Chocolate bark is super easy to make at home and is delicious served on its own, or as part of a cookie platter. It also makes wonderful holiday gifts. In this recipe, you can choose your favorite dried fruit and nut combinations to add to the chocolate-try dried cherries and pecans, freeze-dried raspberries and chopped almonds, or dried orange peel and pine nuts. Shredded coconut adds texture and a little bit of sweetness. Chocolate bark is also fun to prepare with kids-let them spread the melted chocolate and sprinkle their choice of toppings over it!

1 cup chopped roasted nuts
1 cup chopped dried fruit
1 tablespoon shredded coconut
1 teaspoon flaky sea salt

Steps:

  • Set a stainless steel bowl over a pot of simmering water. Line a baking sheet with parchment paper. Melt chocolate in the bowl, stirring frequently, until smooth. in a heatproof bowl set over a pot of simmering water. Spread the melted chocolate in an even layer onto the prepared sheet. Sprinkle the nuts, dried fruit, coconut, and salt over the chocolate; set aside to cool until firm, 2 to 3 hours. Break the bark into 2-inch pieces to serve. Store leftovers in a cool place.

1/3 cup granulated sugar
1/2 cup chopped dried cherries
2 tablespoons grated orange peel (from 2 oranges)
2 cans Pillsbury™ refrigerated thin pizza crust
1/4 cup powdered sugar
1 teaspoon Watkins™ Pure Almond Extract

Steps:

  • Heat oven to 350°F. In small microwavable bowl, microwave 1/4 cup of the butter uncovered on High 30 to 50 seconds or until melted. Line bottom of 9x5-inch loaf pan with Reynolds® Parchment Paper. Lightly brush bottom and sides with small amount of the melted butter. In small bowl, mix granulated sugar, cherries and orange peel; set aside. Unroll 1 can of dough on work surface; press to form 16x12-inch rectangle. With pizza cutter or sharp knife, cut crosswise into 4 rows to make 4 (12x4-inch) rectangles. Brush rectangles with some of the remaining melted butter. Working quickly, sprinkle 1 rectangle with 1 rounded tablespoon sugar mixture. Top with another dough rectangle, butter side down. Brush top of rectangle with some of the butter, and sprinkle with 1 rounded tablespoon sugar mixture. Repeat with remaining 2 rectangles. With sharp knife, cut stack crosswise into 5 (4x2 1/2-inch) stacks. Carefully place small stacks, cut side down, in loaf pan. Repeat with remaining can of dough, sugar mixture and melted butter. Brush any remaining butter over top of loaf. Bake 45 to 55 minutes or until deep golden brown, covering with Reynolds Wrap® Aluminum Foil, if necessary, to prevent excess browning. Cool 15 minutes in pan on cooling rack. Run knife around sides of pan to loosen bread. Remove from pan to cooling rack set over a sheet of parchment paper or foil. 7 ounces semisweet or bittersweet chocolate
5 ounces mixed nuts, salted or half-salted (cashews, almonds, walnuts, hazelnuts), oven-toasted on a greased baking sheet at 350 F for a few minutes
8 ounces mixed dried fruit, figs, apricots, cherries, cranberries and/or raisins
1 tablespoon candied ginger and/or orange peel, diced
1 pinch fine sea salt
Unsweetened cocoa powder, for dusting

Steps:

  • Set a heatproof bowl over a saucepan of simmering water, making sure the bowl doesn't touch the water. Roughly chop chocolate and place in the bowl to melt, stirring frequently, keeping the heat very low. Chop toasted nuts; using scissors, cut dried fruit into small pieces. Finely chop candied ginger and/or orange peel. Place fruit and nuts into a large mixing bowl.
  • Once chocolate is melted and smooth, take it off the heat and stir fruit and nuts into the chocolate. Gently stir to combine so the fruit and nuts are all combined with the chocolate. Line a pan with parchment paper that's been sprayed with a little oil. Sprinkle cocoa powder over parchment and then add the chocolate mixture. Spread it out in an even layer. Dust with more cocoa powder and place another piece of parchment paper on top. Let it cool down and set in the refrigerator, 1 hour.
  • When chocolate is set, run a knife around the edge to remove from the pan. Break or cut into pieces to make chunky chocolates.

1 cup (2 sticks) unsalted butter, room temperature
3/4 cup sifted confectioners' sugar
1 teaspoon pure vanilla extract
2 cups sifted all-purpose flour
1/2 teaspoon salt
1/2 cup finely chopped dried cranberries or cherries

Steps:

  • Heat oven to 325 degrees with rack in center. Combine butter, confectioners' sugar, vanilla, flour, and salt in large mixing bowl. Beat with a wooden spoon until combined but not too creamy. Stir in dried cranberries.
  • Pat dough evenly into an 8- or 9-inch-square baking pan. Bake until just beginning to turn golden, about 20 minutes. Place pan on cooling rack until cool enough to touch, about 20 minutes. Run knife around edges, remove shortbread, and transfer, right side up, to work surface. Use 1 1/2- to 2-inch heart cookie cutter to cut out cookies. Use a paring knife to trim stray bits of cranberry from edges. Cookies will keep for 5 days at room temperature in an airtight container.
