I made this recently and we loved it. A rich, fragrant, but not overly 'burny' curry. Because we are not great meat eaters, I used half the chicken, the full amount of sauce, and I added a few sauteed shrimps right at the end. If you don't have garam masala, try a curry powder that you like, I do keep roasted garam masala in my pantry. I also let the curry sauce cook for longer than the recipe states, you should never rush a curry if you have the time! I served this over steamed basmati rice. 30 minutes refrigeration time is included in the preparation time. This recipe is taken from The Australian Womans Weekly "New Curries", and the following is how they describe it. "Kenyan cooking is a fusion of East African and Middle Eastern methods known by the name of swahili cooking, a word which identifies the culinary influences of traders arriving by sea from the Arabian peninsula upon the indigenous population. This curry uses the pungency of paprika, coriander and turmeric in the chicken marinade, to complement the green chilli and fenugreek in the curry."

40 g fresh ginger, grated
6 garlic cloves, crushed
2 teaspoons ground turmeric
1/2 cup lemon juice
1/3 cup vegetable oil
1 teaspoon ground cumin
3 teaspoons garam masala
1 tablespoon ground coriander
1 teaspoon paprika
1 teaspoon chili flakes
1/4 cup plain yogurt
1 kg chicken thigh fillet, cut into 3 cm pieces
600 g brown onions, chopped coarsely
2 teaspoons chili powder
2 teaspoons ground fenugreek
800 g tinned crushed tomatoes
1 stick cinnamon
2 long green chilies, finely chopped
300 ml cream
1 tablespoon honey
1/4 cup coarsely chopped coriander leaves

Steps:

  • Combine half the ginger, half the garlic, half the turmeric, half the lemon juice and half the oil in a large bowl with ALL the cumin, garam masala, ground coriander, paprika, chilli flakes and yoghurt.
  • Add the chicken, turn to coat in marinade.
  • Cover and refrigerate for at least 30 minutes.
  • Preheat oven to very hot (220C/425F).
  • Cook chicken in lightly oiled shallow flameproof baking dish, uncovered, 10 minutes.(With the marinade).
  • Heat remaining oil in large saucepan, cook onion, chilli powder, fenugreek, remaining ginger, garlic and turmeric, stirring, until onion softens.
  • Add tomatoes (with their juice), cinnamon, green chillies and remaining lemon juice.
  • Simmer, covered, for 10 minutes.
  • Stir in cream and honey, simmer, uncovered, for one minute.
  • Add chicken to curry, simmer about 5 minutes or until chicken is cooked through.
  • Remove from heat, stir in fresh coriander, serve over basmati rice, garnish with fresh coriander.

4 tablespoons peanut oil
1 (3 lb) chicken, cut into pieces
1 onion, chopped
2 cloves garlic, chopped
2 tablespoons curry powder
1 tablespoon dried red chili pepper
2 teaspoons black pepper
8 cups chicken stock
1 large tomatoes, peeled and chopped
1 cup coconut, grated (DON'T USE SWEETENED!)
2 ripe bananas

Steps:

  • In a Dutch oven, brown the chicken pieces in the oil.
  • Remove chicken, reserving, and add the onion and garlic to the pot.
  • Sauté until soft, then stir in the powdered chile, the curry, and the black pepper and fry for 2 more minutes.
  • Add the tomatoes, stock, chicken pieces, and coconut, bring to a boil, then reduce heat and simmer for 30 minutes.
  • When the chicken is done, remove, let cool, then strip away the meat and cut it into bite-sized chunks, discarding the skin and bones.
  • Add it back into the pot with the banana chunks.
  • Simmer 10 minutes.
  • When ready to serve, ladle into bowls.

