter is incorporated into the flour. Mixture will be very flaky. Return mixture to the bowl and place in the freezer for 15 minutes to chill the butter.
  • Remove from freezer and add the buttermilk. Use a spoon and then your hands to stir the mixture until it comes together into a ball. If mixture is too dry, add the water a tablespoon at a time. Divide the dough in two and flatten into disks. Wrap each disk in plastic wrap and chill in the fridge while you make the filling.
  • Put the apple slices in a large bowl and drizzle with fresh lemon juice. Toss to coat the apples. This will keep the apples from browning. Add the cranberries, sugar, flour, cinnamon, orange zest, and vanilla extract. Stir until combined.
  • Preheat oven to 400°F.
  • Remove on disk of pie dough from the refrigerator. On a lightly floured surface, use a rolling pin to roll out the dough into a 12 inch circle. Dough should be about 14/ inch thick. Transfer dough to a 9 inch pie pan. Pat with your fingers, making sure it is smoot. Trim the extra overhang of dough with a knife and set aside. Fill pie with apple cranberry filling. Place the pie in the fridge while you roll out the second disk of dough. Roll out the dough and use a pastry wheel, pizza cutter, or sharp knife to cut the pie dough into strip, about 1 to 2 inches wide. Carefully weave the pie dough strips over and under one another. Press the edges of the pie doughstrips into the bottom pie crusts edges to seal. Trim off the excess dough and pinch the edges using your fingers to create a pretty edge. You can also use a fork to seal the edges. Using a pastry brush, lightly brush crst and edges with egg wash. Sprinkle pie with turbinado sugar, if using.
  • Place pie on a large baking dish and bake for 45 minutes, or until crust is golden bown. I place a pie crust shield to protect the edges from getting too brown at about 25 minutes. If you don't have a pie shield, you can use aluminum foil if the crust is getting too brown. When the pie is done baking, remove from oven and cool for one hour before serving. Cut into slices nad serve.

4 golden delicious apples, peeled and thinly sliced
1 tablespoon sugar
1/2 teaspoon cinnamon
1/2 cup apricot preserves
1/3 cup dried cranberries
1 (17 ounce) package large refrigerated biscuits
1 tablespoon sugar

Steps:

  • Melt butter in a large skillet over medium heat.
  • Add apples through cinnamon; cook, stirring frequently, 5 minutes.
  • Add apricot preserves and dried cranberries with 1/4 cup water.
  • Cook, stirring, about 4-5 minutes until apples are tender; remove from heat and let cool (sauce should thicken).
  • Separate biscuit dough into 8 rounds and use a rolling pin to roll each out to a 6-inch circle.
