DRIED-FRUIT YOGURT TOPPING

Yield Makes about 2 cups

Number Of Ingredients 4

1 1/2 pounds dried fruit, such as apricots, pears, prunes, figs, and apples
1/2 to 1 cup sugar
1 lemon, halved and squeezed, reserving halves
3 sticks cinnamon

Steps:

  • In a medium saucepan, combine fruit, 3 cups of water, sugar, lemon juice, reserved lemon halves, and cinnamon sticks. Bring to a boil, and simmer for 30 minutes. Remove from heat, and let cool to room temperature. Remove cinnamon sticks and lemon halves, and coarsely chop by hand or in a food processor. If using a food processor, you may add the cooked lemon halves if desired.

This delicious, tangy fruit topping goes with almost any fruit. Try it with chilled fresh apricots, sliced bananas with red cherries, etc. From Best of Scandinavian Cooking. I haven't tried this yet so the cooking time for the crumbs is an estimate. If you get to this before I do, let me know how long it took to brown.

Number Of Ingredients 5

1/2 cup pumpernickel bread, crumbs (fine soft crumbs) or 1/2 cup rye breadcrumbs (fine soft crumbs)
1 tablespoon butter
2 tablespoons raw sugar (or more) or 2 tablespoons brown sugar (or more)
1 cup plain yogurt or 1 cup sour cream, chilled
4 bananas (or other fruit) or 4 cups red cherries (or other fruit)

Steps:

  • Slowly saute bread crumbs in butter until toasted and very crisp, stirring frequently.
  • Allow crumbs to cool and drain on paper towel.
  • Mix with sugar to sweeten.
  • Whip chilled yogurt until smooth, turn into serving bowl and sprinkle with crumb mixture.
  • Spoon over chilled fruits.

1/4 cup dried cranberries
1/4 cup dried apricots, cut into 1/2-inch pieces
1/2 cup good-quality honey

Steps:

  • Stir together nuts and fruit; transfer to a 6-ounce jar. Top with honey.

  • DIRECTIONS: Toss together pitted and quartered peaches with a pinch of cardamom and drizzle of maple syrup. Roast in 350°F oven until tender. Eat warm or at room temperature over yogurt with chopped pecans.

  • DIRECTIONS: Pit and coarsely chop cherries. Add to a saucepan with a few tablespoons of full-bodied red wine and a pinch of sugar. Simmer until the liquid is thickened, then cool and serve over yogurt.
  • DIRECTIONS: Whisk together honey, orange juice, and orange zest. Drizzle over yogurt, and sprinkle with chopped crystallized ginger and chopped pistachios.
