- Fill a shaker with ice. Add 1 ounce olive juice and 2 ounces each gin and dry vermouth. Shake well, then strain into a martini glass. Add a dash of bitters and garnish with an olive.

- coat the inside of the glass. Dispose of excess vermouth. In a shaker full of ice,

- Put a martini glass in the fridge to chill for 10 mins. Pour the gin and vermouth into a mixing glass or jug filled with ice cubes. Stir with a mixing spoon until the outside of the glass is very cold, then taste to check the dilution. If needed, continue to stir until the martini is diluted and chilled to your liking.
- Strain the martini into the chilled glass and serve.

- Put two martini glasses in the fridge to chill. Thread the olives onto two cocktail sticks and set aside.
- Fill a jug or mixing glass with the ice, then pour in the gin, vermouth and olive brine. Stir until the outside of the jug feels cold. Taste to make sure that it's icy cold and that you're happy with the dilution.
- Strain the mix into the chilled glasses and garnish with the olive skewers.

MARTINI
Arguably, the most popular cocktail of all time. Made properly, a martini can take your breath away with its icy fire and at the same time, sooth the stress of the most savage day. The classic martini has only two ingredients--so it's important to use the best you can afford. Store vermouth in the refrigerator to retain its flavor. Don't chill the gin or vodka or it won't get diluted enough by the ice to achieve the proper proportions (one-eighth to one-fourth water). Energetic shaking with ice is vital for a smooth/silky result. Stirring produces a crystal-clear martini but it will never get as cold as a shaken martini.