1 (15-ounce) can chickpeas, rinsed and drained

Freshly ground black pepper, to taste
1 (14-ounce) can light coconut milk
3/4 cup cooked white or brown rice

Steps:

  • In a medium stockpot, heat the oil over medium heat. Add the onion, bell pepper, and chili; cook, stirring, until softened, about 5 minutes. Add the garlic and cook, stirring constantly, 1 minute. Add the broth, chickpeas, tomatoes, curry powder, salt, and black pepper; bring to a boil over high heat. Reduce the heat and simmer gently, uncovered, stirring occasionally, about 10 minutes. Add the remaining ingredients and cook, stirring occasionally, until heated through, about 5 minutes. Serve warm.

KUKU PAKA RECIPE

Delicious, one pot coconut chicken curry which originated from coastal regions of East Africa.

2 Onions (medium size)
3 cm Ginger (or thumb size)
3 cloves Garlic
1 Scotch bonnet
½ can Chopped tomatoes (or 2 beef tomatoes, chopped)
1 teaspoon Coriander
1 tablespoon Mild curry powder
4 legs Chicken
2 tablespoons Oil
½ can Coconut milk (or 200ml)
Salt (to taste)

Steps:

  • Blend one onion, ginger, garlic, scotch bonnet pepper, tomatoes, coriander powder and curry powder into a paste in a food processor.
  • Slash the chicken. Make around 3 slashes in which ever direction you prefer on each side. Rub some salt all over the chicken and place in a bowl.
  • Pour the the blended paste over the chicken and mix thoroughly with your hands. Keep aside to marinate for 20 mins.
  • While the chicken is marinating; chop the remaining onion finely.
  • Heat the oil in a saucepan under medium heat.
  • Add the onions into the pan and cook until soft and translucent.
  • Remove the chicken pieces from the paste and add into the pan. Sear on each side to brown.
  • Add the left over paste into the pan, add the coconut milk and a little salt to taste.
  • Cover the pan. Allow sauce to cook and the flavors to develop. This should take around 20 mins but is dependent on whether you are using soft or hard chicken. Hard chicken will take longer to cook properly.
  • Remove from heat and serve with coriander garnish.

4 tablespoons vegetable oil
3 lbs chicken, cut into pieces
1 chopped onion
2 chopped garlic cloves
2 tablespoons curry powder (masala meusi- see recipe)
1 tablespoon peri-peri
2 teaspoons black pepper
8 cups chicken stock
1 tomatoes, peeled and chopped
1 cup grated unsweetened coconut
2 ripe bananas, sliced into chunky quarter peices

Steps:

  • In a large pot, brown the chicken pieces in the oil.
  • Remove chicken, set aside, and add the onion and garlic to pot.
  • Sauté until soft, then stir in the peri-peri, the masala meusi, and the black pepper.
  • Fry for about 2 more minutes.
  • Add the tomatoes, stock, chicken pieces, and coconut, bring to boil, then reduce heat and simmer for 30 minutes.
  • When the chicken is done, add banana chunks, and simmer for about 10 more minutes.
  • Ladle into bowls and enjoy!

3 tablespoons unsalted butter
1 onion, diced
2 carrots, cut into 1/2-inch pieces
Kosher salt and freshly ground pepper
2 tablespoons finely chopped fresh ginger
4 teaspoons Madras curry powder
2 plum tomatoes, chopped
4 cups low-sodium chicken broth
1 small bunch Swiss chard, stems and leaves chopped
1 10-ounce bag frozen cooked basmati or other long-grain rice
1 6-ounce block paneer cheese
3 cups shredded rotisserie chicken (about 12 ounces)

Steps:

  • Heat 2 tablespoons butter in a large pot over medium-high heat. Add the onion, carrots, a big pinch of salt and a few grinds of pepper. Cook, stirring occasionally, until the onion is translucent, about 4 minutes. Stir in the ginger and curry powder and cook, stirring, until the spices are toasted, about 30 seconds. Stir in the tomatoes and cook until softened, about 2 minutes. Add the chicken broth, 3 cups water, the chard stems, 1/2 teaspoon salt and a few grinds of pepper. Cover and bring to a boil over high heat.
  • Meanwhile, heat the frozen rice in the microwave as the label directs. Cut the paneer into 1/2-inch cubes. Heat the remaining 1 tablespoon butter in a medium nonstick skillet over medium-high heat. Add the paneer and cook, turning with a small spoon, until well browned on a few sides, 3 to 5 minutes (reduce the heat if necessary). Transfer to a plate and sprinkle with salt.
  • Uncover the soup and reduce the heat to a simmer. Add the rice and chicken; simmer until the carrots are tender, 5 minutes. Stir in the chard leaves and simmer until tender, 5 minutes. Add more water if needed and season with salt and pepper.
  • Divide the soup among bowls. Top with the paneer.

