Classic Entrecote Bordelaise - Steak in Red Wine With Shallots image

Entrecote Bordelaise is a French classic, impressive yet simple to prepare - it is a very chic way to serve a steak! Here are my easy step by step instructions for a perfect Entrecote Bordelaise! Serve with sauté potatoes or frites and haricots verts......and a good bottle of Saint Emilion, from the little Medieval town just to the east of Bordeaux.

2 (300 g) entrecote steaks
100 g butter
2 shallots, finely chopped
100 ml red wine
200 ml demi-glace or 200 ml beef stock
2 tablespoons chopped parsley
salt
black pepper

Steps:

  • Sauté the steaks.
  • Season the steaks with salt and pepper on both sides. Heat the pan to smoking point and add half the butter. Place the steak in the pan and brown it on both sides - give it about two to three minutes on each side to seal it first, then let the meat cook through to your taste. Do both steaks in this way and then set them aside.
  • Cook the shallots.
  • In the same pan, (drain excess butter if needed), cook the shallots. Put them in the pan and stir from time to time until they are soft and starting to turn golden.
  • Deglaze the pan.
  • When the shallots are done add the red wine to the pan and give it a good stir.
  • Now, add the demi glace or beef stock to the pan and stir until everything is blended, then leave it to simmer for 5 minutes or until reduced.
  • Cut the remaining butter into small pieces and add them to the sauce one at a time, mixing so that they melt into the mixture: this will give the sauce a rich flavour and give it an appetising glossy finish,.
  • Plate the dish.
  • Cut the meat across the grain into thick slices and arrange them on a plate.
  • Add some chopped parsley to the sauce, then pour little of the sauce over each steak.
  • Serve the rest of the sauce in a gravy boat.
  • You might like to serve it with sauté potatoes, frites and some haricot verts.

For my 46th birthday my husband treated me to a one-evening cooking course. It must have been one of the most enjoyable evenings I've ever had. This recipe is from that course.

1 kg entrecote beef
fresh coarse ground black pepper
olive oil, to taste
fresh rosemary sprig
olive oil, for stove-top grilling
coarse salt
400 ml red wine
salt and pepper
1 cup beef broth
1/2 cup honey
4 sprigs fresh rosemary, finely minced
1 -2 tablespoon cornflour, mixed in a little
wine or 1 -2 tablespoon water

Steps:

  • Cut most of the fat off the meat and slice into largish chunks (bigger than a bite).
  • Place in a bowl with the olive oil and pepper and give it all a good massage.
  • Spear two pieces of meat on each rosemary sprig.
  • Prepare the sauce by mixing all the ingredients together in a pot and bring to the boil.
  • When the sauce has been reduced by half, add the cornflour liquid. Stir until combined and the sauce has thickend a tiny bit. Remove from the flame.
  • Place a stove-top grill pan over high heat for 7 minutes, until smoking. Add some olive oil.
  • Grill the meat for a few minutes on each side, sprinkling each side with some of the coarse salt. Remove to a plate to rest for a minutes.
  • Drizzle the meat with the sauce and serve.

This flavourful Bourguignon sauce is positively ambrosial, and adds a touch of elegance to steak, daring you to resist dipping your french bread. I "halved" the recipe for two, served it last evening, and the question posed was "Can we have this again tomorrow?" The telling is in the sauce. Any red meat prepared a'Bourguignon is delicious - especially game; venison, moose, elk, rabbit, etc. Even lamb takes on a whole new flavour. Serve a robust Merlot with "anything" Bourguignon. Accompaniments could include boiled new potatoes and green beans. Your taste buds will thank you, and your family keep and love you forever.

4 (12 ounce) sirloin steaks, about x
fresh ground pepper
salt
1 small onion, chopped finely
1 clove garlic, chopped finely
4 fresh mushrooms, sliced (your choice)
1 spring onion, chopped
1 ounce vegetable oil
4 ounces dry red wine
1 ounce cornstarch
2 ounces beef stock
1 teaspoon chopped parsley

Steps:

  • Pound the steaks slightly and season with the freshly ground black pepper.
  • Salt to taste.
  • Heat oil in a skillet and fry the steaks.
  • When cooked according to taste, transfer to a serving platter and keep warm.
  • Drain off most of the excess oil from the pan.
  • Mix chopped onion and garlic together and saute for 2- 3 minutes until crisp and golden.
  • Add mushrooms and red wine; bring to a boil and simmer until the liquid has reduced by half.
  • Mix the cornstarch with the cold beef stock and add to the pan, together with the chopped spring onion.
  • Stir for a further minute, or until sauce just begins to bubble.
  • Spoon over the steaks, sprinkle chopped parsley on plates and serve immediately.

