Steps:
- Bring 1 1/2 cups of the milk, the sugar and cocoa to a simmer in a medium saucepan over medium-high heat, stirring occasionally to dissolve the sugar. Meanwhile, whisk the remaining 1/2 cup of milk with the cornstarch, vanilla, egg yolks, and salt in a medium bowl. Gradually whisk the hot milk mixture into the egg mixture.
- Return the milk-egg mixture to the saucepan and continue to cook, whisking constantly, until the pudding comes to a full boil. Reduce the heat to maintain a simmer, and continue whisking until thick, about 2 or 3 minutes more.
- Divide the pudding among 4 to 6 small ramekins or dessert cups. Cover with plastic wrap and refrigerate until set, at least 4 hours or up to overnight. Serve each pudding with a dollop of whipped cream and a sprinkle of chocolate shavings.
MOM'S CHOCOLATE PUDDING
My mom came to the United States from Colombia when she was 16 years old. She married at 17, had her first child by 18 and quickly needed to find her way in the kitchen. New American convenience foods were a novelty to her, and we were occasionally treated to pudding from the store. My brother loved chocolate pudding so much that, once my mom became more fluent in the kitchen, she decided to try making it from scratch. Chocolate pudding became one of our favorite childhood treats, and it's still one that makes me remember my mom and all the fun and nostalgia of my childhood in the 1960s and '70s. - Claudia Sidoti, Manager, Test Kitchen

Steps:
- Whisk the milk, granulated sugar, cocoa and cornstarch constantly in a nonreactive medium saucepan over medium-high heat until the cocoa has fully dissolved and the mixture starts to simmer, about 8 minutes. Reduce the heat to medium, and continue to cook, whisking, until the mixture thickens to the consistency of a light gravy, 6 to 7 minutes more. Stir in the chopped chocolate, vanilla and a pinch of salt and continue to cook, whisking, until the chocolate has melted and the pudding is thick and creamy, about 2 minutes more. Remove the pudding from the heat, add the butter and stir until the butter has melted.
- Divide the pudding evenly into six 6- to 8-ounce ramekins or glasses. Cover with plastic wrap, and refrigerate for 4 hours or overnight until cold and fully set.
- Before serving, pour the cream and confectioners' sugar into a chilled medium bowl. Whip the cream with a whisk or an electric mixer until soft peaks form, 2 to 3 minutes. Top each pudding with a dollop of whipped cream and chopped-chocolate garnish if using.
DARK CHOCOLATE PUDDING
This rich, creamy confection crosses a classic, American, cornstarch-thickened chocolate pudding with a luxurious French egg-yolk-laden chocolate custard called pot de crème. It has a dense, satiny texture and a fudgelike flavor from the combination of bittersweet chocolate, cocoa powder and brown sugar. Make sure to serve it with either whipped cream or crème fraîche for a cool contrast; crème fraîche has the advantage of also adding tang.

Steps:
- In a small heatproof bowl, whisk together egg and yolks. Set aside.
- Place chocolate, butter and vanilla extract in a food processor or blender but don't turn on.
- In a medium pot, whisk together milk, cream, brown sugar, cocoa, cornstarch and salt until smooth. Bring to a full boil, whisking, and let bubble for 1 to 2 minutes to activate cornstarch. At that point, it will start to thicken, and when it does immediately pull the pot off the heat. (You don't want to overboil the cornstarch, which can cause it to thin out again.)
- Pour a little of the hot cornstarch mixture into the eggs, stirring constantly to prevent them from curdling, then pour eggs back into the pan with the remaining cornstarch mixture. Cook over low heat, whisking constantly, until mixture just returns to a bare simmer (one bubble is plenty). Immediately pour into the food processor or blender. Run the machine until the pudding is very smooth (the hot milk mixture will melt the chocolate).
- Pour into individual bowls or teacups or 1 large decorative bowl and cover with plastic wrap. Refrigerate until firm and cold, at least 4 hours for individual servings and as many as 8 hours for 1 large bowl. Pudding can be made 3 days ahead. Serve with whipped cream or whipped crème fraîche, decorated with chocolate shavings and a pinch of sea salt, if you like.

10 FAMOUS DUTCH DESSERTS - INSANELY GOOD

- Dutch Stroopwafel. This crunchy treat is one of the most well-loved Dutch desserts on the list. At first glance, most people think they’re waffles, but although the texture is the same, they’re much thinner than waffles.
- Arnhemse Meisjes. You can make these thin, crackling cookies with only five ingredients – puff pastry squares, vanilla sugar, cinnamon, cardamom, and lime zest.
- Dutch Apple Pie. Apple pie may be as “American” as baseball and pickup trucks, but the Dutch have us beat when it comes to making it. I won’t lie; this pie takes some time to pull together.
- Dutch Speculaas Cookies. Most people call these speculaas, but to me, they’re just spice cookies. One bite of that sweet cinnamon, salt, nutmeg, cloves, ginger, and white pepper flavor, and you’ll understand why.
- Oliebollen (Dutch Doughnuts) It’s hard to decide what to love more about these warm, deep-fried delicacies: their incredible taste or how fun it is to say their name.
- Dutch Letters (S Cookies) Dutch letters, or ‘S’ Cookies as people sometimes call them, are popular in many places worldwide and understandably so. They’re buttery, flaky, and nutty, and they have an excellent filling of almond paste that nearly melts in your mouth.
- Sweet Dutch Pretzels. Dutch pretzels share the same shape as the Rold Gold Mini Twists you can pick up at any grocery store. However, that’s where the similarities end.
- Kruidnoten (Dutch Little Spiced Cookies) Kruidnotens and speculaas cookies both share very similar flavors. They’re both traditional Dutch “spice cookies” and share several ingredients – nutmeg, cinnamon, cloves, and ginger, to name a few.
- Dutch Butter Cake with Almonds. “Butter cake” may not sound like something that’s super appetizing, but it’s actually pretty incredible. It’s soft, moist, fluffy, and tastes primarily of almonds.
- Tompouce. This flavorful orange dessert is insanely easy to make, and you’ll only need five ingredients to prepare it! You’ll start with a layer of puff pastry.

- In a medium saucepan, sift together granulated sugar, brown sugar, cocoa powder, cornstarch, and salt. Combine with a whisk.
- Place the saucepan over medium heat and gradually whisk in milk until smooth and combined. Cook, stirring constantly until the mixture comes to a boil and thickens enough to coat the back of a metal spoon.
- Remove from heat. Add butter and vanilla and stir to combine. Let cool briefly, then serve warm, or chill in refrigerator if you prefer cold pudding. If not serving warm, store pudding in a bowl covered with plastic wrap. (The plastic should be touching the surface of the pudding; otherwise, a film will form.)
