GARLIC BUTTER BROCCOLI RECIPE

- Bring a large pot of salted water to a boil. Lower your broccoli florets into the boiling water. Cook for 3 to 6 minutes, or until softened to your liking (3 minutes for firmer broccoli or 6 minutes for softer broccoli). Rinse with cold water to stop the cooking, and set aside to drain.
- Add your butter and olive oil to a large skillet, and place the skillet on a stove burner set to medium-high heat. Heat for about 1 minute, or until the butter is melted and starts to sizzle.
- Add your drained broccoli to the skillet along with the garlic powder and salt (to taste). Make sure the broccoli is in one even layer. If not, cook the broccoli in batches. Sauté the broccoli on medium-high heat, tossing occasionally, until the broccoli lightly browns and is coated in the butter and garlic powder (about 2 minutes).

- Heat large skillet over medium heat and add olive oil. Chop broccoli by removing crowns from the stem and chopping into bite size pieces.
- Saute chopped broccoli in the olive oil for 5-7 minutes until broccoli is dark green.
- Add one tablespoon of butter and minced garlic to saute pan and cook until fragrant. Season with salt and pepper and serve.

- Bring a medium pot of cold salted water to a boil. Cut the florets off the broccoli stems and then trim any tough parts off the stems and thinly slice crosswise. Add the broccoli florets and stems to the boiling water and cook until crisp-tender, about 3 minutes. Drain and rinse under cold water until cool. Pat dry.
- Heat the oil in a large skillet set over medium-high heat; add the garlic and cook, stirring occasionally, until just beginning to brown, about 2 minutes. Transfer the garlic with a slotted spoon to a small bowl, leaving the olive oil behind.

A new recipe a neighbor gave us. What a hit with my family. Just the right mixture of garlic and cashews with our favorite side dish, broccoli. And, so very easy to make!! If in a pinch, you could probably use frozen broccoli too, but I haven't tried.

- Place the broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil, and cook for 7 minutes, or until tender but still crisp. Drain, and arrange broccoli on a serving platter.

- Trim broccoli, cut into individual flowerets, leaving the stems baout 4-inches long.
- Place broccoli into vegetable steamer or into large pot with a small amount of water Heat until water boils. Steam broccoli, covered, for 12-15 minute until bright green and tender-crisp.
- Heat butter and olive oil in skillet. Add garlic and rosemary.
- Add broccoli to garlic butter and stir quickly over high heat utnil broccoli is coated.
- Transfer to warm serving dish. Pour any remining garlic butter from pan over top of broccoli.

ROASTED BROCCOLI WITH LEMON GARLIC BUTTER AND TOASTED PINE NUTS

- Preheat oven to 500 degrees.
- In a large bowl, toss the broccoli with the oil and salt and pepper to taste. Arrange the florets in a single layer on a baking sheet and roast, turning once, for 12 minutes, or until just tender.
- Meanwhile, in a small saucepan, melt the butter over medium heat. Add the garlic and lemon zest and heat, stirring, for about 1 minute. Let cool slightly and stir in the lemon juice. Place the broccoli in a serving bowl, pour the lemon butter over it and toss to coat. Scatter the toasted pine nuts over the top.
BROCCOLI WITH GARLIC-HERB BUTTER
This is a recipe from my 2008 Weight Watchers cookbook that we really enjoyed. I altered it slightly for our taste. It's a nice way to enjoy broccoli without all the cheese sauce. It's got a nice bite to it too. Feel free to leave out the crushed red pepper flakes. The frozen steam bags of broccoli work well with this recipe.

- Microwave on high for 30 seconds or until melted.