Rib Steaks With Red Wine Sauce And Marrow / Entrecote a' la Bordelaise image

Number Of Ingredients 13

FOR THE STEAKS:
4 beef shell steaks (rib eyes 8 to 10 ounces each)
2 tablespoons olive oil
salt, coarse (kosher or sea) and cracked black pepper, to taste
FOR THE BORDELAISE SAUCE:
3 tablespoons butter, unsalted
1/2 cup shallot, minced
8 ounces mushrooms, fresh, wiped clean and thinly sliced
2 cups dry red wine
1 cup beef stock base, homemade or low-sodium canned beef broth
1 teaspoon cornstarch dissolved in 1 tablespoon red win (optional)
salt, coarse (kosher or sea), to taste
black pepper, freshly ground, to taste

Steps:

  • 1. Rub the steaks on both sides with the oil and season with salt and pepper. Let them come to room temperature while you make the sauce.2. Melt the butter in a heavy medium-size saucepan. Add the shallots and sauté over medium heat, stirring, until softened and translucent but not brown, about 3 minutes. Add the mushrooms and cook until lightly browned and most of the liquid has evaporated, 3 to 5 minutes. Add the wine and bring to a boil over medium-high heat, then reduce the heat slightly and simmer the wine briskly until reduced by half, about 5 minutes. Add the stock and simmer briskly until the mixture is reduced by half again, 5 minutes more. If you start with very good stock, the mixture may be thick enough to serve as a sauce without the cornstarch. If not, stir the cornstarch-wine mixture into the sauce and bring to a boil the sauce should thicken slightly. Whisk in salt and pepper as necessary the sauce should be highly seasoned. Remove from the heat and set aside while you poach the marrow.3. Pour water to a depth of 1 inch into a shallow pan. Heat to a simmer, add the marrow, and poach until waxy and white, with no remaining red, turning with a skimmer, 15 to 30 seconds. Do not overcook, or the marrow will melt. Transfer the marrow to paper towels to drain then cut it into thin crosswise slices (see Note).4. Preheat the grill to high.5. When ready to cook, oil the grill grate. Place the steaks on the hot grate and grill until cooked to taste, 4 to 6 minutes per side for medium-rare, rotating the steaks 45 degrees after 2 minutes on each side to create an attractive crosshatch of grill marks use tongs when moving or turning the steak. While the steak cooks, reheat the sauce, tasting it for seasoning. Transfer the steaks to a platter and let stand for 2 to 3 minutes. Spoon the sauce over the steaks and top with slices of marrow and a sprinkling of parsley. Serve immediately.Serves 4Note: The recipe can be prepared several hours ahead to this point.

I like to serve this tender and delicious pan-seared steak for Valentine's Day or romantic occasions such as anniversaries and birthdays! Takes only 20 minutes, start to finish. Wonderful paired with my Alsatian Baked Potatoes or Gratin Dauphinois, steamed seasonal vegetables or a tossed green salad, and a simple dessert of fresh ripe berries & chantilly cream.

2 tablespoons butter
1 1/2 tablespoons vegetable oil
4 (6 -8 ounce) high quality filet of beef
10 ounces fresh mushrooms, in 1/4 to 1/2- inch thick slices (I use whatever looks fresh)
4 shallots, finely chopped
1/2 cup dry red wine
3 tablespoons cognac (or brandy)
1/4 cup demi-glace or 1/4 cup beef stock
2 tablespoons softened butter
sea salt & freshly ground black pepper
crumbled Roquefort cheese (optional)
2 tablespoons snipped fresh parsley
fresh rosemary, for garnish

Steps:

  • Put butter and oil in a heavy skillet over high heat. When the butter has foamed and begins to subside it is right for the steak.
  • Fry steak on one side 4 to 5 minutes. Turn steak and brown on other side 4 to 5 minutes (for medium-rare), depending on desired degree of doneness. Test for doneness by cutting a small incision in the steak (just a very small incision, about the same size as a meat thermometer makes!).
  • Remove steak to a hot platter and sprinkle lightly with coarse sea salt and freshly-ground black pepper. Keep warm (cover and place in a 250 degree F oven).
  • Add dry red wine, cognac, demi glace or beef stock, mushrooms and shallots to skillet and cook over high heat. Scrape up brown bits from bottom of the pan and boil until liquid is reduced almost to a syrup. Remove from heat and stir in the softened butter until it has melted. Pour sauce over steak.
  • Top with a dab of crumbled Roquefort cheese, sprinkle with snipped fresh parsley and garnish with a sprig of rosemary, if desired.
  • Wonderful served with Alsatian baked potatoes or Gratin Dauphinois, steamed seasonal vegetables or a tossed green salad, and ripe fresh berries in chantilly cream for dessert.