1 bone-in chicken breast (about 1 1/2 pounds), halved
2 medium carrots, sliced diagonally into 2-inch pieces
1 bay leaf
Kosher salt
6 cups low-sodium chicken broth
2 tablespoons unsalted butter
1 large onion, very thinly sliced
1 teaspoon sugar
1 1/2 teaspoons Madras curry powder
1/3 cup jasmine rice
3 tablespoons finely chopped fresh mint
3 tablespoons chopped fresh dill
1 lemon, cut into wedges

Steps:

  • Combine the chicken, carrots, bay leaf and a pinch of salt in a medium saucepan. Add 3 cups broth and bring to a boil; immediately reduce the heat to low, cover and cook until the chicken is just firm, about 20 minutes.
  • Meanwhile, heat the butter in another saucepan over medium-low heat. Add the onion, sugar and 1 teaspoon salt; cook until the onion is soft, 5 minutes. Add the curry powder and cook for 1 minute. Add the rice and the remaining 3 cups broth. Increase the heat to medium, cover and simmer until the rice falls apart, 15 to 20 minutes.
  • Remove the chicken from its broth; discard the skin and shred the meat into pieces. Return the shredded chicken to the same broth.
  • Puree the rice mixture with an immersion blender until smooth (or use a regular blender, then return to the pan). Pour in the shredded chicken and broth, stirring gently to combine; bring to a simmer. Toss in the chopped herbs and serve the soup with lemon wedges.

2 tbsp olive oil
1 onion , finely chopped
3 tbsp Thai red curry paste
2 x 400g cans coconut milk
400ml chicken stock
100g risotto rice
4 large eggs
about 200-300g leftover roast chicken , shredded
340g can sweetcorn , drained
2-3 limes , juiced
2 spring onions , sliced

Steps:

  • Heat the oil in a saucepan over a medium heat. Add the onion and fry for 10 mins or until softened and turning translucent. Add the curry paste and cook for 1 min. Stir in the coconut milk, chicken stock and risotto rice and bring to a simmer. Cook for 15-20 mins or until the rice is tender.
  • Bring a pan of water to a simmer, add the eggs and cook for 7 mins. Stir the chicken and sweetcorn into the soup and cook for 5 mins to warm everything through. Season to taste and finish with the lime juice. Gently peel the shells off the eggs and cut them in half. Top the soup with the eggs and spring onions.

  • Simmer until tender, about 20 minutes, covered tightly.
  • Add lemon juice and 1 cup coconut cream and simmer until slightly thickened-about 10 minutes.

4 teaspoons curry powder
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
3 medium carrots, chopped
1 medium sweet red pepper, chopped
1 small onion, chopped
2 tablespoons olive oil
1 garlic clove, minced
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 can (14-1/2 ounces) chicken broth
1 can (14-1/2 ounces) diced tomatoes, drained
1 cup water
1 can (13.66 ounces) coconut milk
3/4 cup minced fresh cilantro

Steps:

  • In a large shallow dish, combine the curry, salt, pepper and cayenne. Add chicken, a few pieces at a time, and turn to coat., In a large saucepan over medium heat, cook the chicken, carrots, red pepper and onion in oil for 4 minutes. Add garlic; cook 1-2 minutes longer or until chicken is browned and vegetables are tender; drain., Stir in the garbanzo beans, broth, tomatoes and water. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Stir in coconut milk; heat through. Garnish servings with cilantro.
