Steps:

  • Bring 1/4 cup each sugar and water to a simmer in a saucepan. Remove from the heat, add 3 mint sprigs and steep 10 minutes. Discard the mint; add the zest and juice of 1 lemon and a pinch of salt. Toss with 2 cups blueberries and 3 cups cubed watermelon. Let stand 15 minutes. Top with chopped mint.

4 cups 1 1/4-inch chunks seedless watermelon
1/4 cup olive oil
2 tablespoon lemon juice
1 tablespoon honey
Kosher salt and freshly ground black pepper
1 1/2 cups feta, cut into 1/2-inch chunks
1/2 cup torn fresh basil leaves

Steps:

  • Put the tomato and watermelon chunks in a bowl.
  • For the honey vinaigrette: Whisk together the olive oil, lemon juice and honey in a bowl, and add salt and pepper to taste.
  • Drizzle vinaigrette over the tomatoes and watermelon, then toss. Transfer to a serving platter. Sprinkle over the feta and basil.

  • Wash outside of watermelon.
  • Cut a hole in the top of the watermelon.

Need I say more....The name says it all. I remember a lot of fun at college parties in the "good ole days" with this tasty concoction!

1 medium watermelon, whole
750 ml lemon-flavored vodka (or flavor of your choice)
cooler and ice
2 whole lemons, sliced paper-thin
cilantro leaf (optional)

Steps:

  • Place the melon in the bottom of the cooler. Using a sharp knife, or apple-coring tool, carve a 1 1/2-inch hole in the top of the melon through the center of the melon. Open the vodka and place the neck of the bottle in the hole. Use rolled towels to keep the bottle upright in the melon.
  • Fill the cooler with ice and cover the ice with aluminum foil and newspapers to keep the cold inches (This is assuming the cooler will not close because of the bottle).
  • Leave overnight for vodka to be absorbed into the melon.
  • Remove bottle and cut melon in half, then cut flesh into chunks (or use melon baller if desired). Mix in large bowl with sliced lemons and cilantro if desired.
  • Note: Leftover "water" in the serving bowl makes a refreshing cocktail; serve over ice.

4 pound seedless watermelon
2 cups tequila
1 cup triple sec
Lemon-lime soda (recommended: Sprite)

Steps:

  • With a knife, shave off the stem end of the watermelon, just enough so that it sits flat. Cut the top off the watermelon, about 3 inches down. Scoop out half of the watermelon with a melon baller and set aside
  • Scoop out remaining watermelon, leaving the rind-bowl. This will be your punch bowl. Transfer scooped out melon (not the melon balls) to a blender and puree; may be done in batches. Push watermelon puree through a strainer to remove pulp and any seeds. Return watermelon water to the watermelon punch bowl. Stir in tequila, triple sec, and melon balls. Top off with lemon-lime soda. Serve cold over ice.

1/2 cup fresh lemon juice
1/2 cup fresh lime juice
2/3 cup sugar
1/2 cup vodka
6 tablespoons Grand Marnier
1/4 cup chopped of fresh mint

Steps:

  • Place watermelon in a large bowl.
  • In a separate bowl, combine lemon and lime juice.
  • Add sugar and whisk until it is dissolved.
  • Add vodka and Grand Marnier.
  • Pour mixture over the watermelon.
  • Sprinkle with freshly chopped mint.
  • Put the salad in the refrigerator for 1 hour or less before serving.

3 tablespoons champagne vinegar
3 tablespoons lemon juice
2 tablespoons chopped fresh mint leaves, from about 3 or 4 sprigs
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
3/4 cup grapeseed oil
1 head arugula, soaked to remove all grit, stiff spines of leaves removed, dried in a salad spinner, and torn into bite-sized pieces
1 small red onion, sliced thin
1 small seedless watermelon, such as Crimson Sweet (or your choice, as long as the seeds are removed) cut into 1-inch cubes or into 1-inch spheres with a melon baller
3 ounces feta cheese, cubed

Steps:

  • Prepare vinaigrette just before use. Through the feed opening of a running blender, add 1 at a time: champagne vinegar, lemon juice, chopped mint, salt and pepper. Leaving the blender running, add the oil in a slow stream. Adjust seasoning, to taste, with salt and pepper.
  • Toss together arugula and onion. Fold in watermelon. Gently stir in enough of the vinaigrette to coat. Top with feta cheese. Serve with any extra dressing on the side.
